OLD FASHIONED GLORIFIED RICE



Old Fashioned Glorified Rice image

Old Fashioned Glorified Rice is a creamy dessert with marshmallows, strawberries, pineapple... and rice! A unique no bake recipe for summer picnics.

3 cups water
1 1/2 cups Alessi Arborio Rice
2 tablespoons butter
16 ounces pineapple tidbits (drained)
2 cups chopped strawberries
3 cups mini marshmallows
1/2 cup granulated sugar
2 cups heavy whipping cream
maraschino cherries (optional)

Steps:

  • In a heavy bottomed saucepan, heat 3 cups of water to boiling.
  • Add the rice and butter to the boiling water. Cook and stir for 1 minute.
  • Reduce the stove heat to low, cover the saucepan with a tight fitting lid and let it cook undisturbed for 20-25 minutes.
  • Once the rice is done cooking, remove it from the heat, transfer it to a large bowl. Fluff the rice with a fork and allow it to cool to room temperature.
  • When the rice has cooled, add the pineapple, strawberries, marshmallows and sugar. Mix well. Allow this mixture to rest for 10 minutes.
  • In a medium bowl (or the bowl of a stand mixer), beat the heavy whipping cream on high speed until stiff peaks form.
  • Add the whipped cream to the rice mixture. Fold together gently.
  • Top with maraschino cherries and additional marshmallows if desired.
  • Refrigerate until serving and serve cold.

1 Can (15 1/2 ounces) Crushed Pineapple, Drained
1/2 Cup Instant Rice
1 Package (3 ounces) Vanilla Pudding Mix
1/2 Cup Miniature Marshmallows
1/3 Cup 'Chopped Nuts
Whipped Cream (Optional)

Steps:

  • Drain pineapple and reserve 3/4 juice. Bring to a boil; stir in rice. Simmer 2 minutes, remove from heat, cover and let steam 5 minutes. Prepare pudding mix according to package directions. Fold marshmallows into hot pudding, pecans and rice. Chill. Garnish with whipped cream. Six 1 cup servings.

3 c cooked long grain rice
1 jar(s) maricheno cherries, quartered and drained well
1 can(s) well drained crushed pineapple
1 1/2 containers thawed cool whip
1/2 c coarsely chopped pecans

Steps:

  • 1. combine rice and fruits and stir in cool whip
  • 2. add nuts
  • 3. store in covered container in fridge
  • 4. sometimes I add a can of drained mandarin oranges if I have it. but is just as good without it. *NOTE use whatever type coolwhip you wish, they all work out well.

Steps:

  • Place rice in large bowl. Add fruit and marshmallows; mix lightly. Gently stir in COOL WHIP.
  • Refrigerate several hours or until chilled.

It has a wonderful custard base to it and it is oh so very easy to make. When my husband had it, he thought he died and went to heaven. It was so good I had to make a double batch!

1 cup cooked rice
2 1/2 cups milk
3 large eggs, beat lightly
3/4 cup raisins
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 325°F.
  • Lightly grease a 9-inch baking dish.
  • Mix all stuff together except for the cinnamon and nutmeg. Pour into baking dish and place in a pan of water about 1 inch deep.
  • Bake for 1 1/2 hours, or until lightly browned and set.
  • Combine cinnamon and nutmeg together and sift over the top of the pudding.
  • Take pan from oven; let cool slightly and then cut into squares. Enjoy!
