SPANISH OLIVE AND CREAM CHEESE CANAPES

Steps:
- Put oven rack in middle position and preheat oven to 375°F.
- Cut 40 rounds from bread slices with cutter, then brush 1 side of each round with butter and bake on a large baking sheet until pale golden, about 8 minutes. (Leave toasts on baking sheet.)
- Preheat broiler.
- Finely grate Parmigiano-Reggiano using rasp (you will have about 1 cup). Mash together cream cheese, olives, scallion, bell pepper, paprika, and Sherry until combined well, then top each toast with 1 teaspoon cream cheese mixture and sprinkle with Parmigiano-Reggiano. Broil canapés about 4 inches from heat until Parmigiano-Reggiano begins to turn golden, about 1 minute.

- Preheat oven to 400 degrees F (200 degrees C).
- In a medium-size mixing bowl, combine olives, green onions, Cheddar cheese, curry powder, mayonnaise, and salt. Mix well.
- Spread mixture on English muffins. Cut the English muffins into fourths. Note: If you want to freeze these, now is the time! Arrange the muffin pieces on a cookie sheet.
- Bake at 400 degrees F (200 degrees C) for 10 minutes.

A very good "do ahead" recipe, quick, easy and tasty. You can make the olive spread the day before or do it all at once. These freeze well. Just thaw before broiling. I flatten the bead slices with a rolling pin before toasting one side.

- Mix olives, cheese, mayo, onion powder & curry.
- Arrange bread on an ungreased cookie sheet and toast one side under the broiler. Turn over and spread with the olive mixture (you can now freeze the slices and broil when thawed) and broil for 2 to 3 minutes until bubbly.
- Cut each slice intp 4 triangles.

- Before you begin cooking dice the onions, mushrooms, and olives. I use a food processor to make the bits extremely tiny but not liquid.
- Preheat the oven to 375°F.
- Brown the ground beef and drain off excess grease. Set aside.
- Melt the butter and sauté the onions first for a couple minutes. Add the mushrooms and sauté another couple minutes. Add the olives and sauté another couple minutes. Add the ground beef back in and the 1/2 cup of mayonnaise. Cook for another couple minutes and turn off flame.
- Spread out rye bread on a cookie sheet and put a spoonful of the topping on each rye bread square. Top with Swiss cheese. Put in the oven until the rye bread is crispy and the cheese is melted. Enjoy.

- HAM CANAPÉS (kanapki z szynka).
- Thinly spread bread with butter (plain or flavored with mustard or horseradish or with any of the various butter recipes in this section), top with a thin slice of ham the size of the bread and cover with a small slice of tomato, cucumber or radish.
- ROAST MEAT CANAPÉS (kanapki z pieczystym).
- Thinly spread bread with plain, mustard or horseradish flavored butter. Top with a thin slice of cold roast beef, roast pork, roast turkey or chicken. Garnish with a small tomato wedge and strip of green pepper plus a dollop of mayonnaise, or with a dab of whole-style cranberry sauce and a sprig of parsley.
- SMOKED SALMON CANAPÉS (kanapki z lososiem).
- Thinly spread bread with dill butter, top with a piece of lettuce, a slice of smoked salmon (lox), a small wedge of peeled lemon and a radish slice.
- EGG CANAPÉS (kanapki z jajkiem).
- Thinly butter bread with plain, dill or garden-green butter, top with a hard boiled egg slice, decorate with a splotch of mayonnaise (or a blend of mayonnaise and brown mustard) and a small thin radish slice stuck in the mayonnaise. Sprinkle with chopped chives and dust with paprika.
- YELLOW CHEESE CANAPÉS (kanapki z zoltym serem).
- Cover bread thinly with plain or mustard flavored butter, a slice of yellow cheese, garnish with a strip of green pepper and/or radish and dust with paprika.
