SMOKED GOUDA AND BROCCOLI FLATBREADS



Smoked Gouda and Broccoli Flatbreads image

There are equal amounts of cheese and broccoli on this flatbread, but it's the smoked Gouda that grabs your attention. Its buttery and lightly smoked flavor is accentuated by the scallions, which sweeten and brown as they roast. These are super speedy with the help of store-bought flatbread, naan or pocketless pita, but because the breads vary in size, adjust the quantity of topping to cover yours. (If you have extra toppings, make a melt on toast). Feel free to adapt with what you have: Swap out Gouda for another melting cheese like Cheddar or fontina; and for the broccoli, substitute spinach, kale, thinly sliced brussels sprouts or another quick-cooking vegetable.

8 ounces smoked Gouda, grated on the small holes of a box grater (about 2 cups)
8 ounces broccoli stems and florets, coarsely chopped (about 3 cups)
3 scallions, thinly sliced
1 tablespoon extra-virgin olive oil
Kosher salt and black pepper
4 flatbread, naan or pocketless pita (roughly 8-inch diameter, store-bought or homemade)

Steps:

  • Heat the oven to 450 degrees and place a rack in the lower and upper third of the oven. In a large bowl, combine the Gouda, broccoli, scallions and oil. Season with salt and pepper, and stir to combine.
  • Place the flatbread on two baking sheets, then top evenly with the cheese mixture. Roast, rotating pans halfway through, until the bread is crisp and the cheese is melted and browned in spots, 8 to 10 minutes.

Gooey Gouda Puff-Pastry Bites image

These cheesy and easy four-ingredient appetizers will remind you of brie baked 'en croûte'-which is the French term for anything baked in pastry. Here, the delicious handheld parcels are made from storebought puff pastry and filled with nutty Gouda cheese. Topped off with a dollop of lingonberry jam for sweetness, they'll be the first to go on the buffet table!

Unbleached all-purpose flour, for dusting
1 sheet (about 14 ounces) all-butter puff pastry, thawed
2 tablespoons Dijon mustard
1/2 pound Gouda, rind removed, cut into 24 approximately 3/4-inch cubes
Lingonberry jam and freshly ground black pepper, for serving

Steps:

  • Preheat oven to 425°F. On a lightly floured surface, roll out pastry to an approximately 11-by-16-inch rectangle. Trim edges straight to a 10-by-15-inch rectangle. With the tines of a fork, prick pastry all over at 1/2-inch intervals. Cut into twenty-four 2 1/2-inch squares (a 4-by-6 grid). Press each square into the cup of a mini muffin tin. Spoon 1/4 teaspoon Dijon into bottom of each pastry shell. Refrigerate until pastry is firm, at least 15 minutes.
  • Bake until pastry cups are puffed, golden along edges, and beginning to set, about 15 minutes. Working quickly, remove from oven and press a cube of cheese into center of each pastry with the handle of a wooden spoon. (Cheese should depress pastry to reach bottom of cup.)
  • Continue baking until pastry is golden brown and cheese is melted, 8 to 10 minutes more. Let cool in tins a few minutes. Transfer to a serving tray, top with jam, and sprinkle with pepper. Serve warm.

1/2 cup butter, cubed
1/2 cup all-purpose flour
1/2 teaspoon pepper
1/2 teaspoon ground allspice
1 carton (32 ounces) chicken broth
1/2 cup sherry or additional chicken broth
1/2 cup heavy whipping cream
1/2 pound sliced fresh mushrooms
4 garlic cloves, minced
2 cups shredded smoked Gouda cheese
Chives and smoked paprika

Steps:

  • In a large saucepan, melt butter. Stir in the flour, pepper and allspice until smooth; gradually add the broth, sherry and cream. Bring to a boil. Add mushrooms and garlic. Reduce heat; cover and simmer for 5-6 minutes or until mushrooms are tender., Add cheese; cook and stir until melted. Garnish servings with chives and paprika.

  • Get out 2 muffin tins that each have 12 wells and spray them both well with cooking spray. Pre-heat the oven to 375. Then take each sheet of puff pastry and cut them into 12 squares. Do this by cutting along the fold seams to cut the sheet into thirds, then cut each third into 4 equal squares. Press each square into a muffin well to fill both tins. Then get out a food processor and combine the remaining ingredients in its bowl. Run the processor until you have a fine mixture that still has a little bit of texture.
  • Use a big, heaping tablespoon to scoop the filling into the center of each puff pastry square. Bring the corners together on top of the filling to help enclose it, but it's ok if some goes through the sides. It's unavoidable. Brush the beaten egg on each puff, then bake them for 25-30 minutes. The puff pastry should be golden and crisp, with the filling set. Let them cool for a few minutes, then run a knife gently around the edge of each one to help loosen them from the tin. Serve immediately and enjoy!
