MUSHROOM-STUFFED PORK CHOPS WITH VERMOUTH SAUCE



Mushroom-Stuffed Pork Chops with Vermouth Sauce image

Number Of Ingredients 8

2 (1-inch thick) bone-in pork chops (14 ounces each)
2 tablespoons olive oil, plus extra for coating pork chops
Salt and freshly ground black pepper
2 medium shallots, thinly sliced
5 ounces cremini mushrooms, sliced
1 tablespoon roughly chopped fresh Italian parsley leaves
1/2 cup white vermouth
1 tablespoon unsalted butter

Steps:

  • Heat the oven to 400 degrees F and arrange a rack in upper third.
  • Pat the pork chops dry with paper towels and put on a cutting board. Using a small paring knife, cut a 2-inch opening horizontal to the cutting board, halfway up the meat in each chop. Move the knife back and forth in a fan motion to open the interior of the pocket without significantly widening the opening. (You don't want to pierce through the meat but simply create a pocket for the stuffing.) Brush the exterior of the chops with oil, season well with salt and freshly ground black pepper, to taste, and set aside until the stuffing is ready.
  • Heat 1 tablespoon of oil in a large ovenproof frying pan over medium-high heat. When the oil shimmers, add the shallots and cook until softened. Add the mushrooms, season well with salt and freshly ground black pepper, and cook, stirring rarely, until browned, about 10 minutes. Stir in the parsley and remove to a plate to cool slightly. Wipe out the frying pan and return it to the stove over medium-high heat. Taste the stuffing and adjust the seasoning, as necessary. Stuff half of the mushroom mixture into the pocket of each chop. If the filling is falling out, secure the chops closed with toothpicks.
  • Add the remaining 1 tablespoon oil to the pan over medium heat. When the oil shimmers, arrange the stuffed chops in the pan and cook until browned, about 4 minutes. Flip the chops to the other side and transfer the pan to the oven. Bake until the pork is cooked and an instant-read thermometer, inserted into the center of the chops, registers 160 degrees F, about 12 to 15 minutes.
  • Remove the pan from the oven and set the pork aside on serving plates to rest. Return the pan to the stove over medium heat and add the vermouth. Cook, scraping the bits from the bottom of the pan with a spatula, until the alcohol smell is cooked off and is slightly reduced, about 1 minute. Remove the pan from the heat, add the butter, and let it melt. Taste the sauce and adjust the seasoning. Drizzle the sauce over the chops and serve with a gratin, mashed potatoes, or polenta, if desired.

500 Grams Pork Loin
500 Grams Mushrooms (chopped)
1 Piece Shallot (finely chopped)
1 Tablespoon Dried Sage
3 Tablespoons Dijon Mustard
Salt (to taste)
Pepper (to taste)
2 Tablespoons olive oil
1 Piece Carrot (cut into cubes)
1 Piece White Onion (cut into cubes)
2 Stalks Celery (cut into cubes)
2 Tablespoons Tomato Paste
1 Cup Red Wine
2 Cups Brown Beef Stock
1/2 Stick Butter (cut into small cubes)
1 Tablespoons Truffle Oil

Steps:

  • Sautee mushrooms and shallots.
  • Pound pork loin with a meat mallet.
  • Brush pork with dijon mustard, season with salt and pepper on both sides, and sprinkle with dried sage.
  • Spoon the mushroom mixture onto each pork paillard.
  • Roll pork tightly and secure with butcher's twine.
  • Sear pork roulades. Set aside.
  • In the same pan, roast the carrots, onions, and celery.
  • Add tomato paste and continue roasting for a minute.
  • Deglaze the pan with red wine. Reduce.
  • Tip contents of pan to the slow cooker.
  • Add pork and stock.
  • Braise for 6 hours on low.
  • Reduce braising liquid over the stove.
  • Whisk in cold butter nuggets.
  • Finish the sauce with truffle oil.

MUSHROOM PORK ROULADE

1 lb mushrooms
2 tbsp olive oil
1 medium onion
3 lb boneless pork
1 tbsp salt
1 tbsp black pepper
1 tsp dry parsley
1 tbsp salt (for seasoning pork, adjust to taste)

Steps:

  • In a small bowl, combine the salt, black pepper, and parsley. Set the rub aside. Clean and dice the mushrooms and onion.
  • Preheat a skillet with olive oil. Add in the diced mushrooms and sauté them until golden brown. Next, add in the onion and sauté it until softened. Season with salt and pepper to taste and set aside.
  • Butterfly the pork into a wide, thin piece. Using a meat tenderizer, pound it out until it's even in thickness.
  • Spread the sautéed mushroom and onion mixture over the pounded pork. Roll it up nice and tight and seal the roulade with a toothpick or butcher string soaked in water.
  • Preheat a skillet over very high heat. Brown each side of the roll and season the outside with the seasoning rub.
  • Bake the roulade for about 30 minutes at 380°F (you may need to adjust the cook time depending on how thick the pork is). Enjoy!

