SOUTHWESTERN-STYLE SLOW COOKER CHICKEN GIZZARDS
Gizzards are inexpensive and very flavorful but can be tough. By cooking them low and slow they become really tender and the Southwestern spices are always a hit in my house. We eat these over rice or in a tortilla like a burrito. If my picky 12-year-old likes them and actually requests them on a regular basis, then I know it's a winner.

Steps:
- Trim and discard as much connective tissue from gizzards as possible. Place gizzards in a slow cooker and season with chili powder, cumin, hot sauce, salt, and pepper. Add onion and bell pepper.
- Mix condensed soup and diced tomatoes with chile peppers together in a bowl. Pour over the gizzards.
- Cook on High until fork-tender, 3 to 4 hours. Stir in sour cream and cook for 15 to 20 more minutes.

MUSHROOM GIZZARDS
This is a microwave dish that is easy and tenderizes the gizzards.

Steps:
- Clean and rinse gizzards, being sure to trim off any green material. Place cleaned gizzards in a large bowl. Mix flour, paprika, salt and pepper together in a small bowl; pour mixture onto gizzards and toss well to coat.
- Heat oil in a large skillet over medium high heat. Brown coated gizzards in oil; drain and place in a microwave safe dish.
- In a medium bowl mix together the soup and a soup can of water; pour mixture over gizzards, cover and cook in microwave on high for 15 minutes.
- Stir, replace cover and cook for another 10 minutes. Check for tenderness; if still too firm, cook in microwave for another 5 minutes. Let sit and set for 5 minutes after cooking, before serving.

- Mix the salt and curing salt and coat the cleaned gizzards with it. Make sure there is some salt on every piece. Vacuum seal this or put into a closed container in the fridge for 24 to 72 hours.
- When you are ready to cook, remove the gizzards from the salt and rinse. Put the gizzards in a crockpot and cover with the broth. Add water if they are not completely submerged. Add the bay leaves and set the crockpot to high. My crockpot will never hit a simmer even at high, and this is what you want: So set your slow cooker at whatever setting will be nice and hot, but not simmering. Cook the gizzards for at least 6 hours (they’ll still be crunchy though), and as many as 24 hours if you want silky, tender meat.
