8 cardamom pods ((or heaping 1/2 tsp ground cardamom))
6 allspice berries ((or 1 tsp ground allspice))
2 sticks cinnamon (3-inch sticks) ((or 1 tsp ground cinnamon))
2 dried red chiles ((or 1 tsp red pepper flakes))
2 tsp black peppercorns ((or 3 tsp ground black pepper))
2 tsp coriander seeds ((or 1 1/2 tsp ground coriander))
2 tsp ground ginger
2 tsp ground turmeric
2 tsp dried mint leaves
1 tsp ground mace
1 tsp whole cloves
1 tsp anise seeds
1 tsp nigella seeds
1 tsp dried lavender
6 dried rosebuds

Steps:

  • In an electric coffee or spice grinder, blitz all of the ingredients to a powder.
  • Store in an airtight container for up to 6 months.

Ras el Hanout means head of the shop and is a spice mix that can be found online and in many larger markets. It may contain as many as 100 spices and as few as 10. I make a base substitute from spices I have on hand in my own pantry. I make batches of about 1/3 cup that I can keep on hand for several recipes before I need to make more.

1 tablespoon ground cumin
1 tablespoon ground coriander
1 tablespoon turmeric
1 tablespoon paprika
1 1/2 teaspoons freshly grated nutmeg
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1 teaspoon ground allspice
1 teaspoon cayenne pepper
1/2 teaspoon ground cloves

Steps:

  • Combine the cumin, coriander, turmeric, paprika, nutmeg cinnamon, cardamom, allspice, cayenne pepper and ground cloves and store in an airtight container away from the heat for up to several months.

Ras el Hanout ( "top of the shop" ) is a spice mixture from Morocco that can contain anywhere from 10-100 different spices. After checking cookbooks & searching online I decided on this combination for this spice mix.

2 teaspoons ground nutmeg
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons ground ginger
2 teaspoons turmeric
2 teaspoons salt
2 teaspoons cinnamon
1 1/2 teaspoons sugar
1 1/2 teaspoons paprika
1 1/2 teaspoons ground black pepper
1 teaspoon cayenne pepper
1 teaspoon cardamom powder
1 teaspoon ground allspice
1/2 teaspoon ground cloves

Steps:

  • Mix all the spices together.
  • Store in an airtight container.

Number Of Ingredients 8

2 ½ tbsp cumin seed
2 tbsp coriander seed
1 tbsp ground cinnamon or 1 cinnamon stick
2 tsp ground ginger
2 tsp black peppercorn
1 tsp ground turmeric
½ tsp cardamom pod (seeds from about 10 pods)
a good pinch of saffron (optional)

Steps:

  • Toast the whole spices in a small pan until they are aromatic and have turned a shade or two darker. Don't be tempted to skip this stage, as it really enhances the flavours.
  • Tip into a spice grinder (or use a pestle and mortar), then add the ready-ground spices and dried herbs if required, and crush to a fine powder. Store in a sealed jar for up to six months.
