MUSSELS IN WHITE WINE AND GARLIC



Mussels in White Wine and Garlic image

Be sure to buy live mussels. Any open mussels that do not close when you press their shells a few times are dead, and you should discard them.

2 cups dry white wine
4 large shallots, finely chopped
4 garlic cloves, finely chopped
1/2 teaspoon salt
4 pounds live mussels
1/3 cup mixed fresh herbs, such as flat-leaf parsley, chervil, or basil, chopped
6 tablespoons butter, cut into pieces

Steps:

  • Rinse and scrub mussels under cold running water. Using your fingers or a paring knife, remove beards (strings that hang from the mussels' shells), and discard.
  • In a large stockpot set over medium heat, combine wine, shallots, garlic, and salt. Simmer 5 minutes. Add mussels.
  • Cover, and increase heat to high. Cook until all mussels are open, about 5 minutes. Stir in herbs and butter. Remove from heat. Divide mussels and broth among four bowls. Serve immediately.

SPAGHETTI WITH MUSSELS, LEMON, AND SHALLOTS

Coarse salt
1 pound spaghetti
6 tablespoons extra-virgin olive oil, divided
3/4 cup diced shallots (4 large shallots)
1 teaspoon red-pepper flakes
1/4 cup chopped fresh flat-leaf parsley stems, plus 1 cup roughly chopped leaves
3/4 cup dry white wine
2 pounds mussels, scrubbed and beards removed
1/2 lemon, zested and juiced

Steps:

  • Bring a large pot of salted water to a boil, and cook pasta until al dente. Drain pasta, reserving 1 1/2 cups pasta water.
  • Meanwhile, in another large pot, heat 4 tablespoons oil over medium-high heat; saute shallots, red-pepper flakes, and parsley stems until tender, about 5 minutes. Add wine; cook until liquid is reduced by one-third, about 2 minutes. Add mussels, cover with a tight-fitting lid, and steam until they open, 5 to 6 minutes; discard any that do not open after 6 minutes.
  • Add pasta to mussels, tossing until well combined. Add pasta water, and continue to toss and cook over medium-high heat until sauce has reduced and coats pasta. Stir in parsley leaves and lemon zest and juice. Stir in remaining oil, and serve immediately.

MUSSEL AND SHALLOT STUFFING

This oyster stuffing, a Southern staple, is cooked in a white-wine broth, giving the seasoned bread an undeniably elegant edge.

3/4 pound rustic Italian bread, cut into 1-inch cubes (9 cups)
1/4 cup extra-virgin olive oil, plus more for brushing and drizzling
Coarse salt and freshly ground black pepper
2 shallots, diced
2 stalks celery, diced
3 cloves garlic, minced
1/4 cup dry white wine
1 pound mussels, scrubbed and debearded
1/3 cup chopped fresh flat-leaf parsley

Steps:

  • Heat oven to 375 degrees. On a rimmed baking sheet, toss bread with 2 tablespoons oil and season with salt and pepper. Bake until golden brown and toasted, 10 to 12 minutes.
  • Meanwhile, in a large pot, heat remaining 2 tablespoons oil over medium heat. Add shallots, celery, and garlic and cook, stirring, until tender, 6 to 8 minutes. Deglaze with wine, scraping up any brown bits with a wooden spoon.
  • Add 2 cups water and bring to a boil. Season with salt and pepper. Add mussels and cook, covered, until shells have opened, about 2 minutes. Remove mussels with a slotted spoon and set aside.
  • Once cool enough to handle, remove mussels from shells and return to broth (discard shells). Stir in parsley and adjust seasoning. In a large bowl, combine bread and broth, toss, and let stand 10 minutes.
  • Transfer mixture to an oiled 2-quart baking dish and drizzle with oil. Cover with parchment-lined foil and bake 30 minutes; uncover and continue baking until top is golden and stuffing is firm, about 25 minutes more.

Steamed Mussels with White Wine, Tarragon, Shallots, Butter, and Grilled French Bread image

2 cloves garlic
Salt and freshly ground black pepper
2 tablespoons olive oil, plus more for the bread
2 shallots, coarsely chopped
2 cups white wine
2 pounds cultivated mussels, scrubbed
2 tablespoons cold unsalted butter
2 tablespoons chopped fresh tarragon leaves
1 baguette, halved lengthwise

Steps:

  • Heat grill to high. Sprinkle garlic with a pinch of salt and, with the flat side of a large knife, mash and smear the garlic to a coarse paste. Heat the oil in a stockpot on the grates of the grill, add the shallots and garlic and cook until shallots soften. Add the wine, bring to a boil and stir in the mussels. Cover the pot and cook the mussels until all of them have opened, about 6 to 8 minutes, discard any that do not open.
  • Remove the mussels with a slotted spoon to a large bowl. Bring the cooking liquid to a simmer and whisk in the butter. Season with salt and pepper, to taste, and stir in the tarragon. Pour the mixture over the mussels and serve immediately with grilled bread.
  • Brush cut side of baguette with oil, season with salt and pepper and grill, cut side down until lightly golden brown.

