Steps:
- 1. Cream butter and sugar; add potatoes, mix well. Add lukewarm milk, then eggs, mix well.
- 2. Dissolve yeast in warm water and add to mixture.
- 3. Combine seasonings, and rind, mix in. Add enough flour to make a soft dough.
- 4. Knead on a well-floured table. Form into ball, place in a greased bowl. Cover with a cloth and let rise in a warm place until double in size.
- 5. Punch down; let rise again 5-10 minutes. Flouring hands well (dough will be sticky) form in to small balls (about 3 oz.).
- 6. Place on a cookie sheet. Slash tops with a razor blade (to release air). Cover. Let rise until double in size.
- 7. Bake at 350 till golden brown all over, (15-20 mins.). Makes about 30 buns.

- Place cubed potato and enough water to cover in small saucepan. Bring to a boil; reduce heat to medium-low. Cook potatountil fork-tender. Drain, reserving 1/2 cup of the potato water. Mash potato to measure 1/2 cup; set aside.
- In the same saucepan combine potato water, 1/4 cup of water and1/2 cup butter. Heat until very warm (120 to 130 degrees F).
- Meanwhile, in a large bowl, combine 2 cups of the flour, the sugar,salt, and yeast; mix well. Add warm potato water mixture; beat until well blended. Add remaining flour, 1/2 cup at a time, beatinguntil smooth. Cover and refrigerate 8 to 24 hours.
- Grease cookie sheets. Punch down dough several times to remove all air bubbles. Place dough on lightly floured surface. Knead dough 6 to 10 minutes or until smooth and elastic. Dividedough into 16 pieces. Shape each into smooth, round bun; place on greased cookie sheets. Cover loosely with plastic wrap and cloth towel. Let rise in warm place (80 to 85 degrees F) until doubled in size, about 45 minutes.
- Heat oven to 375 degrees F. Uncover dough. Cut 1/4 cup cold butter into 16 equal pieces. Press one piece into the center of each bun. Sprinkle each with 1/2 teaspoon sugar. Bake 20 to 30 minutes or until golden brown. Serve warm.

MORAVIAN LOVE FEAST BUNS
Moravian love feast buns are traditional buns that are commonly made and served during the moravian love feast. Prepared with eggs, flour, butter and leavened with yeast, the moravian love feast buns are quite heavy and filling.

- Pare the potato, cut in chunks, and cook in boiling water until tender. Drain, saving 1/2 cup of the potato water. Mash potatoes until smooth and measure out 1/2 cup of them. Sprinkle yeast over warm water to dissolve. Combine mashed potato, 1/2 cup of the reserved potato water, butter, sugar, salt, and eggs. When mixture is lukewarm, stir in yeast. Cover with a tea towel and set bowl in a warm place until mixture is spongy looking. Then mix in the flour thoroughly. (At this point you should have a soft dough add more flour, if needed.) Cover and let rise in a warm spot until double in size. Punch dough down and knead on a floured board until smooth. Pinch off pieces of the dough and shape into buns about 3 inches in diameter. Place on a greased cookie sheet and let rise a third time until almost double in size. Bake in a preheated 375° oven for 25 to 30 minutes. When buns begin to turn golden brown, brush tops with cream or melted butter. Cool before serving.

RESURRECTION BUNS (SWEET EASTER BUNS)
These buns form a 'hollow' in the middle after baking. This hollow represents the empty tomb when Christ arose on Easter. They taste very much like cinnamon buns. YUMMY!

Steps:
- Mix your cinnamon and sugar together in a bowl.
- Take a small ball of raw bun dough (these are easily made if you have leftover bread dough as well), and wrap it around a marshmallow, sealing well.
- Dip the ball into melted butter.
- Dip the buttered ball into the cinnamon/sugar mix.
- Place the ball onto a greased cookie pan, (use a pan with a lip, because the marshmallow will melt out to make a nice gooey sauce, and you wouldn't want it all over the bottom of your oven!) Leave enough space between balls to allow them to rise to double their size.
- Cover loosely with plastic wrap and let rise for about 35 mins or until doubled in size.
- Pre-heat oven to 375.
- Bake the Resurrection Buns in the oven for 18-20 mins or until lightly browned.

MORAVIAN SUGAR CAKE (AUTHENTIC)
My Grandma would roll over in her grave right now if she knew I was posting her Moravian Sugar Cake recipe but why keep such a delish recipe under wrap? My family is Moravian this recipe comes straight from the church. My Grandma used to make this all the time on Sunday mornings for breakfast with coffee or tea. It's a bit time consuming, but well worth the effort.

Steps:
- To proof yeast, add a pinch of sugar to the yeast in lukewarm water (hot water will kill the yeast action). If it foams, it is good.
- In large mixing bowl, cream eggs, salt, sugar & shortening till smooth.
- Gradually add warm milk & mashed potatoes, stirring a bit. Then add yeast, mixing well. Add flour, a cup at a time, until dough is stiff enough to turn out on a floured board.
- Knead dough until soft & spongy (about 10-15 minutes by hand, or if done in a food processor, mix until it forms a ball). Place in large greased bowl in a draft free, warm place & cover with a damp towel. Let dough double in size (approx. 2-3 hours).
- Punch down and divide dough.
- Place in greased pie pans or large cookie sheets, cover & let double in size again (approx. 1 ½ hrs.).
- Spread melted butter on top of cakes, punching holes in dough about 1 inch apart with fingers. Be careful not to punch down to bottom of pan but only half way down. Mix the topping thoroughly & pour into holes in the dough.
- Sprinkle remaining crumbs over top & sprinkle with cinnamon.
- Bake in pre-heated oven at 350 for 20 minutes or until golden & fully baked on the bottom. Serve warm.
