MOM'S OLD FASHIONED FRIED CHICKEN

Wonderful fried chicken that has been in my family for years and years!

1 (4 pound) chicken, cut into pieces
⅔ cup all-purpose flour
salt and pepper to taste
2 teaspoons garlic powder
1 quart vegetable oil for frying
1 cup sherry

Steps:

  • Put the flour, salt, pepper and garlic powder in a brown paper bag. One by one, coat the chicken parts with mixture.
  • In a large skillet, fry the chicken in 1 inch of hot oil until golden brown. Remove the chicken from the pan and drain the oil.
  • Put the chicken back into the pan and cover the pieces with cooking sherry. Cover the pan and reduce to simmer. Let simmer for 20 minutes. Serve.

This recipe was in my Mom's collection. Its simple and hearty. Good comfort food for a winter day. This is a great way to use leftovers, too.

Number Of Ingredients 10

2 c cooked, leftover chicken or turkey, cut in bite sized pieces
1 c cooked rice, leftover ok
1/2 c frozen uncooked peas, optional
2 c chicken broth
1/4 c butter
1 c all purpose flour
2 tsp baking powder
1 tsp salt (ok to use less)
1/4 tsp poultry seasoning
1 c milk (low fat ok)

Steps:

  • 1. Preheat oven to 350 degrees. In a medium bowl stir together chicken, rice, peas (if using) and broth. Set aside.
  • 2. Put butter in casserole dish and sit it in the preheating oven until butter is melted. Meanwhile, stir together the remaining ingredients.
  • 3. When butter is melted remove dish from oven carefully. Pour flour mixture into dish. Then spoon chicken mixture into the center of the casserole. Bake uncovered for 45-50 minutes. Let stand about 5 minutes before serving.
