ONE-PAN BAKED HALIBUT RECIPE WITH VEGETABLES
You'll love this simple baked halibut recipe with colorful vegetables tossed in a citrus and olive oil sauce! Perfect for busy weeknights because it comes together in 20 minutes or less. If you can't find halibut, another white fish like cod, haddock, or red snapper would work well. This sheet pan dinner is a filling meal in one, but if you want to make the most of the zesty Mediterranean-style sauce, serve the halibut and veggies over a bed of barley or bulgur.

- Preheat the oven to 425 degrees F.
- In a large mixing bowl, whisk the sauce ingredients together. Add the green beans, tomatoes, and onions and toss to coat with the sauce. With a large slotted spoon or spatula, transfer the vegetables to a large baking sheet (21 x 15 x 1 inch baking sheet, for example). Keep the vegetables to one side or one half of the baking sheet and make sure they are spread out in one layer.
- Now, add the halibut fillet strips to the remaining sauce, toss to coat. Transfer the halibut fillet to the baking sheet next to the vegetables and pour any remaining sauce on top.
- Lightly sprinkle the halibut and vegetables with a little more seasoned salt.
- Bake in 425 degrees F heated oven for 15 minutes. Then transfer the baking sheet to the top oven rack and broil for another 3 minutes or so, watching carefully. The cherry tomatoes should begin to pop under the broiler.
- When ready, remove the baked halibut and vegetables from the oven. Serve immediately.

SIMPLE BROILED HADDOCK

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil and spray with cooking spray.
- Arrange haddock fillets on the prepared baking sheet. Mix onion powder, paprika, garlic powder, salt, black pepper, and cayenne pepper in a small bowl; sprinkle seasoning over haddock. Dot haddock with pieces of butter.
- Broil in the preheated oven until fish is easily flaked with a fork, 6 to 8 minutes. Serve with lemon wedges.

- Clean the inside and outside of the fish with lemon; rinse the fish with cold water; pat dry; place the fish on a baking sheet.
- Mix 3 tablespoons of oil with the lemon juice, basil, oregano, garlic, wine or sherry, salt and black pepper.
- Place the fish on a baking pan; brush the fish with the mixture inside and outside; spread the rest of the mixture inside and on top of the fish.
- Heat the oven to 350 degree, bake the fish covered for 20 minutes.
- Transfer and place the fish in a single layer on a greased broiler pan; broil the fish for 15 minutes.
- At the same time, chop the carrots, potatoes, squash, peppers, shallot as desired.
- Mix one tablespoon of oil with rosemary, pinch of salt and marinate the vegetables.
- On a non-stick baking pan, roast the vegetables for 20 minutes.
- Place the broiled fish and the vegetables on a platter and serve it warm.

BROILED WHOLE FISH

- Rub the inside with lemon, sprinkle with salt and pepper and arrange on a well greased grill (or use a greased hinged grill). Cook on both sides to brown evenly and baste with melted butter and lemon juice or white wine. Fish cooks quickly. A small whole fish will only take 15 to 20 minutes. Larger ones take a half hour or more. Test with a fork or toothpick. The fish is cooked when the flesh flakes easily.
- Serve with more melted butter and lemon juice or white wine, or with parsley butter. Fried potatoes and a crisp green salad or cucumber salad are excellent with fish dishes. Serve a fine dry white wine, chilled of course.
SPEEDY BROILED FISH WITH VEGETABLES
Yield 2 - 6 servings

- 1) Turn the broiler to high and cover a baking sheet with parchment paper or a silicone mat. Place fish on the pan.
- 2) Spread a thin layer of miso paste (mixed with water and/or lemon juice) over the fish fillets. Spritz on or pour half the olive oil over the fillets and then season them with salt and pepper.
- 3) Peel several ribbons from one side until you reach the seeds, then turn the zucchini and peel away more ribbons until all that's left is the core. Thinly slice or spiral the bell peppers and red onions to add color and flavor (optional). Toss all vegetables in a bowl with the remaining olive oil and salt and pepper. Arrange the vegetables around the fish on the baking sheet.
- 4) Place the pan of fish and vegetables under the broiler on the top rack of your oven, about four inches below the heating element. Cook the fish for two to four minutes, or until the fish is opaque, and a knife slides easily into the thickest part of the fillets. Make sure you don't overcook them!
- 5) Transfer the cooked fish to a plate and continue to broil the vegetables if they need more time, until tender and browned on the edges. Serve fish and vegetables alone or with a whole grain like quinoa, farro, sorghum, or brown rice.
