The title is not misleading! This will serve 16 easy! Or split and freeze one! Simple ingredients for a wallet friendly meal...or two!! :)

Number Of Ingredients 9

2 lbs ground beef
1 (48 ounce) jar spaghetti sauce, your favorite
2 tablespoons sugar
1 lb egg noodles, medium
1/2 cup butter
3/4 teaspoon onion salt
3/4 teaspoon garlic salt
1/2 cup parmesan cheese, grated
12 ounces mozzarella cheese, shredded

Steps:

  • Preheat oven to 350.
  • Brown meat and drain.
  • Add sauce and sugar; simmer for 20 minutes.
  • Cook noodles as directed; drain and toss with butter, salts, and parm cheese.
  • Spray nonstick spray into 2 casserole dishes.
  • In both pans layer half the sauce, all the noodles, rest of the sauce and top with mozzarella cheese.
  • Cover with foil and bake for 45 minutes.
  • Serve one and freezer the other!

2 cups sliced carrots
1 cup chopped onion
2 cups cubed peeled celeriac
1 cup diced peeled turnips or 1 cup parsnip
1 1/2 cups cubed unpeeled new potatoes
1 cup cubed peeled sweet potato
2 cups water
2 bay leaves
4 tablespoons Dijon mustard (with seeds if possible)
2 garlic cloves, crushed
3 tablespoons extra virgin olive oil
salt and pepper

Steps:

  • In a medium large saucepan, place vegetables, water and bay leaves and bring to a boil.
  • Cover and cook on low heat for 20 mins or until vegetables begin to soften.
  • Stir gently during cooking, adding a little extra boiling water if necessary.
  • Stir in mustard and garlic and cook an additional 10 minutes or until vegetables are done.
  • Remove from heat.
  • Stir in olive oil and salt and pepper to taste.

A creamy casserole that fills that same warm fuzzy space as mac 'n cheese. Easy to prepare. My mother who got this recipe from a woman that she babysat for in the 50's.

1 lb ground beef
1 medium onion, chopped
1 (15 1/2 ounce) can corn, drained
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of chicken soup
1 (12 ounce) container sour cream
2 cups shredded cheddar cheese
1 (16 ounce) bag medium-sized egg noodles, cooked and drained

Steps:

  • Brown the hamburger and chopped onions. Cook until the onions are soft. Drain the grease and put in a large mixing bowl.
  • Add the cooked noodles, corn, soups and sour cream. Mix together with a large spoon.
  • Transfer to a cooking casserole. Top with shredded cheese.
  • Bake uncovered at 350 for 45-60 minutes.
  • Can be made ahead and chilled in refrigerator until baking.
