RED PEPPER SPAETZLE IN MUSTARD CREAM SAUCE WITH SAUSAGE



Red Pepper Spaetzle in Mustard Cream Sauce with Sausage image

1 tablespoon grapeseed oil
Coriander Spiced Sausage, recipe follows
1/2 cup water
1/2 cup jarred roasted red peppers
2 tablespoons goat cheese
4 tablespoons chicken stock
3 cups all-purpose flour
4 eggs
1 teaspoon minced fresh parsley
1/2 cup cold water
1/2 teaspoon salt
2 tablespoons unsalted butter
1 small shallot, minced
3 tablespoons white wine, or chicken stock
1/2 cup heavy cream
1 teaspoon minced fresh thyme
2 tablespoons Dijon mustard
Salt and freshly ground black pepper
2 tablespoons grated Gruyere
2 pounds pork shoulder (with a good amount of fat), cut into large chunks
Pinch caraway seed
Pinch ground coriander
2 tablespoons fresh oregano
2 tablespoons salt
Ice cold water
Oil
Hog casing

Steps:

  • For the sausage: In a large skillet, heat the oil over medium-high heat. Add the sausage and cook until browned on each side, about 5 minutes.
  • Add 1/2 cup water to the skillet. (You can add a little more if sausage is large.) Cover and cook until the water is nearly evaporated and the sausage is firm, 15 to 20 minutes.
  • For the spaetzle: In a food processor, combine the roasted peppers, cheese, and chicken stock and puree until smooth.
  • In a large saucepot over high heat, bring 4 quarts water to a boil. While the water is heating, in a bowl blend 1/2 cup red pepper puree, flour, eggs, parsley, 1/2 cup water, and salt. Stir until just well mixed. Do not over mix! Over mixing will result in a tough dough.
  • Once the water comes to a boil, reduce the heat to medium. Squeeze or press the dough through a spaetzle maker or a large holed colander. This pressing needs to be completed in a quick manner, thus allowing the dough to cook evenly. Once the spaetzle has been dropped into the water, cook for 2 to 3 minutes, stirring throughout the cooking time.
  • Once cooked, remove from the heat and drain through a colander to retrieve the spaetzle. Drain well.
  • For the sauce: In a saucepan over medium heat, add the butter and shallots, cooking until shallots are a light brown, and then deglaze with the wine. Once deglazed, add the cream, thyme, Dijon, and salt and pepper, to taste. Reduce the heat to low and continue to cook until the cream has thickened, 5 to 6 minutes. Remove from the heat and stir in the cheese. Toss the spaetzle in the sauce.
  • Slice the sausage and serve alongside the spaetzle in cream sauce.
  • Place the pork shoulder in a bowl and keep cold until ready to use. Fill a large bowl with ice and place the bowl of pork shoulder on top.
  • Grind the pork shoulder once through a grinding disk with large holes and again through a disk with medium holes. Grind the meat into the bowl sitting on ice.
  • Season the pork with caraway, ground coriander, fresh oregano, and salt. Mix to combine well.
  • Cook a small amount of the meat mixture to test for seasoning. Add more spices and salt, if needed. Thoroughly mix in a splash of cold water. Allow the seasoned pork to chill on ice or in the fridge before stuffing into the casing.
  • Replace the grinder attachment with the horn. (Be sure to thoroughly clean the attachment area before proceeding.) Rub oil onto the horn, and then put the casing on, leaving a few inches of slack at the end.
  • Stuff the casing, tie off the ends, and prick the sausage with a pin or the tip of a knife.
  • Refrigerate the sausage until ready to cook.

6 salmon fillets
2 tablespoons butter
2 tablespoons olive oil
2 teaspoons lemon juice
1/4 cup shallot (minced)
6 ounces white wine
1/2 cup cream
3/4 teaspoon stone ground mustard
1/4 cup green onion (chopped fine)
1/4 cup parsley (fresh, chopped-optional)
sea salt
grape tomatoes (if desired for garnish)
parsley sprig (if desired for garnish)

Steps:

  • Prepare Wine Mustard Sauce by lightly sauteing shallots in butter, add wine and reduce until nearly evaporated, add cream; cook until thickened (about 4 min.); add mustard, green onions and parsley; season with salt to taste.
  • You can start baking the fish about half way though starting the sauce.
  • Place salmon fillets in baking pan, brush with butter, oil and lemon juice mixture.
  • Bake at 400 for 15 minute or until flesh flakes easily and is no longer translucent.
  • Ladle a serving of sauce on individual serving plates; arrange baked fillets on sauce, garnish with pear tomatoes and parsley sprigs.

