CLASSIC ITALIAN MEAT SAUCE
If you are a meat sauce family (my family is a serious meat sauce family), then a pot of this in the fridge, or a container of this in the freezer is just pure peace of mind.

- In a large saucepot, heat one tablespoon of the olive oil over medium-high heat. Add both the ground beef and the sausage together and cook, stirring frequently, and breaking up the meat so that it's very crumbly and browned throughout, about 4 to 6 minutes. Turn it into a strainer and let it the fat drain off.
- Add the remaining tablespoon of oil to the same pot over medium heat (don't clean it! All those little bits of flavor from the meat will season the sauce). Add the onion and cook, stirring frequently, until softened, about 5 minutes. Add the garlic, oregano and basil and cook, stirring for 2 more minutes, until you can smell the garlic and herbs. Add the wine, if using, and stir for one more minute, scraping up any bits stuck to the bottom, until the wine pretty much evaporates.
- Add the canned tomatoes and red pepper flakes if using, and stir to combine everything. Bring to a simmer over medium high heat, stirring occasionally. Add the browned meat, lower the heat to medium low and simmer, stirring occasionally for 20 minutes. Taste, and season gently with the salt and pepper (the sausages provide a whole lot of seasoning).

MOM'S BEST HEALTHY MEAT SAUCE
This was one of my favorite recipes that mom made while I was growing up. I make it all the time now for my husband and I. Since I like to eat healthy, I normally make the sauce with lean ground turkey, but mom always made it with ground beef. The chili sauce is THE secret ingredient--don't leave it out!! It tastes great over spaghetti with Parmesan cheese sprinkled on top. It freezes very well and makes great leftovers.

Steps:
- In a large saute pan with cover, brown meat in olive oil over med-high heat; drain any fat or juices that have accumulated in pan.
- Add onion, bell pepper, mushrooms, and garlic.
- Saute with meat until onions start to become translucent and veggies are becoming slightly tender (approx. 5 minutes).
- Add whole jar pasta sauce& whole bottle of chili sauce to pan.
- Stir to combine all ingredients.
- Bring to low boil, then cover& turn down heat so that sauce is simmering (normally low to med-low heat).
- Simmer for approximately.
- 20 minutes, stirring occasionally, until vegetables are tender.
- If sauce has too much liquid, simply remove cover and simmer until the desired amount of liquid has cooked off.
- Serve over hot cooked spaghetti with sprinkling of Parmesan cheese, garlic bread, and green salad.
NORTH ITALIAN MEAT SAUCE (RAGU BOLOGNESE)
This recipe comes from Bologna, Italy. One unusual characteristic of this sauce is that there is no garlic in it--but there is a hint of ground nutmeg. Serve over hot cooked pasta.

- In a large skillet, melt 2 tablespoons butter over medium heat. Add pancetta, onion, carrot, and celery and cook, stirring often, for 10 minutes or until lightly browned. Transfer to a heavy large saucepan.
- In same skillet, heat olive oil. Cook ground beef and pork over medium heat, stirring to break up any lumps, until browned. Pour in the wine, increase the heat and boil briskly, stirring constantly, until almost all of the liquid has evaporated. Transfer ground meat mixture to the saucepan with the pancetta and vegetables. Set skillet aside.
- Stir the beef stock and tomato paste into the saucepan. Bring sauce to a boil over high heat, then reduce the heat and simmer, partially covered, for 45 minutes, stirring occasionally.
- Meanwhile, melt remaining 2 tablespoons of butter over medium-high heat in the original skillet. Add chicken livers and saute for 3 to 4 minutes, or until firm and lightly browned. Remove livers from skillet and dice. Set aside and add to sauce 10 minutes before it is done. A few minutes before serving, stir in the cream and let it heat through. Season sauce with nutmeg, salt, and pepper to taste.

- In dutch oven cook bacon till crisp add all meats and drain off fat. Add tomatoes liver, onions, carrots, celery, parsley, tomato paste, bouillon, nutmeg 1 tsp salt 1/4 tsp pepper to meat mixture Stir in wine and 1/4 cup H2O Boil uncovered 45-60 minutes Before serving pour in 1/3 cup light cream or milk if desired.
MY MOTHER'S MARINARA SAUCE

- Heat the olive oil in a large skillet over medium heat. Add the onions, the garlic, red pepper flakes, and sugar and season with salt, to taste. Stir in the carrots and reseason with salt. Cook for about 2 minutes, and then add canned tomatoes. Use a wooden spoon to break up some of the whole tomatoes and cook over medium heat, stirring from time to time, about 20 minutes. If at any point the veggies or the sauce is getting dry, add some water. Continue cooking another 10 minutes, and then taste for seasoning. The tomatoes should be fairly broken down and the flavors coming together. Cook an additional 10 minutes. The sauce cooks about as long as it takes to make the meatballs from start to finish, about 45 minutes. Stir in the basil leaves and season with Parmesan.
OUTSTANDING NORTHERN ITALIAN SAUCE WITH RED WINE
I love Italian food. I cook a lot of it around my home. I have a lot of Italian relatives which their heritage was from Northern Italy. This is different from your typical red meat sauce. Pair this with my Outstanding Northern Italian Lasagna. You will be in heaven. I love all of the flavors in this thick red sauce. Enjoy!!

- 2. Squeeze filling out of sausage casings,and fry until cooked. Chop until it is crumbled. Poach a chicken breast half in water by boiling. Chop up the cooked chicken.
- 3. in a fry pan cook the onion with a tablespoon of olive oil,or vegetable oil.add garlic at end of cooking onions and cook another 30 seconds.
- 4. In a pot mix the wine,tomato paste, tomatoes, and water. Bring to a low boil. Grate the carrot,chop the celery. Add to the pot along with the cooked onion.
- 5. Add the cooked meat to pot. Add in the pepper,Basil,nutmeg,and Italian seasoning. Mix well and reduce to simmer for 1 hour. Serve over your favorite pasta
ITALIAN MEAT SAUCE
Because it has ground meat, it is called Bolognese sauce. You can use any combination of ground meat and can serve it over any type of pasta or rice. It is great with lasagna. This will take close to three hours total, so prepare yourself! Makes enough for one large lasagne or 16 servings.

- Place the onions, carrots, celery, and salt pork (if using) in a food processor and process to a fine paste. In a heated skillet with olive oil, brown this combination.
- Add the ground meat to the skillet and brown.
- Once the meat is browned, add the wine and cook to evaporate it.
- Add the salt, black pepper, tomatoes, tomato paste, and water. Bring to a boil and lower the heat to simmer for 2 hours covered. Stir from the bottom every 20 minutes. Be careful that the heat is not too high - it will burn.
- Uncover and simmer 1 more hour.
- Enjoy!
