Mustard Butter image

This is a wonderful butter to use on top of steaks, chicken, pork, or veggies. It has a secret ingredient that no one will ever guess! If you are uncertain about anchovy paste, start with a small amount and taste as you go. You'll be surprised at how it boosts the overall flavor without being fishy.

¼ cup unsalted butter, softened
1 tablespoon Dijon mustard
1 clove garlic, minced
½ teaspoon anchovy paste
2 dashes Worcestershire sauce, or to taste
salt and pepper to taste

Steps:

  • Combine the butter, mustard, garlic, anchovy paste, Worcestershire sauce, salt, and pepper in a bowl. Mix until garlic and anchovy paste are evenly distributed throughout the butter. Serve immediately over warm food or cover and chill until needed.

A wonderful sauce to use as an accompaniment for fish, or served hot over steamed vegetables such as asparagus.

Number Of Ingredients 8

1/3 cup butter
1/3 cup flour
1 1/2 cups chicken stock
3 egg yolks
2 tablespoons lemon juice
2 teaspoons Dijon mustard
1 pinch salt
cayenne pepper, to taste

Steps:

  • In a heavy-based medium saucepan, melt butter.
  • Add flour all at once.
  • Cook, stirring constantly, for 3 minutes.
  • Add stock all at once.
  • Blend mixture with a whisk.
  • Cook mixture over low heat for 5 or 6 minutes, stirring often.
  • Gently beat in egg yolks and add lemon juice, whisking constantly.
  • Add mustard and mix.
  • Add salt.
  • Cook 1 or 2 minutes longer. Add cayenne pepper a little at a time, stirring and tasting until desired degree of "heat" is achieved.

1 stick (1/2 cup) unsalted butter, softened
1 tablespoon English-style dry mustard
1 1/2 tablespoons fresh lemon juice
1 teaspoon Worcestershire sauce
1/8 teaspoon cayenne, or to taste

Steps:

  • In a food processor or in a bowl with a whisk blend together the butter, the mustard, the lemon juice, the Worcestershire sauce, the cayenne, and salt to taste until the mixture is smooth. Transfer the butter to a bowl and chill it, covered, for 8 hours to let the flavors develop. Serve the mustard lemon butter on grilled fish or chicken.

  • CAULIFLOWER:.
  • Preheat oven to 400°F
  • Butter rimmed baking sheet.
  • Cut cauliflower in half, then cut crosswise into 1/4-inch-thick slices.
  • Arrange slices in single layer on prepared baking sheet; sprinkle with salt.
  • Roast until cauliflower is slightly softened, about 15 minutes.
  • SAUCE:.
  • Meanwhile, melt butter in small saucepan over medium heat.
  • Whisk in lemon juice, mustard, crushed red pepper flakes, if using, and lemon peel.
  • Spoon mustard-lemon butter evenly over cauliflower and roast until crisp-tender, about 10 minutes longer.
  • *Can be made 2 hours ahead; let stand at room temperature.
  • If desired, rewarm in 350°F oven until heated through, about 10 minutes.

2 (6- to 8-ounce) skin-on salmon fillets, each about 1-inch thick
1/2 teaspoon kosher salt (such as Diamond Crystal), plus more to taste
Freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 tablespoon Dijon mustard
Lemon wedges, for serving

Steps:

  • Position one oven rack 6 inches from the broiler heat source then heat the broiler. Season the salmon fillets all over with ½ teaspoon salt and a couple of grinds of pepper and place them on an aluminum foil-lined sheet pan, skin side down.
  • In a small bowl, whisk the oil and mustard until well mixed. Brush the tops and sides of the salmon with this mustard mixture.
  • Broil until the salmon is opaque with a deep brown crust, about 6 to 8 minutes for medium-rare. (The center of the fillets will be dark pink, if you pierce one with a paring knife and take a look.) If your fillets are thinner, reduce cooking time by 1 to 2 minutes. If you prefer more well-done fish, add 1 or 2 minutes to the cooking time.
  • Squeeze a lemon wedge all over the cooked salmon fillets, then serve salmon with more lemon wedges on the side.
