This is Great Nana's recipe. My Great Aunt Alta also made a simliar version, only hers contained 1 Tbsp vanilla, 1 tsp. salt, only 1 tsp baking soda, and only 1/4 tsp. baking powder.

Ingredients

3 large eggs, beaten lightly
2 cups granulated sugar
1 cup vegetable oil
1 teaspoon vanilla extract
2 cups zucchini, grated
3 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon baking powder
3 teaspoons ground cinnamon
1 cup nuts, chopped
1 cup raisins

Steps:

Beat eggs, sugar, oil and vanilla together until thick.
Fold in zucchini until blended.
Sift together flour, baking soda, baking powder, cinnamon.
Stir in nuts and raisins.
Combine both mixtures using a spoon, mixing just enough to moisten ingredients (will still have some lumps).
Bake in greased + floured loaf pans at 350 F for 1 hour or until a toothpick tests done.

Ingredients

1 cup oil
2 cups sugar
2 cups grated raw zucchini (peeled and seeded)
3 eggs
3 teaspoons vanilla
2 1/2 cups flour
1 teaspoon salt
2 teaspoons baking soda
1/4 teaspoon baking powder
3 teaspoons cinnamon
1/2 cup pecans
1 cup chocolate chips (optional)

Steps:

Mix together 1 cup of oil,2 cups of sugar Add 2 cups of zucchini.
Add 3 eggs and 3 tsps of vanilla.
Sift together 2½ cups of flour, 1 teaspoons of salt,
2 tsps of baking soda and ¼ tsp of baking powder.
Add 3 tsps of cinnamon.
Mix all together - then add the ½ cup of pecans.
Bake for 1 hour in a preheated 350 degree F oven in 3 - 3½" x 7" x 2" inch pans. Spray all 3 pans with Pam cooking spray. Cool 10 minutes before removing from pans,.

My great aunt's recipe from the depression-era, before they migrated from Nebraska to California. I use half white whole wheat flour and half regular whole wheat flour. It would also be good with whole wheat pastry flour. I love it because it's healthy, yet a nice treat!

Ingredients

2 cups whole wheat flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
2 eggs
1/2 cup honey
1/3 cup unsweetened applesauce
1/3 cup vegetable oil
2 teaspoons vanilla
1 1/2 cups zucchini, grated
1/2 cup nuts

Steps:

Grease two small or one large loaf pans and pour in batter.
Bake at 350 for 1 hour or until brown (check at 45 minutes - mine took 50-55 minutes). Put on rack to cool.
