MULLED CRANBERRY SAUCE

Steps:
- Wrap the cinnamon stick, peppercorns, orange zest and cloves in a small piece of cheesecloth and tie closed with kitchen twine to make a bundle.
- Combine the cranberries, sugar, 1 1/2 cups water, the wine and a pinch of salt in a medium saucepan; add the cheesecloth bundle and bring to a simmer over medium heat. Continue to cook, stirring occasionally, until the berries burst and the sauce thickens, 15 to 20 minutes. Remove from the heat and let cool.
- Transfer the cranberry sauce to a bowl and refrigerate at least 3 hours or overnight; discard the cheesecloth bundle. Garnish with thin strips of orange zest.

- Bring the wine to a gentle simmer with the cinnamon, orange juice and rind, cloves, ginger and star anise. Once steaming, remove from the heat and leave to infuse for 30 mins.
- Strain the wine into another pan, discarding the aromatics, and add the apple, cranberries and sugar. Bring to a simmer. Bubble for 10-15 mins until the berries start to burst, and the apple is soft. The sauce will thicken as it cools - you can add a splash more orange juice or water to loosen, if you like. Make ahead and freeze, or keep in the fridge for up to four days. Bring to room temperature to serve.

- Slice away the bottom of the orange so it sits steady on the cutting board. Working from top to bottom, slice off the peel, leaving behind most of the white pith. Finely dice half of the peel strips; discard the rest or save for another use. In a small saucepan over high heat, combine the diced peel and the water. When the water comes to a boil, lower the heat and simmer for 10 minutes. Meanwhile, squeeze all the juice from the orange and set aside.Strain and set aside the blanched orange peel.
- In a medium saucepan, add diced apple, cranberries, orange juice, blanched orange peel, sugar, cinnamon, and cloves. - In a medium saucepan, combine the juice, cinnamon stick, and cloves and bring to a boil. Reduce the heat and simmer.
- Meanwhile, in a small saucepan, combine the cranberries, sugar, ground cinnamon, and 2 tablespoons of water and heat over medium-low heat, gently stirring, until the cranberries pop and are well coated with the sugar mixture.

- Chop the apples. Do not peel or core them, but cut away any bruised parts. Put into a large, deep pan with the cranberries, 1.75 litres water, the wine, cloves, cinnamon sticks, 4 star anise, orange zest and juice.
- Scald a jelly bag or a large square of muslin in a large pan of boiling water to sterilise. Drain or squeeze out the excess water. Carefully pour the mixture into the jelly bag or a muslin suspended over a very large bowl, and leave to drip through until it stops.
- Return the pulp to the pan, add another 1.2 litres of water and simmer for a further 20 minutes. Drain through the jelly bag or muslin, as before, into a separate bowl.
- Combine the 2 juices and measure the volume. Weigh out the sugar, allowing 450g sugar to every 600ml juice, and set aside. Wash and rinse 12 x 175ml jars with lids and sterilise them in the oven at 150°C/fan130°C/gas 2 for at least 15 minutes.
- Pour the juice into the cleaned pan, bring to the boil and boil for 10 minutes to concentrate the flavour, skimming off any scum as it collects on the surface.
- After 10 minutes, test the jelly by pouring a little onto the chilled saucer. Return to the freezer for a few minutes, then remove and push your finger across the surface.
- Jellies tend to set very quickly so it’s important to make sure the jam jars are still hot from the oven when you’re ready to use them. Ladle the jelly into a sterilised jug and pour into the jars.
