Drunken monkey banana rum jam features sugared bananas, a splash of rum, and a dash of lemon for a jam that is so good, it makes anything you put it on taste just like dessert. Your toast, pancakes and even your ice cream won't be able to get enough of this adventurous topping!

3 large (overly ripe bananas)
2 tbsp lemon juice
1/2 cup sugar
1/2 cup packed brown sugar
3/4 cup water
1 tsp vanilla extract
1 tsp cinnamon
2 tbsp rum (or rum extract)

Steps:

  • Peel the bananas and place them in a medium sized bowl. Use a fork to roughly 'chop' them up. Drizzle the lemon juice over them, and set the bowl aside.
  • Add the water to a medium-large sized skillet over medium-high heat. Add in the sugar, whisking consistently to dissolve, and bring the sugar water to a low boil.
  • Whisk in the bananas, vanilla, cinnamon, and rum.
  • Reduce to low heat, and allow the mixture to gently simmer for about 30 minutes, stirring occasionally, and mashing up the bananas as it cooks.
  • The syrup will thicken up nicely as it cooks, up until it easily coats the back of a spoon. At this point, transfer the syrup into glass mason jars and refrigerate. The mixture will continue to thicken as it cools. Spread it over toast, a generous dollop over a stack of pancakes, or over several scoops of vanilla ice cream.

Number Of Ingredients 5

4 perfectly ripe bananas (no spots)
14 oz can of crushed pineapple (with the juice)
2 cups white sugar
3 Tablespoons unsweetened ground coconut (I used "macaroon" coconut)
3 Tablespoons lemon juice (from a bottle)

Steps:

  • Chop the banana into thin slices.
  • Combine all of the ingredients in a large nonstick pan.
  • Bring to a rolling boil, stirring often.
  • Reduce the heat to low and simmer until the banana has dissolved and the mixture has thickened slightly (about 15 to 20 minutes), stirring frequently.
  • Serve warm over ice cream or on toast, pancakes or waffles.
  • Can be stored in the fridge for 4 to 6 weeks.

1/4 cup fresh lime juice (about one medium lime)
3 1/2 cups bananas, diced (firm, ripe ones work best)
2 1/4 cups sugar
1/2 cup water

Steps:

  • Place lime juice in a one quart measure.
  • Peel bananas and dice directly into lime juice.
  • Stir with a wooden spoon.
  • Keep stirring as you dice each banana into the lime juice to prevent darkening.
  • Measure sugar and water into a wide 2½ quart saucepan, and stir to dissolve sugar as you bring syrup to a boil.
  • Cover tightly for the first 2 minutes (so the steam will wash sugar crystals from side of saucepan) then uncover, add bananas (with lime) and boil over low heat for about 30 minutes or until thick.
  • Stir often to prevent sticking, especially during last 10 minutes.
  • Jam is done when a spoon scraped across bottom of pan leaves a track that closes slowly, or when jam mounds while stirring.
  • Fill hot, sterilized jars quickly with the hot jelly or jam mixture, leaving 1/4 inch headspace.
  • Wipe the sealing surface of the jars with a clean paper towel, dampened with hot water, to remove any jam or sugar crystals.
  • Place lids, screw on bands finger-tight and process jars for 10 minutes in boiling water bath.
  • Cool jars upright for 12-24 hours while vacuum seal is drawn and jam or jelly sets up. Let the jars sit undisturbed while they cool.

Number Of Ingredients 6

5 ripe bananas, no brown spots
1 (20 ounce) can crushed pineapple (with the juice)
3 cups sugar
3 tablespoons bottled lemon juice (to assure acidity)
1/4 cup shredded coconut (natural or sweetened)
1 pinch salt

Steps:

  • Add all ingredients to a saucepan slicing bananas over the top. Bring to a boil over medium heat, stirring often to prevent sticking. Continue stirring and mashing your fruit to get a thick consistency; about 20-30 minutes.
  • Ladle hot jam into sterilized jars leaving 1/4 inch headspace. Using a chopstick or plastic knife, pop any air bubbles. Wipe rims spotlessly clean and place a sealing lid on top the jar. Place your lid and rings on finger tight and process in a water bath canner for 15 minutes for pint jars and 10 minutes for half-pint jars.
  • If jar lid seals it will easily keep for one year in a cool, dark place. If jar doesn't seal, place it in your refrigerator and eat within 3 months, or within one month of opening.
  • Note: Product may turn a light pink hue.

I'm always looking for ideas for canning. I ran across this recipe on allrecipes. Great way to use up over ripe bananas!

Number Of Ingredients 5

2 lb perfectly ripe bananas (no brown spots)
2 c fresh pineapple chunks (or 2 20oz cans drained)
2 c white sugar (1 cup less if using sweetened-flaked coconut or canned sweetened pineapple)
1 lemon, zest and juice
1/2 c flaked coconut, any kind (natural or sweetened) (optional)

Steps:

  • 1. Peel and slice bananas, and add all ingredients together in a large preserving pan. Bring to a boil, stirring often, and then reduce to a simmer for the next 15 minutes. (Cook until thick...it might take several more minutes, or it might take as few as 10 minutes.)
  • 2. While the mixture is simmering, use a potato masher, or large sturdy slotted spoon, to periodically mash the fruit down, between bouts of stirring to prevent any preserves from sticking
  • 3. Once desired thickness has been achieved, spoon mixture immediately into hot sterilized jars. Look for any air bubbles in the jars of Monkey Butter and if you see any, use a chopstick or plastic knife to pop them before wiping rims clean and sealing
  • 4. Process for 15 minutes in a Boiling Water Bath.