Green Lip mussels are my favorite, but any will do. If you like mussels, this is a dish to try. It can be an appetizer for up to 6 people or a meal for 2. Be sure to serve it with some fresh crusty bread to sop up the juices. Yum!

3 tablespoons olive oil
6 large shallots, minced
8 sprigs fresh thyme
2 bay leaves
1 cup dry white vermouth
1 cup bottled clam juice
1/4 cup whipping cream
2 lbs mussels, thoroughly scubbed and debearded

Steps:

  • Heat the oil in a large skillet over medium heat.
  • Add shallots and saute' until softened, about 10 minutes.
  • Add bay leaves, thyme, vermouth, clam juice and cream.
  • Bring to a boil, reduce heat and simmer until the mixture is reduced to 1 cup, about 10 minutes.
  • Add mussels, cover and simmer, discarding any mussels that do not open.
  • Using tongs, evenly divide up the mussels between bowls.
  • Season broth with salt and pepper and ladle over mussels.

Steps:

  • Heat the olive oil in a large pot over medium-high heat. Add the shallots and garlic and cook until softened, about 5 minutes. Add the mussels, wine, cream, butter, and parsley and season well with salt. Give it a good stir, cover the pot, and cook until mussels open and are cooked through, about 10 to 15 minutes. Divide the mussels and the juices between 2 bowls and serve with the crusty bread.

4 ounce smoked bacon, cut into 1/4-inch lardons
2 shallots, peeled and sliced into thin rings
1 tart apple, peeled and small diced
1 pound mussels, washed and bearded
1 ounce dry white wine
1 ounce apple cider
1/2 ounce apple cider vinegar
2 ounce heavy cream
1 fresh thyme branch
Kosher or sea salt
Fresh ground black pepper

Steps:

  • Cook bacon over a medium high heat in a wide saucepan until rendered and crisp. Drain off some of the fat. Add shallots and apple. Cook until slightly caramelized. Add mussels and stir to coat. Deglaze with white wine, apple cider, and vinegar. Reduce slightly. Add cream, thyme, salt, and pepper. Cover and cook until all the mussels are open and the sauce is reduced and slightly thickened. Serve in the pan or transfer to a large, wide bowl. Serve with toasted country bread.

HERBED SHALLOT STUFFING

2 cups finely chopped shallot
1 cup unsalted butter
10 cups coarse fresh bread crumbs (from 2 long baguettes; 1 lb total)
3 tablespoons chopped fresh tarragon
3 tablespoons chopped fresh chives
3 tablespoons chopped fresh flat-leaf parsley
1 tablespoon kosher salt
1 teaspoon black pepper
3 tablespoons Cognac
1 to 1 1/2 cups chicken broth

Steps:

  • Preheat oven to 325°F.
  • Cook shallot in butter in a large heavy skillet over moderately low heat, stirring, until butter is melted and shallot is slightly softened, about 5 minutes.
  • Combine bread crumbs, herbs, salt, and pepper in a large bowl and stir in butter mixture. Drizzle with Cognac, tossing to combine, and gently stir in broth. (Use 1 1/2 cups broth if you like a moist stuffing, 1 cup if you prefer it drier.)
  • Transfer stuffing to a buttered 3-quart shallow baking dish. Cover with foil and bake in middle of oven 30 minutes, then uncover and bake until top is crisp and stuffing is heated through, about 30 minutes more.

24 mussels (preferably cultivated)
1/2 cup dry white wine
2 shallots, sliced thin
a 2 1/2- by 1-inch strip of lemon zest
1/2 teaspoon fennel seeds
1/4 teaspoon dried tarragon
1/2 cup thinly sliced red onion
2 tablespoons extra-virgin olive oil

Steps:

  • Scrub the mussels well in several changes of water, scrape off the beards, and rinse the mussels. In a 2-quart microwave-safe round glass casserole with a lid combine the wine, the shallots, the zest, the fennel seeds, and the tarragon and microwave the mixture, covered, at high power (100%) for 3 minutes. Stir in the mussels and microwave the mixture, covered, at high power, stirring once every minute and transferring any mussels that are wide open to a bowl and keeping them warm, for 2 1/2 to 4 minutes. Discard any unopened mussels. Return the mussels to the casserole, sprinkle them with the onion, and drizzle them with the oil. Let the mussels stand for 1 minute.
