NO-BAKE BLUEBERRY CHEESECAKE



No-Bake Blueberry Cheesecake image

This no-bake cheesecake is made with one brick of cream cheese and sweetened condensed milk. Easy and delicious, it's the perfect refreshing dessert for summer parties and pot-lucks.

1½ cups graham cracker crumbs
½ cup melted butter
8 oz. brick of cream cheese
14 oz. can of sweetened condensed milk ((300 mls))
½ cup lemon juice
1 tsp vanilla extract
21 oz. can of blueberry pie filling ((540 mls))

Steps:

  • Stir graham cracker crumbs and melted butter together until well combined.
  • Press into an ungreased 8x8 or 9x9 pan.
  • Place in fridge to chill for 15 minutes.
  • With electric beaters, beat cream cheese until light and fluffy.
  • Add can of sweetened condensed milk and continue to beat until smooth and creamy. Note: it will look quite runny at this point.
  • Beat in lemon juice and vanilla. Mixture will thicken.
  • Pour over chilled crust and place in fridge to firm up for 2-3 hours before topping with pie filling.
  • Spoon the blueberry pie filling evenly over the cheesecake.
  • Run a knife around the edge of the pan to loosen before serving.

½ cup white sugar
¼ cup water
1 teaspoon cornstarch

Steps:

  • Combine blueberries, sugar, water, and cornstarch in a saucepan; bring to a boil. Reduce heat and simmer until thickened, about 10 minutes.

Delicious, warm blueberry sauce which is fabulous on pancakes, waffles, cheesecake or ice cream! Fresh or frozen blueberries work equally well.

2 cups fresh or frozen blueberries
¼ cup water
1 cup orange juice
¾ cup white sugar
¼ cup cold water
3 tablespoons cornstarch
½ teaspoon almond extract
⅛ teaspoon ground cinnamon

Steps:

  • In a saucepan over medium heat, combine the blueberries, 1/4 cup of water, orange juice, and sugar. Stir gently, and bring to a boil.
  • In a cup or small bowl, mix together the cornstarch and 1/4 cup cold water. Gently stir the cornstarch mixture into the blueberries so as not to mash the berries. Simmer gently until thick enough to coat the back of a metal spoon, 3 to 4 minutes. Remove from heat and stir in the almond extract and cinnamon. Thin sauce with water if it is too thick for your liking.

My Blueberry Cheesecake

Caution - this contains raw egg. I made this up when I wanted something like a breakfast shake that tasted like cheesecake. This is thicker than a smoothie because of the larger proportion of cottage cheese to yogurt, so I call it a "soup." Makes one generous serving.

3/4 cup low fat cottage cheese
1/4 cup plain low-fat yogurt
1 egg
1/2 lemon, juice of
1/2 teaspoon vanilla extract
2/3 cup blueberries
liquid stevia extract

Steps:

  • Place cottage cheese in blender; blend til all lumps are gone and cheese is very smooth - about one minute.
  • Add yogurt, blend about 30 seconds.
  • Add egg, blend til egg is well incorporated.
  • Add lemon juice and vanilla, blend another 10 seconds or so.
  • Pour into a wide cereal or soup dish.
  • Add berries (I don't thaw them first); stir to break up any clumps.
  • Add a few drops of stevia, stir gently and taste for seasoning. Add a bit more stevia if desired.
  • Notes:.
  • This proportion of cottage cheese to yogurt makes a fairly thick soup that I like. If you would like the soup a tad thinner, use 2/3 cup cottage cheese and 1/3 cup yogurt.
  • Can substitute sliced strawberries or whole fresh raspberries.
