1/4 cup buttermilk
2 teaspoons Dijon mustard
1/2 cup cornmeal
1 teaspoon each salt, onion powder, garlic powder and paprika
1/2 teaspoon dried thyme
1/2 teaspoon pepper
1/4 to 1/2 teaspoon cayenne pepper
1 pound catfish fillets
Lemon wedges, optional

Steps:

  • In a shallow bowl, whisk buttermilk and mustard until smooth. In another bowl, combine the cornmeal and seasonings. Dip fillets into buttermilk mixture, then into cornmeal mixture. , Place 1 in. apart on a wire rack coated with cooking spray. Place rack on a baking sheet. Broil 4 in. from the heat for 3-4 minutes on each side or until fish flakes easily with a fork. Serve with lemon if desired.

2 tablespoons Dijon mustard
1 tablespoon 2% milk
1/4 teaspoon dill weed
1/2 cup ground pecans
2 catfish fillets (6 ounces each)

Steps:

  • In a shallow bowl, combine the mustard, milk and dill. Place pecans in another shallow bowl. Dip fillets in mustard mixture and then in pecans. Place on a baking sheet coated with cooking spray. , Bake at 425° until fish flakes easily with a fork, 10-12 minutes.

BLACKENED CATFISH

3/4 pound (3 sticks) unsalted butter, melted
Six 8- to 10-ounce Catfish fillets (or other firm-fleshed fish), 1/2-inch thick
3 tablespoons Chef Paul Prudhomme's Blackened Redfish Magic (or substitute)
1 tablespoon sweet paprika
2 1/4 teaspoons salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground red pepper
3/4 teaspoon white pepper
3/4 teaspoon black pepper
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried oregano leaves

Steps:

  • The fillets should be at room temperature. Heat a large cast-iron skillet over very high heat until it is beyond the smoking stage and you see white ash in the skillet bottom, at least for 10 minutes. Meanwhile, pour 2 tablespoons melted butter in each of 6 small ramekins; set aside and keep warm. Reserve the remaining butter. Heat the serving plates in a 250-degree oven. Dip each fillet in the reserved melted butter so that both sides are well coated. Then, mix thoroughly all the spices for blackening mixture and sprinkle the Blackening Spice Mixture generously and evenly on both sides of the fillets. Place 1 or 2 fillets in skillet and cook uncovered over very high heat until the underside becomes deep brown, almost black (but not burned), about 2 minutes (the time may vary according to the fillet's thickness and the heat of the skillet). Turn the fish over and pour 1 teaspoon of butter on top of each. Cook until fish is done, about 2 minutes more. Repeat with remaining fillets. Serve each fillet while hot. To serve, place 1 fillet and a ramekin of butter on each plate.

3/4 teaspoon lemon pepper
1 tablespoon butter or 1 tablespoon margarine
1 medium shallot, sliced
2 teaspoons mustard seeds
2/3 cup chicken broth
1 teaspoon Dijon mustard
3 1/2 teaspoons cornstarch
1 tablespoon chopped fresh dill
1 tablespoon lemon juice

Steps:

  • Preheat oven to 400 degrees. Coat shallow baking dish with nonstick cooking spray. Pat fish dry with paper towels. Sprinkle fillets with lemon pepper; place in shallow baking dish. Bake 8-10 minutes or until fish flakes easily with a fork.
  • Meanwhile, melt butter in medium skillet over medium heat. Add shallot and mustard seed; cook and stir 2 minutes. In small bowl, stir mustard and cornstarch into broth. Add broth mixture to skillet; cook and stir until thickened. Stir in dill. Drizzle sauce over fillets and serve.

It was so yummy I was inspired to share it the same night! We paired it with corn on the cob and greens. If you are looking for a tasty recipe for baked fish, this is it!!

2 pounds catfish fillets
2 tablespoons seasoned salt (such as Season-All®)
1 orange, juiced
1 lemon, juiced
½ cup Dijon mustard
1 teaspoon reduced-sodium soy sauce
1 teaspoon Worcestershire sauce
2 dashes hot sauce
2 tablespoons olive oil
1 green bell pepper, sliced
1 onion, sliced
2 cloves garlic, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Season catfish fillets with seasoned salt. Mix orange juice, lemon juice, Dijon mustard, soy sauce, Worcestershire sauce, and hot sauce in a bowl.

2 egg whites
6 tablespoons cornmeal
1/4 cup grated parmesan cheese
2 tablespoons all-purpose flour
1/4 teaspoon ground red pepper
1/8 teaspoon salt
4 -6 ounces catfish fillets
cooking spray
lemon wedge

Steps:

  • Preheat oven to 425°F.
  • Combine dressing and egg whites, whisk well.
  • Combine cornmeal, parmesan, flour, pepper and salt in shallow dish.
  • Pat fish dry, dip in egg mixture and dredge in cornmeal mixture.

12 ounces yellow mustard
1 egg
1/2 cup flour
1/2 cup cornmeal
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon kosher salt
1 teaspoon black pepper
canola oil or peanut oil

Steps:

  • THE DAY BEFORE - combine the mustard with egg and add the catfish.
  • Cover and marinate overnight.
  • The next day, place enough oil in an 8 quart saucepan or dutch oven (or fryer) to hold the catfish fillets in two batches (up to eight cups of oil).
  • Heat oil to 360 degrees.
  • Mix the dry ingredients and spices together.
  • Roll the catfish fillets in the dry mix.
  • Shake off the excess and fry about 5 minutes until golden brown.
  • Drain and serve hot.
