- Butter one side of each slice of bread. Spread mustard over the unbuttered side of two slices; layer each with one slice of cheese, ham, tomato, remaining cheese and remaining bread, buttered side up. , In a shallow bowl, whisk the eggs, milk and onion powder. Place potato chips in another bowl. Dip each sandwich into egg mixture, then coat with potato chips. , In a large nonstick skillet or griddle coated with cooking spray, toast sandwiches for 4 minutes on each side or until golden brown.

- In a microwave-safe baking dish, combine the orange juice, brown sugar, orange zest and ginger. Add ham slice, turning to coat with sauce. Cover and refrigerate for 15 minutes., Cover and microwave on high for 1 minute on each side. Microwave at 50% power for 2 minutes, spooning sauce over ham once. Remove ham and keep warm. , Combine cornstarch and water until smooth; stir into cooking juices. Microwave, uncovered, at 50% power for 10 seconds; stir. Cook 20 seconds longer or until thickened. MISS LILY'S JERK CHICKEN

- Place the chicken in a large bowl or baking dish and pour the brine over it, making sure the chicken is fully submerged. Cover and refrigerate for 24 hours.
- Rinse the chicken well. Wearing latex or vinyl gloves (Scotch bonnet chiles can remain on the skin for 24 hours!) rub the Jerk Marinade all over the chicken. Place in a resealable plastic bag and refrigerate for 24 hours.
- Preheat a grill for cooking over indirect medium heat. Lightly oil the grill grates, then place the chicken skin-side down over indirect heat. Grill, uncovered, turning the chicken every 5 to 6 minutes, until the juices run clear when the thighs are pricked with a fork, 40 to 50 minutes.
- Remove from the grill and let rest for 5 minutes to allow the juices to distribute equally.
- Cut the chicken into quarters, separating the leg portions from the breast portions, and serve with Jerk BBQ Sauce.
- Stir the salt and light brown sugar into 8 cups water in a pot and bring to a simmer, stirring to ensure that the salt and sugar completely dissolve. Let cool to 38 degrees F before using.
- Put the soy sauce, oil, salt, allspice, thyme, green onions, garlic, chiles, ginger and onion in a food processor and puree until a smooth paste is formed, adding more oil if necessary. Set aside.
- In a nonreactive heavy-bottomed saucepan, stir together the tomato paste and 2 cups water and heat slowly, stirring, until well incorporated. Add in the Jerk Marinade, molasses, vinegar, brown sugar, mustard powder, tamarind, celery salt, cumin, pepper, liquid smoke, thyme and lime juice. Bring to a boil, then turn down the heat and simmer until the sauce has thickened and reached the desired consistency. Remove from the heat and let cool.
HAM AND POTATO CASSEROLE
I had the best Home Ec teacher in Jr & Sr High School, Mrs. Carol Renfro. This woman really knew how to cook and how to teach others how to cook as well. This was one of our first recipes we had to make once we started cooking. I still have my original recipe card (did I really used to write like that?!) and we have this often. I hope you will enjoy this as much as we do! Prep time does not include times to cook ham or potatoes.

- Cook potatoes in your favorite method (bake or boil) till done. Allow to cool enough to handle.
- While potatoes are cooling, prepare white sauce.
- Melt butter in medium sauce pan over medium heat.
- Stir in flour to form thick paste. Continue to cook, stirring constantly for 1 minute (this allows the flour taste too cook out).
- Slowly add half 'n half and continue to stir over medium-low heat until sauce this thickened.
- Add mustard, salt, pepper, onion & 1/2 cup cheese to the sauce. Stir to incorporate and remove from heat.
- Preheat oven to 375°F.
- Spray 2 quart casserole with PAM or your choice of no-stick cooking spray.
- Dice the cooked ham (left over ham is great for this recipe).
- Peel and dice the potatoes (approximately 1/2" pieces).
- Place the potatoes in casserole dish in an even layer.
- Spread ham pieces over the top of the potatoes.
- Add remaining cheese to the white sauce and give a final stir (this last addition of cheese should not melt right away) and pour over the ham and potatoes.
- Bake uncovered for 25-30 minutes.

MRS. DASH GRILLED HONEY DIJON CHICKEN
So easy and most ingredients are on hand. Mrs. Dash original blend is the key ingredient as well as dijon and honey,can't beat this for quick & easy.If you like to dip your chicken, make a double batch of mustard and honey. As usual with grilling chicken, sometimes I need to cook longer, but always check to see if the juices are running clear. Just 5 grams of fat and 5 grams of carbs. I found this at the Dash website (after tasting LorrieMom's carrots.. oh yum) I have done a touch of zaar adjusting to fit our tasts.

- Heat grill to medium high heat ( about 350 degrees).
- Brush olive oil over both sides of chicken and sprinkle both sides with Mrs. Dash Seasoning.
- Combine mustard and honey, place chicken on grill & brush half of mustard mixture over chicken.
- Grill covered about 4 minutes, mabye more depending on the thickness of chicken breast and grill temperature.
- Turn chicken and brush remaining mustard mixture over chicken and continue to cook another 4-5 minutes on a covered grill. (Or until juices run clear or knife inserted removes quickly and clean).
- Everytime we make this dish I find the grilling time is different, so watch closely.
