LOADED BACON, CHEDDAR, AND RANCH POTATOES
Best potatoes you will ever make, guaranteed! This recipe feeds a lot of people. I took it to a potluck and the pan came home licked clean, literally! People were going back for seconds and thirds and disappointed when it was all gone. This is a totally addictive potato recipe, you just can't stop eating them! It's a cinch to toss together and goes great with chicken, beef or pork, heck it would even make your sneakers taste good. Recipe can easily be halved to feed a family of four.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 13X9-inch baking pan with cooking spray or butter.
- Combine hash browns, sour cream, bacon, ranch mix, and 1 cup Cheddar cheese in a large bowl; stir until well mixed. Spread into baking pan; cover with aluminum foil.
- Bake in the preheated oven for 45 minutes. Remove foil; sprinkle remaining Cheddar cheese evenly across potatoes. Bake until cheese is bubble and lightly browned around the edges, about 15 minutes.

- Heat oven to 425°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In baking dish, stir sauce mix (from potato mix box), ranch dressing mix, boiling water and butter with whisk just until butter melts. Stir in milk, half-and-half and potatoes (from potato mix box).
- Bake 15 minutes; stir. Bake 15 to 20 minutes longer or until top is golden brown and potatoes are tender. Stir in sour cream; top with bacon and green onions.

- Preheat oven to 400°. Scrub and pierce potatoes. Rub with oil if desired. Bake until tender, 50-75 minutes. When cool enough to handle, cut each potato in half lengthwise. - Preheat oven to 350°. On an ungreased 15x10x1-in. baking pan, bake cubed rolls until toasted, 7-10 minutes. - Set oven to 400°F.
- Place the potatoes on a baking sheet; bake for about 1 hour or until potatoes are tender; cool about 20-30 minutes (or until cool enough to handle).
- Cut the potatoes in half lengthwise, then carefully scoop out the pulp (leave about 1/4-inch thick shell place the pulp in a large bowl.
- Using an electric mixer beat the potato pulp with cream cheese, sour cream, dry Ranch dressing mix and butter until smooth.
- Add in the bacon bits, both cheeses; mix to combine and season with salt and pepper to taste.
- Evenly divide the mixture between the four potato shells.
- Sprinkle tops with Parmesan cheese (any amount desired).
- At this point you can cover and chill until ready to bake.
- Bake the potatoes in a 350°F oven for about 15-20 minutes (if you have prepared and chilled the potatoes before hand you will have to bake a little longer to heat them).

- Wash and pierce potatoes in several places with a fork. Microwave on high 10 minutes until tender. Set aside to cool slightly.
- Preheat oven to 350 degrees. Grease an 11 x 7 inch baking pan.
- Combine cream cheese and sour cream in a large bowl; beat until smooth.
- Add yellow onion, half of the cheese, half of the bacon bits and salt. Mix well.
- When potatoes are cool enough to handle, cut in half. Scoop out pulp and mash potatoes.
- Then add to the cream cheese mixture. Beat with a mixer. Stir in milk, dry ranch dressing mix, and mix well.
- Spread potato mixture in prepared pan. Bake uncovered 30 minutes. Remove from oven, sprinkle with remaining cheese, bacon pieces, and green onions.
- Bake 5 minutes longer, or until cheese melts.

This is a delicious side dish with cheese, potatoes, and Ranch! What's not to love?! I am always begged to bring this wherever I go. It is a great complement to a barbeque or any potluck meal. I have experimented with using more chili powder and using seasoning salt instead of regular salt.

- Cook the bacon until it is just done but not too crisp.
- Line your slow cooker with aluminum foil. Leave enough to over hang so that you can wrap the potatoes on the top once in the slow cooker.
- Spray the inside of the foil with cooking spray and layer half of the potatoes along the bottom. Next layer with half of the bacon, green onions, onion, ranch packet and top with cheese. Repeat the layers and top with cheese reserving ½ cup.
- Cover the potatoes with remaining foil. This helps them to steam and cook perfectly. Cook on low for 4-6 hours in your slow cooker. Once finished, top with remaining ½ cup cheese and let melt on the top.
- Garnish with fresh green onions if desired.
