MOM'S DINNER ROLLS
Freshly baked dinner rolls are always tasty and this recipe makes an excellent dough. These are tender, fluffy yeast rolls. Or, you can smear the dough with softened butter, cinnamon, and sugar to make yummy cinnamon rolls. It's a classic recipe you'll use over and over. Steps:
- 1. In a large mixing bowl, proof yeast in the 1/2 cup lukewarm water, with half the sugar dissolved in it.
- 2. In a 2-cup measuring cup, heat the milk and butter together until the butter is melted.
- 3. When the yeast is bubbly, add 1 cup flour and beat well.
- 4. Then add eggs, salt, and another cup flour. Beat well.
- 5. Last, add the warm milk and butter, remaining sugar, then 3 cups flour and mix by hand; gradually adding another cup of flour.
- 6. Turn out onto silicone mat or floured surface and knead until you have worked in the flour.
- 7. Work until the dough is only slightly sticky.
- 8. Set in a warmed oven covered by a tea towel, to rise.
- 9. When the dough is doubled in size, remove from oven.
- 10. Using two 9x13" pans, form dough into dinner roll shapes and place dough into the pans (20 per pan).
- 11. When rolls have doubled in size, bake in a 375 F preheated oven for 13- 15 min.
- 12. When out of the oven, brush with melted butter.
DIANA'S SCHOOL ROLLS
My mom found this recipe for my grandmother several years ago- Grandma said they were just like the rolls her primary school used to serve. These are now a family standard! The rolls are a little sweeter and heavier than most dinner rolls, and make an excellent dough for cinnamon rolls! Prep time includes rising time.

Steps:
- Scald milk, add shortening and mix well, let cool to room temperature.
- Proof yeast in warm water and a pinch of sugar.
- Put dry ingredients in mixer, combine.
- Add shortening mixture, and combine using the dough hook. Mix until smooth, adding more flour as necessary to keep dough soft but not sticky. Knead by hand or mixer (following the manufacturer's instructions) until smooth. About 10 minutes by hand, 2 minutes with mixer.
- Let rise in greased bowl until doubled, about 90 minutes.
- Don't punch down. Shape into rolls, put in greased sheetcake pan 2 inches apart.
- Let rise until doubled, about 20 minutes.
- Bake at 400 F 12-18 min or until tops are golden brown.

- In a large bowl, dissolve yeast in warm water. Add the milk, sugar, shortening, egg, salt and 3 cups flour. Beat on medium speed until mixture has a spongy texture. Let stand for 10 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide into 3 portions. Let rest for 5 minutes. Divide each portion into 36 pieces. Shape each piece into a ball; place 3 balls in each greased muffin cup., Cover and let rise until almost doubled, about 30 minutes. Bake at 375° until golden brown, 12-15 minutes. Remove from pans to wire racks. Serve warm.

MOM'S GOOD CINNAMON ROLLS
I watched mom make these rolls when I was young and have always loved how easy they are to make!

Steps:
- In a large mixing bowl, dissolve yeast and 1/3 cup sugar in warm water. Stir in salt and 2 cups flour. Beat mixture for 2 minutes. Beat in eggs and oil. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition.
- When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 5 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 40 minutes. In a small bowl, stir together 1/2 cup sugar and 2 teaspoons cinnamon; set aside.
- Divide the dough into twelve equal pieces. Take each piece of dough, roll into a log and roll in cinnamon sugar mixture. Place the knots in a lightly greased 9x13 inch baking pan. Cover the rolls with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
- Bake in preheated oven for 30 minutes, until golden.

MOM'S SCHOOL ROLLS

- *If using a standard Kitchen Aid type mixer, half the recipe and prepare in two batches so as not to overflow the mixer Dissolve yeast in 1/2 cup warm water. Scald milk and cool. Combine eggs, oil, sugar and salt. Once milk cools, add to mixture and add all other ingredients. Let rise in greased and covered bowl on top of warm oven for 15 minutes. Pinch off handfuls of dough and place on greased backing sheet. Allow to rise for another 30-45 minutes. When they rise, bake @ 350 degrees for 35-45 minutes until brown. Brush with melted butter.

Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a floured surface; divide into 24 pieces. Shape each into a ball. Place 2 in. apart on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes. , Brush with egg. Bake at 350° for 20-25 minutes or until golden brown. Remove from pans to wire racks. Serve warm.
