Delicious and flavorful soup with the surprising egg dumplings!

Number Of Ingredients 8

8 red skinned medium sized potatoes, cut into slices
1/2 yellow onion, chopped
4 c water
4 c milk
1 T butter
3 T flour
1 egg
salt and pepper

Steps:

  • Melt butter in a medium-sized cooking pot.
  • Cook onions until softened in butter.
  • Add water to onions
  • Add potatoes and cook until fork-tender.
  • In a separate bowl, beat egg and flour together.
  • Drain water, add milk.
  • Bring to a boil.
  • Scoop out a half teaspoon of the egg dough and drop it into the hot milk. Continue to do so until all the dough is used.
  • Cook 5 minutes.
  • Salt and pepper to taste.

I adopted this recipe found on the site. It is very similar to the one my mother always made. I added more celery, potatoes and onions to better reflect my Mom's original recipe. I have always served this with her dumplings. They are added to the soup after it cooked and cooked for an additional 10-12 minutes with lid on pot...

4-6 medium potatoes, cubed -i use red
2 large onions, sliced and cubed
3 ribs celery, chopped; use some of the celery leaves as well , chopped
1 tsp salt or to taste
1/2 tsp pepper or to taste - i sometimes use white pepper
1 qt 2% milk
2 - 3 Tbsp butter
4 Tbsp corn starch, mixed into 1 cup water
egg dumplings
2 large eggs, slightly beaten with fork
1-2 c all purpose flour
1-2 pinch baking powder
1/2 tsp salt and pepper or to your taste
1 tsp onion powder
3 - 4 Tbsp dried parsley

Steps:

  • 1. In a large pot put potatoes, celery, and onions with enough water to just cover vegetables. Bring water to boil and cook just until vegetables are tender, about 15-20 minutes.
  • 2. Do not drain vegetables! Add the milk to veggies in pot and lower temp. to medium. You just want the soup to bubble at this point. Add the butter and thicken with the cornstarch and water until smooth. Check the broth and add additional salt and pepper if needed.
  • 3. Put the whipped eggs, and onion powder, salt and pepper, and dried parsley in a bowl. I also add several spoons of water at this point as well. Mix all together.
  • 4. Mix flour and baking powder and start adding to your egg mixture. Put in about 1/3 and whisk with the fork, it will be pretty wet at first but keep adding the flour mixture until it completely pulls away from side of bowl and sticks to fork tines.
  • 5. Go to the soup pot and using a spoon - dipped in broth first - drop by spoonfuls onto top of soup until the bowl is empty. If there is "loose" flour in the bowl, just dump that in too as it will help to thicken the broth. Put the lid on the pot and DO NOT peek or remove lid for 12 minutes! Make sure the broth was just bubbling when you add the dumpling mix. You do not want the pot to boil over... I have done that and cleaning up the stove will make me very angry... :)
  • 6. When you remove the lid, you should see a lot of little dumplings floating around on top. If you want it still thicker, just add more of the cornstarch/water. I also put in a couple more TBLS of butter.
  • 7. We like this with a small salad to start and a French baguette with some more butter. Like Paula Deen says "ya'll can't ever have too much butter".

1 cup diced celery
1/2 cup water
8 -10 potatoes, peeled and cubed
1 medium onion, chopped
2 teaspoons salt
1/4 teaspoon pepper
water (just enough to cover potatoes)
3 cups milk
1 cup sifted flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon sugar
1 teaspoon parsley flakes
1/2 teaspoon summer savory (optional)
1 egg
1/2 cup milk

Steps:

  • To make soup: boil celery in the water until just tender, DO NOT DRAIN.
  • Add all ingredients and cover with remaining water"just enough" to cover veggies.
  • Boil on medium high till tender, (approximately 10 minutes).
  • Mash slightly to eliminate chunks.
  • Add milk and set aside.
  • To make dumplings, sift together dry ingredients.
  • Stir in herbs.
  • Beat egg and milk together and add to dry ingredients.
  • Stir just until moistened.
  • Then combine: Bring soup back to burner, bring to a boil; turn burner on low.
  • Drop dumplings by tablespoonful into liquid.
  • Cover tightly and simmer gently for 20-minutes--do not lift lid.
  • ENJOY.

1/2 cup chopped onion
4 tablespoons butter or 4 tablespoons margarine
4 cups water
4 cups peeled and chopped potatoes
3 hard-boiled eggs
2 (12 ounce) cans evaporated milk
salt
pepper
butter or margarine

Steps:

  • Cook onion and celery in butter til tender, not brown.
  • Add water, potatoes and eggs, in shell and washed, and cook until potatoes are tender (about 10-12 minutes).
  • Peel and chop eggs.
  • Put back in with potates.
  • Add evaporated milk, salt, pepper.
  • Put little bit of butter on top of soup in bowl.

water (fill half egg shell with water and measure water totaling the amount of eggs.
Flour (add enough flour to make the mixture a thick paste)

Steps:

  • Cook cubed potatoes until soft in just enough water to cover. Meanwhile, cook onions in butter till soft but not brown. Empty some of the water but keep most and add enough milk to taste. Add the butter and onion mixture. Add finished dumplings. Dumplings: mix eggs salt and flour (consistancy of thick paste) and drop by teaspoons in boiling water and simmer for at least 15 min. Add to soup.

5lbs potatoes,peeled
3 eggs
2 Tbsp salt
1 lb bacon
3 onions
flour
1 tsp pepper

Steps:

  • 1. Fill a very large soup pot with water and bring to a boil. dice up bacon, fry for a few minutes then dice up onion n add to bacon. fry until bacon is close to crispy.
  • 2. Puree potatoes then put your potato puree in a large mixing bowl. Add salt, pepper, eggs and 3 cups flour. Once mixed keep adding flour until your mix is like a loose biscuit dough.
  • 3. Take a teaspoon and scoop a spoonful of your mix. Dip your spoon in your boiling water until your dumpling slides off your spoon. If your puree slides off your spoon and your spoon does not come out of the water clean than you need too keep adding more flour until your spoon comes out of the water with absolutely no puree mix left behind than your mix is ready and you can repeat approx. 15 times. Add bacon and onion to the soup pot. Stir making sure your dumplings don't clump and stick to the bottom. Repeat until mix is all gone.
  • 4. Let simmer for approx 45 min.
  • 5. ENJOY!!!!

My Mom's Easy Potato Soup image

I know there are a lot of potato soup recipes on here, but this is the best I have ever had. The onion flavor adds a little something extra, and it is so easy and delicious. Everyone loves this soup...even my incredibly picky roommate. It cooks for a while; if you have a crock pot, which I don't, you can let is simmer for a while and forget about it. Also, this can be doubled easily. I hope you all enjoy.

7 potatoes
2 (8 ounce) cans cream of chicken soup
3 cups milk
8 ounces French onion dip
1/2 cup butter
1 onion, chopped
cheese
bacon bits

Steps:

  • Peel and chop up potatoes, then steam them (They can be boiled if you don't have a steamer).
  • While waiting on the potatoes, sauté the onions in the butter.
  • When the onions are ready, add the cream of chicken, milk, and French onion dip to the mix, stirring until the mixture is smooth and well mixed.
  • When the potatoes are steamed, add them to your mixture from step three. Let it simmer for 30 minutes, or until it reaches your preferred tenderness.
  • Salt and pepper to taste.

1-1/2 cups biscuit/baking mix
1 cup cold mashed potatoes (with added milk)

  • In a large saucepan, saute onion in oil for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Stir in the broth, chicken, celery, carrots and sage. Bring to a boil.
