MUFFIN PAN MEATBALLS
This is a simple weeknight recipe my grandma passed along to me. I grew up on a farm where my father was a beef producer, so we always had ground beef in the freezer. I made these meatballs for our family and for kids while I was babysitting, and they were always a hit. Leftovers reheat well the next day. -Karen Davis, Milwaukee, Wisconsin

Steps:
- Preheat oven to 375°. Coat metal muffin pan with nonstick spray. In medium mixing bowl, combine beef, onion, green pepper if desired, cereal, salt, pepper and egg. Set aside., In small bowl, stir together ketchup, brown sugar and mustard until smooth. Pour half of ketchup mixture into meat and mix until thoroughly combined. Form meat mixture into six balls and place in muffin cups. Spoon remaining ketchup mix over meatballs. Bake for 30 minutes. Remove from pan with spoon and serve.

MUFFIN TIN SPAGHETTI MEATBALL BITES
Steps:
- Preheat oven to 375 degrees F. In a large pot set on the stove top, cook spaghetti with 1/2 tablespoon olive oil. Cook according to package directions. Strain spaghetti and toss with 1/2 tablespoon olive oil or cooking spray to prevent the noodles from sticking together. Allow mixture to cool. Meanwhile, cook meatballs according to package directions (or make your own). Toss spaghetti with 3/4 cup Parmesan cheese crumbs and 1 tablespoon parsley. Spray a 12 cup muffin tin pan well with cooking spray. Spoon noodle mixture into tins, filling it nearly to the top. Spoon 1 tablespoon Ragu® Sauce on top of the noodles then top with 1 meatball for each. Spoon 1 tablespoon over the top of each meatball then sprinkle with Parmesan cheese and parsley or basil. Cook in oven for about 20 minutes.

I got this recipe from an Extension Homemakers cookbook. It is pretty easy to make, and everyone should have most of the ingredients on hand. It's quick and easy, and kids love them. You can top with anything including cheese.

- Place 1 cheese piece in center of each dough round, and top with 1 meatball. Gently stretch dough up and around meatball and cheese, bringing to top, and pinching firmly to seal.
- In small microwavable bowl, microwave butter uncovered on High 20 to 30 seconds or until melted. Stir in bread crumbs and 1 tablespoon Parmesan cheese; mix well. Roll each biscuit in mixture, lightly pressing mixture into dough, and place pinched side down in muffin cup. Bake 15 to 20 minutes or until golden brown and biscuits are no longer doughy in center.