One 750 ml-bottle red wine, such as Cabernet Sauvignon
2 tablespoons tomato paste
1 tablespoon fresh thyme leaves, from 3 to 4 sprigs
1 pound beef chuck, cut into 1-inch cubes
2 medium carrots, chopped
2 cloves garlic, minced
1 small yellow onion, sliced
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
Cooked rigatoni, for serving (from a 1-pound box)
Grated Parmesan, for serving
Chopped fresh flat-leaf Italian parsley leaves, for serving

Steps:

  • Preheat the oven broiler. Line a baking sheet with foil.
  • Whisk together the wine, tomato paste, thyme and 2 cups water in a large pot and slowly bring to a simmer over medium-high heat. Scatter the beef, carrots, garlic and onion on the prepared baking sheet. Season with 1 teaspoon salt and a few grinds of pepper. Broil until both the beef and vegetables are charred and deeply golden, 8 to 10 minutes.
  • Once the liquid is simmering, gently add the charred beef and vegetables and any liquid from the baking sheet to the pot. Add 1/2 teaspoon salt and a few grinds of pepper. Bring to a low simmer, cover and cook, stirring occasionally, for 1 hour and 30 minutes.
  • Uncover and continue to simmer until the beef is very tender and can be easily shredded with a fork, about 1 hour more. Add the butter and stir until melted and the sauce is glossy. Spoon the sauce over warm, cooked rigatoni in a serving platter. Sprinkle generously with Parmesan and parsley.

1/4 teaspoon salt, divided
1/8 teaspoon black pepper
4 (6 ounce) salmon fillets (about 1 inch thick)
1 tablespoon butter, divided
3 tablespoons shallots, minced
2 tablespoons dry white wine
3/4 cup chicken broth
1 tablespoon Dijon mustard
3/4 teaspoon cornstarch
4 teaspoons tarragon, minced

Steps:

  • 1. Sprinkle 1/8 teaspoon salt and pepper over fish. Melt 1 1/2 teaspoons of butter in a large nonstick skillet over medium-high heat. Add fish and cook 7 minutes on each side or until fish flakes easily when tested with a fork. Remove from skillet and keep warm.
  • 2. Melt 1 1/2 teaspoons butter in skillet over medium heat. Add the shallots, and saute for 1 minute or until tender. Add wine, and cook for 30 seconds. Combine 1/8 teaspoon salt, broth, dijon mustard, and cornstarch, and stir with a whisk. Add to skillet, and bring to a boil. Reduce heat and simmer until reduced to 3/4 cup (about 1 minute). Spoon sauce over fish and sprinkle with tarragon.

1/4 teaspoon pepper
1 cup dry white wine
2 shallots, minced
3 tablespoons minced fresh dill
1/4 cup nonfat plain yogurt (or sour cream)
1/4 cup Dijon mustard
2 tablespoons honey
1/8 cup lemon juice

Steps:

  • Preheat oven to 400.
  • Place salmon steaks in a large, deep baking pan; sprinkle w/ pepper and cover with wine. Sprinkle with minced shallots.
  • Bake for 12 to 15 minutes, basting often with wine.
  • While salmon is baking, in a small bowl mix together dill, yogurt, mustard, honey, and lemon juice until smooth.

1 1/2 cups pinot noir wine or 1 1/2 cups dry red wine
1 -2 tablespoon freshly cracked black pepper (depending on your taste)

2 tablespoons minced garlic

Steps:

  • Pat salmon dry and season with salt. Heat a 12-inch nonstick skillet over moderately high heat until hot and sear salmon on flat sides until golden, 2 1/2 to 3 minutes total. Add wine, pepper, gingerroot, and garlic and cook salmon at a bare simmer, turning pieces over once, until just cooked through, 5 to 6 minutes total.
