Time 1h25m

Yield 4 servings

Number Of Ingredients 16

1 pound ground turkey
1 cups Panko bread crumbs
1/3 cup milk
1 egg
1 tablespoon sage
1 tablespoon fresh thyme
1 teaspoon salt
1 teaspoon pepper, freshly cracked
1 cup cremini mushrooms, sliced (optional)
1 tablespoon olive oil
1/2 cup butter, unsalted
3 tablespoons canola oil
1 red onion, sliced
1 yellow onion, sliced
8 pieces rye bread
8 pieces Gruyere

Steps:

  • In a large bowl, add the panko, milk, egg, sage, thyme and salt and pepper. Combine and let sit for a few minutes. Add in the turkey and combine well. Form into oblong patties (same size as the rye bread) Place on a parchment paper lined sheet pan and refrigerate for 20-30 minutes.
  • While burgers are resting, in a large saute pan, heat 1/4 cup of the butter and 1 Tablespoon canola oil. Add onions and saute 15 to 20 minutes or until nicely caramelized. Set aside, but keep warm.
  • In the same pan as the onions sauteed, add 3 tablespoons canola oil and the mushrooms and saute 6-8 minutes over medium high heat until softened. Set aside, but keep warm.
  • Heat a griddle or cast iron skillet to medium high heat, add 1 Tablespoon canola oil and spread evenly. Add in the turkey burgers and cook for 4 to 5 minutes per side. Remove from heat, cover and keep warm.
  • Butter the rye bread and add to the pan, place the gruyere on bread, then place the turkey burgers on the cheese, pile with onions and the other piece of rye, repeat for all four burgers. After 2 to 3 minutes, turn sandwich over carefully and brown on other side. Remove to cutting board and cut on the diagonal. Serve with mustard and hot cherry peppers.

EASY PATTY MELT RECIPE WITH GROUND TURKEY

Easy Patty Melt Recipe with Ground Turkey image

An easy, low-fat patty melt recipe, featuring a ground turkey patty, with smoked cheese, onions and wheat toast.

Provided by Kelly Anthony

Categories     Main Course

Time 24m

Number Of Ingredients 12

1/2 cup ketchup
2 teaspoon ground chili powder
1/2 teaspoon ground cumin
1/4 teaspoon black pepper
1 1/2 teaspoon Worcestershire sauce
2 dashes of low-sodium liquid smoke
1 pound (85/15 ground turkey)
1 1/2 teaspoon TAK House Seasoning
2 1/2 tablespoon canola oil (separated)
3/4 cup freshly grated smoked Butterkäse cheese (or smoked Gouda)
1 yellow onion (halved and thinly sliced)
8 1/2" slices fresh, bakery wheat bread, toasted

Steps:

  • For the Spicy Ketchup sauce, combine ketchup, chili powder, cumin, pepper, Worcestershire and liquid smoke in a small mixing bowl, and whisk to combine. Set aside until ready to use.
  • For the turkey patties, have ready a pan lined with wax paper, and begin preparing the turkey patties. In a mixing bowl, combine turkey and TAK seasoning, and mix until well combined. With damp hands, take about 3 tablespoons of ground turkey, and roll into a ball in between the palms of your hands. Press the turkey ball flat like a pancake. Transfer to the wax paper, and continue making patties.
  • Once all of the turkey patties are formed, add 1 1/2 tablespoon of oil to a large sauté pan over medium-high heat, and allow to come to temperature. Transfer patties to the pan and cook for 3 minutes. Do not overcrowd the pan. Flip the patty, add a generous pinch of cheese to the top of the patty and continue to cook for 2 1/2 - 3 minutes more. Set aside.
  • Add another tablespoon of canola oil to the sauté pan (if necessary) before adding the onions. Reduce the heat to medium, add the onions and sauté the onion for about 6 minutes, or until softened and cooked through.
  • Assemble the patty melts by placing turkey patty on a slice of toasted wheat bread, top with a generous helping of onions and a spoonful of spicy ketchup sauce. Serve and enjoy.

TURKEY-MUSHROOM PATTY MELTS

Turkey-Mushroom Patty Melts image

When you think beyond the usual burger combos, a world of juicy flavor awaits. Here, the taste of mild ground turkey is boosted by folding umami-rich mushrooms into the patty mixture. To make it a proper melt, we griddle slices of rye bread until toasted then top them with the patties, Havarti cheese, and lemon-dressed shredded lettuce.

Time 1h15m

Number Of Ingredients 11

Kosher salt (we use Diamond Crystal) and freshly ground pepper
5 tablespoons extra-virgin olive oil, plus more for brushing

1 pound ground turkey, preferably dark meat
3 cups shredded romaine lettuce (from 1 head)
1 tablespoon chopped fresh dill, plus sprigs for serving
1 tablespoon fresh lemon juice
4 slices rye bread
Dijon mustard, for brushing and serving
4 ounces Havarti, sliced

Steps:

  • Heat a skillet over medium-high. Add mushrooms; season with salt and pepper. Cook, stirring, until tender, 5 minutes. Add 1 tablespoon oil and garlic; cook 1 minute. MUSHROOM-SWISS TURKEY BURGERS

Mushroom-Swiss Turkey Burgers image

White-meat turkey is lower in calories and fat than traditional burgers, but when you top this version with melted Swiss cheese, roasted red peppers, arugula, and grilled red onions, you'll hardly miss the beef.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Turkey Recipes     Ground Turkey Recipes

Time 25m

Number Of Ingredients 10

1 large red onion, cut crosswise into 1/4-inch rounds
1 teaspoon vegetable oil, plus more for grill
1/2 pound button mushrooms, quartered
Coarse salt and ground pepper
1 pound ground white-meat turkey
1/3 cup roughly chopped fresh parsley
2 ounces Swiss cheese, thinly sliced
4 whole-wheat burger buns, lightly toasted
2 roasted red peppers, cut into 1-inch slices
Baby arugula, for serving

Steps:

  • Finely chop enough onion to yield 1/3 cup (reserve remaining rounds for burgers). In a large skillet, heat oil over medium-high; cook chopped onion and mushrooms, stirring occasionally, until onion is soft and mushrooms are golden, about 4 minutes. Season with salt and pepper, then transfer to a cutting board and roughly chop mixture.
  • Heat a grill to medium-high. Clean and lightly oil hot grill. Season onion rounds with salt and pepper; grill until lightly charred and tender, 5 minutes, flipping once. In a large bowl, combine mushroom mixture, turkey, and parsley. Form into four 1/2-inch-thick patties; season with salt and pepper. Grill, about 4 minutes, flipping once. Top each patty with cheese; grill until burgers are cooked through and cheese is just melted, 1 minute. Serve burgers on buns with grilled onions, peppers, and arugula.
