MOM'S SOFT RAISIN COOKIES
With four sons in service during World War II, my mother sent these favorite cookies as a taste from home to "her boys" in different parts of the world. These days, my 11 grandchildren are enjoying them as we did, along with my stories of long ago.- Pearl Cochenour, Williamsport, Ohio

Steps:
- Combine water and raisins in a small saucepan; bring to a boil. Cook for 3 minutes; remove from the heat and let cool (do not drain). , Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder, baking soda, salt and spices; gradually add to creamed mixture and mix well. Stir in nuts and raisins. , Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake 12-14 minutes or until golden brown. Remove to wire racks to cool.

MOM'S COOKIES
This is one of my mom's favorite cookies that she made quite often. Mom had lots of family and friends over and they always had these cookies on hand with tea.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Cream together the shortening and the butter. Add the brown sugar and cream until light and fluffy. Beat in the eggs until well blended.
- Sift the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves over the creamed mixture. Mix in then stir in the raisins, nuts and dates.
- Drop cookies onto ungreased baking sheets and bake at 375 degrees F (190 degrees C) for 8 to 10 minutes or until golden.

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix flour, walnuts, butter, and brown sugar together in a bowl. Line a 9x13-inch baking pan with half the crust mixture.
- Bake in the preheated oven until browned, about 15 minutes. Remove crust and leave oven on.
- Mix cream cheese and white sugar together in another bowl using an electric mixer until blended. Add eggs, milk, and vanilla extract; mix until blended. Pour on top of the baked crust. Sprinkle with remaining crust mixture.
- Bake in the hot oven until set, about 25 minutes.

MOM'S PAN COOKIE
This was always a childhood birthday favorite! My mother made it for all of us and would dress it up with candles and fancy writing in icing. Much simpler to cut and serve than a cake, easily portable, and most of all TASTY!

Steps:
- Preheat oven to 360 degrees F.
- Mix dry ingredients together.
- In a large glass bowl soften a stick of butter and one stick of margarine.
- Add 3/4 cup white sugar, 3/4 cup packed brown sugar and 1 1/2 teaspoons of vanilla. Mix well.
- Add two eggs. Stir well.
- Gradually add the flour mixture. Stir until well blended.
- Add one 12 ounce package of chocolate chips. (One cup of nuts is optional).
- Put in a jelly roll pan (10x15 or 11x17) and flatten to the edges. This cookie is thin, not thick like a cake.
- Bake 20 minutes and check to make sure the edges aren't too crispy.
- Melt fudge frosting in microwave or on stove and drizzle on top. Cut and serve when cool.

- Melt butter in a large skillet over medium heat. Add sugar, dates, walnuts, and beaten egg. Bring to a boil, stirring occasionally. Boil until dates have softened and melted into the mixture, 3 to 5 minutes. Remove from the heat and stir in rice cereal.
- Place coconut in a shallow bowl.
- Scoop rounded teaspoonfuls of dough and drop them into the coconut, rolling and pressing until coated.

MOM'S CHRISTMAS COOKIES
These are traditional cookies Mom used to make for Christmas. They are a bit of work, but they were so popular that Mom used to hide them, which just meant that we would find them and eat them before she realized that we were into them.

Steps:
- Mix butter, brown sugar, and 1 tablespoon white sugar with an electric mixer until creamy. Add egg yolk and vanilla and mix until well combined. Blend in flour gradually. Cover and chill in the refrigerator, 8 hours to overnight.
- Preheat the oven to 350 degrees F (175 degrees C). Place remaining 2 tablespoon white sugar on a plate.
- Remove dough from the refrigerator. Shape into small balls and place on ungreased cookie sheets. Dip a glass into the sugar and press on each ball to flatten.
- Bake in the preheated oven, switching racks halfway through, until edges are golden, 7 to 9 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool, 8 to 10 minutes more.
- While the cookies are cooling, mix butter and powdered sugar until blended. Mix in milk and vanilla.
- Frost cooled cookies with frosting. Press sprinkles into the frosting while still soft.
