Categories     Desserts

Time 1h10m

Number Of Ingredients 13

1/2 cup butter (at room temperature)
2/3 cup sugar
1 teaspoon vanilla extract
1 medium-sized egg
2 cups all-purpose flour
2 teaspoons baking powder
a pinch of salt
5 medium-sized apples
1 1/2 teaspoons cinnamon
1/2 cup butter (at room temperature)
2/3 cup sugar
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • Grease and flour a 9.5-inch cake springform pan. You can also line the bottom with parchment paper.
  • Beat the butter, sugar, and vanilla extract with your hand mixer in a large bowl. Add the egg and beat again.
  • In a separate bowl, combine the flour, baking powder, and a pinch of salt. Add the mixture to the liquid ingredients in small increments while using your hand mixer (and later your hands) on a low setting to avoid the flour from making a mess. You'll have to stop using your mixer about halfway through since the dough will become quite sticky. Just use your hands for the last bit and make sure not to overmix! Stop once everything is well combined and there are no lumps.
  • Take the dough and roll it out with a rolling pin until it is slightly bigger than your springform pan (you'll need it for the edge/crust!). Make sure to put some flour on the surface and on the rolling pin first to avoid unnecessary sticking. Alternatively, you can also flatten the dough with your hands, then place it directly in the springform pan and form it to the bottom of the pan and up the sides (for crust). Make sure the dough has an even thickness and also make sure you have an approximately 1.5 inches high edge along the removable ring part of the springform pan (this is the crust).
  • Peel the apples, remove the cores, and cut them into approx. 1/4-1/2 inch-sized cubes. Place the apple cubes into a bowl, add the cinnamon and mix well. Now evenly place the apple cubes over the cake base.
  • For the crumbles, mix butter, sugar, vanilla extract, and flour using your hands (not your mixer!). The dough should be quite crumbly but the flour should be fully mixed in with the other ingredients (there should not be a lot of white flour spots). This might take a couple of minutes. If your dough feels too soft/sticky, add slightly more flour until it reaches the desired consistency (this shouldn't happen though). Rip the dough into small pieces and place it on top of the apples.
  • Bake the cake for approximately 50 - 60 minutes. Since every oven is different, your baking time might vary slightly. Once the cake is done baking, remove it from the oven and let it cool in the springform pan. Remove the cake from the pan once it has cooled sufficiently.

MRS. VOLLMER'S GERMAN APPLE CAKE

Mrs. Vollmer's German Apple Cake image

This comes from the St. David's School Cookbook (1974) and I have been making it now for thirty years. It's wonderful for parties; it's very elegant and rich, and really extraordinarily delicious. The pastry--which is really like shortbread--is good enough to eat by itself; the combination makes for a great dessert. It is rich enough that it doesn't need whipped cream (though I wouldn't stop anyone from adding some).

Time 1h30m

Yield 12-16 serving(s)

Number Of Ingredients 12

1 lb sweet butter, softened
1 cup granulated sugar
4 egg yolks
1 teaspoon vanilla extract
1/4 teaspoon salt
4 -5 cups unbleached white flour
5 lbs apples (I recommend a combination of Granny Smith and Mackintosh)
8 ounces apricot jam
1/2 cup fresh lemon juice
2 teaspoons cinnamon
1 cup sugar
1/2 cup slivered almonds (optional)

Steps:

  • For the crust:.
  • Blend the softened butter with the sugar thoroughly.
  • When creamy, add egg yolks vanilla and salt.
  • Mix well.
  • Blend in flour gradually, mixing lightly by hand until a homogenous mass.
  • Pat dough into a 12" rectangular pyrex baking dish until it is evenly distributed over the bottom and part way up the sides.
  • For the filling:.
  • Peel and core apples and slice them into fairly thin slices.
  • Sprinkle the slices with lemon juice, cinnamon and sugar as you go, placing them into a bowl, until all the apples are sliced.
  • Warm the jam.
  • If it is in a glass jar, loosen the lid and place the jar in a small pot of water, with the water coming half way up the side of jar.
  • Simmer over low heat until jam is soft.
  • Spread half the jam on the surface of the crust, and then place the apples, slightly overlapping, in as many rows as the bottom will take.
  • If you are using Mackintosh apples, they will shrink more and tend to break.
  • Keep your prettiest slices for the top, and arrange them attractively.
  • Using a pastry brush, spread the rest of the jam across the the top of the cake.
  • Sprinkle the top with almonds (I always leave this out unless I'm making it for a certain person).
  • Bake in a 350° oven for about an hour, until crust and apples are golden.

Time 1h

Number Of Ingredients 11

1 1/2 pounds sweet-tart apples (about 4-5) ((e.g. Granny Smith, Jonagold, Braeburn, Gravenstein, Honey Crisp, Pink Lady))
2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
14 tablespoons quality unsalted butter (, softened at room temperature)
1 cup granulated sugar

Set aside a few pieces/slices to press into the top of the cake at the end. Stir the apple pieces into the batter and scoop the batter into the greased pan. Use the apple pieces you set aside and press them into the top of the batter. Bake for 40-55 minutes until a toothpick inserted into the center of the cake until comes out clean. Let the cake cool in the pan for 15 minutes and then remove it to let it cool completely.
  • If using the sugar cinnamon or apricot jam toppings (see blog post "Optional Toppings" for instructions), apply it while the cake is hot and then let the cake cool. If using powdered sugar, sprinkle it over the cake once it's cooled. Serve the cake on its own, with some whipped cream, or serve it with vanilla ice cream and/or a drizzle of homemade caramel sauceStore the cooled cake in a cake saver or airtight container. This cake will be even more moist the next day. Will keep at room temperature for up to 3 days or can be refrigerated a little longer.

  • Preheat oven to 350°. Grease bottom and sides of springform pan with butter, then coat with breadcrumbs, tapping out excess.
  • Whisk granulated sugar, lemon zest, baking powder, salt, and 1 cup flour in a large bowl. Create a well in the center and add egg, vanilla, and remaining ½ cup butter. Using a fork and working in a circular motion, stir until dough starts to form large clumps. Using lightly floured hands, knead very gently in bowl until dough comes together in one large, soft mass (you may need to add a little bit of flour to dough to keep from sticking to your hands).
  • Still using lightly floured hands, press dough into bottom of springform pan, then press into an even layer with the bottom of a dry measuring cup or mug, sprinkling a little flour over dough if it starts to stick to measuring cup. Spread apricot preserves in a thin layer over surface of dough with a small offset spatula.
  • Peel and quarter apples. Cut core out of each quarter and arrange apples flat side down on cutting board. Make thin parallel crosswise slices in each quarter, taking care not to cut all the way through so apples stay in one shingled piece. Arrange apple quarters in concentric circles over entire surface of dough, trimming to fit if necessary (you may have a few extra pieces).