5 tablespoons extra-virgin olive oil, plus more for brushing
4 slices bacon, chopped
8 ounces cremini mushrooms, thinly sliced
Kosher salt and freshly ground pepper
1 clove garlic, finely chopped
1 tablespoon breadcrumbs
1/2 cup chopped fresh parsley
2 pork tenderloins (2 to 2 1/2 pounds total), trimmed
1/2 teaspoon grated lemon zest

Steps:

  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the bacon and cook until crisp, about 8 minutes. Add the mushrooms, 1/2 teaspoon salt, and pepper to taste; cook until the mushrooms are soft, about 4 minutes. Add the garlic and cook 1 minute. Remove from the heat and stir in the breadcrumbs and all but 2 tablespoons parsley. Let cool.
  • Soak 10 to 12 toothpicks in water to prevent them from burning. Rinse the pork and pat dry. Butterfly the pork: Make a 1-inch-deep incision down the length of each tenderloin; do not cut all the way through. Open the meat like a book so the tenderloins lie flat.
  • Cover the pork with plastic wrap; pound with the flat side of a meat mallet until about 1/2 inch thick, starting from the middle and working outward. Spread the mushroom mixture over the 2 tenderloins. Starting with a long side, tightly roll up each tenderloin. Secure the seams with the toothpicks.
  • Preheat a grill to medium high; brush the grates with olive oil. Brush the pork rolls with olive oil and season with salt and pepper. Grill, turning, until a thermometer inserted into the center of the pork registers 140 degrees F, 25 to 30 minutes. Transfer to a cutting board to rest, about 10 minutes.
  • Mix the remaining 3 tablespoons olive oil and 2 tablespoons parsley, the lemon zest, and salt and pepper to taste in a bowl. Remove the toothpicks and slice the pork rolls. Top with parsley oil.

One 1 1/2-pound pork loin
1 bunch broccoli rabe
1 cup breadcrumbs
3 links sweet Italian sausage, casings removed
1/2 cup grated Parmesan
1 egg
4 ounces caul fat
4 ounces prosciutto, cut into long slices
Olive oil, for cooking
Roasted Red Potatoes, for serving, recipe follows
5 red potatoes, quartered
1/4 cup grated Parmesan
1 clove garlic, chopped
Chopped fresh rosemary, for sprinkling

Steps:

  • Preheat the oven to 400 degrees F.
  • Butterfly the pork loin and pound it out to an even thickness of 1/2 to 3/4 inch.
  • Add the broccoli rabe to a large pot of boiling water and cook until just tender, 2 to 3 minutes. Submerge the broccoli rabe in a bowl of ice water until cooled, then wring it out to remove as much water as possible. Roughly chop and add to a medium bowl.
  • To the broccoli rabe, add the breadcrumbs, sausage, Parmesan and egg; stir to combine. Lay a large piece of caul fat out on a large, flat work surface. Lay about 6 prosciutto slices in the middle, slightly overlapping. Arrange the flattened out pork loin on top of the prosciutto. Set the sausage mixture on the pork loin and shape it into a neat, even log. Wrap 2 pieces of prosciutto around each end of the log and fold the prosciutto that's underneath up and around the pork. Roll the pork loin around the filling and into a log, wrapping the caul fat around it in an even layer. Tie with butcher's twine to secure.
  • Coat a pan with olive oil and place it over medium-high heat. Sear the pork roulade until golden brown on all sides. Transfer to a baking dish and bake 10 minutes (reserve the fat in the pan for the Roasted Red Potatoes). Flip the roulade and continue to bake until the internal temperature registers 150 degrees F, about 10 minutes more. Let rest for 5 minutes, then remove the string. Slice and serve with Roasted Red Potatoes.
  • Preheat the oven to 375 degrees F.
  • Put the potatoes in a large bowl along with the fat from searing the roulade. Add the Parmesan, garlic, rosemary and some salt; toss to coat. Spread the potatoes out on a baking sheet and bake until tender, 20 to 25 minutes.
