BOTTLE OF WINE CHOCOLATE PIE
We managed to fit a whole bottle of wine in this decadent dark chocolate pie. Perfect for a grown-up dinner party, it offers the best of both worlds.

- For the crust: Position a rack in the center of the oven and preheat to 325 degrees F.
- Toss together the cookie crumbs, butter, sugar and salt in a medium bowl. Press into the bottom and sides of a 9-inch deep-dish pie pan. Bake until dry and set, 15 to 18 minutes. Let cool completely on a wire rack.
- For the filling: Combine the cornstarch and 1 1/4 cups of the sugar in a medium saucepan and very slowly whisk in the wine to prevent lumps from forming. Cook over medium heat, stirring constantly, until it has come to a simmer and is very thick, about 8 minutes. Remove from the heat and stir in the chocolate, butter and salt until smooth. Pour the filling into the cooled crust and refrigerate until chilled and set, about 4 hours and up to overnight.
- Right before serving, whip the cream with the remaining 3 tablespoons sugar in a large bowl with an electric mixer until soft peaks form. Top the pie with the whipped cream. Scatter the chocolate curls or sprinkles over the top, if using.
MINNIE'S CHOCOLATE PIE FROM THE HELP
I saw the movie, The Help, this weekend and it was excellent. Then the sermon on Sunday included a reference to it. I wanted to have the recipe for Minnie's pie - NOT the one she made ONLY for Hilly!!!!!. Maybe someone else wants it, so here it is.

Steps:
- Preheat oven to 325°F.
- Mix everything together in one big bowl.
- You don't have to bake the crust first, prick the bottom of it.
- Pour filling into crust.
- Bake for about 50 minutes. Let the pie set for a long while once it comes out of the oven. I think this definitely tastes better room temperature.
- If you'd like, serve with a big scoop of ice-cream, some fruit, a little whipped cream, or straight out of the pie plate!

- Preheat oven to 375°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., Place chocolate and butter in a small saucepan. Cook and stir over low heat until smooth. Remove from the heat; stir in milk. In a large bowl, combine sugar, cornstarch and salt. Add eggs, vanilla and chocolate mixture; mix well. Pour into crust. Sprinkle with coconut and pecans., Bake until a knife inserted in the center comes out clean, 45-50 minutes. Cool completely on a wire rack., For topping, in a large bowl, beat cream until it begins to thicken. Add confectioners' sugar and vanilla; beat until stiff peaks form. Spread over pie; sprinkle with additional coconut and pecans. Refrigerate until serving.

MS. WINNIE'S CHOCOLATE PIE
This recipe is from a neighbor that I used to love to visit when I was a child. She lived to be over 100 years old and was still baking just as active at the end of her life as she had been for years. She would let me help her in the kitchen and I think she fostered part of my love of baking.

Steps:
- Mix dry ingredients well.
- Add 3 egg YOLKS and 1 egg WHITE to dry mixture, RESERVING the other 2 egg WHITES for the meringue.
- Add butter and mix well.
- Slowly stir in milk and water.
- Over medium heat, cook this mixture until thickened, STIRRING CONSTANTLY.
- Once mixture has thickened, add vanilla extract and bring to room temperature.
- Once mixture has cooled, pour into baked pie shell.
- In a separate bowl, beat the two egg WHITES until soft peaks form.
- Slowly add 6-7 tablespoons of sugar and continue beating until meringue is stiff, not dry.
- Top pie with meringue and baked at 350 degrees for approximately 10 minutes until meringue is lightly browned.
- Refrigerate before serving and refrigerate any leftovers.

- Preheat the oven to 350°. Ease the pie crust into a 9-inch pie plate and crimp the edges decoratively. Prick the crust lightly with a fork. Line the crust with foil or parchment paper and fill with pie weights or dried beans. Bake for 15 minutes or until set. Remove the foil and weights and bake for about 5 minutes longer, just until the crust is dry but not browned.
- Meanwhile, in a bowl, whisk the sugar with the cocoa powder, butter, eggs, evaporated milk, vanilla and salt until smooth.
- Pour the filling into the pie shell and bake for about 45 minutes, until the filling is set around the edges but a little jiggly in the center. Cover the crust with strips of foil halfway through baking. Transfer the pie to a rack and let cool completely before cutting into wedges. Serve with whipped cream.
