MOM'S MOLASSES HAM AND BEANS
This is a recipe my mom made frequently while I was growing up, but I tweaked it to include navy beans instead of lima beans. It's perfect for a cold day when you don't want to bother with lots of cooking. -Nancy Heishman, Las Vegas, Nevada

- In a greased 5-qt. slow cooker, combine all ingredients, except bacon. Cook, covered, on low 7-9 hours., Remove ham hocks. When cool enough to handle, remove meat from bones; discard bones. Cut meat into small cubes; return to slow cooker. Stir in crumbled bacon. If desired, serve with pickled jalapeno peppers and pickled red onions., Freeze option: Freeze cooled beans in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little water or broth if necessary.

MOLASSES BAKED BEANS
Steps:
- Preheat oven to 375 degrees F. Cook bacon in skillet over medium heat until crisp. Remove bacon to paper towels. Reserve 2 tablespoons drippings in skillet. Cut cooked bacon into bite-sized pieces; set aside. Cook onion in drippings over medium heat 3-4 minutes or until crisp-tender, stirring occasionally. Press garlic into skillet, cook and stir 1 minute.
- Add brown sugar, molasses, and vinegar to skillet; cook and stir until sugar is dissolved and mixture is bubbly. Add bacon, ketchup, and beans to skillet. Bring mixture to a boil; remove skillet from heat. Carefully spoon bean mixture into a baking dish.
- Bake 60 minutes or until bubbly and heated through.

- Place beans and 2-1/2 qts. water in a 6-qt. Dutch oven; bring to a boil and boil for 2 minutes. Remove from the heat; soak for 1 hour. Drain and rinse beans; return to pan with remaining water. Bring to a boil. Reduce heat; cover and simmer for 1 hour or until beans are tender. Drain, reserving cooking liquid. Return beans to pan; add remaining ingredients and mix well. Cover and bake at 350° for 2 to 2-1/2 hours or until beans reach desired consistency, stirring occasionally. Add some of the reserved cooking liquid if too thick.

Steps:
- In 5-quart Dutch oven, heat 8 cups water and beans to boiling over medium-high heat. Boil uncovered 2 minutes. Remove from heat; let stand 1 hour; drain.
- Heat oven to 350°F. In same 5-quart Dutch oven, cook and stir salt pork over medium-high heat 5 to 6 minutes, until lightly browned. Stir in remaining ingredients. Bring to boiling over medium-high heat. Cover; place in oven and bake 1 hour.
- Stir beans; remove cover. Bake 1 hour to 1 hour 15 minutes, stirring occasionally, until beans are tender and of desired consistency. If desired, transfer beans to a casserole for serving.

MOM'S MOLASSES BAKED BEANS
Mom's favorite ingredients were sugar and salt. She always made everything taste great. Easy to do.

Steps:
- 1. cook bacon remove from pan and chop. Reserve the bacon grease.
- 2. Mix all ingredients together with the bacon grease.
- 3. Pour in baking pan and bake at 350 for one hour
MOM'S BAKED BEANS
Steps:
- Preheat the oven to 350 degrees F.
- Line a plate with a paper towel. In a saute pan over medium heat, add the bacon. Cook until tender and cooked but not crisp, flipping once, about 8 minutes. Remove to the paper-towel lined plate. Let cool and then chop.
- To the pan with the bacon drippings, add the onion and cook until tender, soft and translucent, about 7 minutes. Add the garlic and cook until fragrant, another 1 to 2 minutes. Remove from heat.
- To a large bowl, add the baked beans, molasses, dark brown sugar, barbecue sauce and bacon mixture. Pour the mixture into a 9-by-13-inch baking dish and bake, uncovered, for about 1 hour. Remove from the oven and let cool for at least 10 minutes before serving.
MOM'S BAKED BEANS II
I'm not sure how it started but we have to have this dish at EVERY holiday meal, or there's mutiny!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place bacon and onions in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
- In a large bowl combine beans, molasses, mustard, salt, tomatoes, brown sugar, dry mustard, ham, onions and crumbed bacon. Mix well and transfer to a 2 quart casserole dish.
- Bake in preheated oven, covered, for 1 hour. Uncover and bake for 1 hour more.

- Preheat oven to 350 degrees.
- Open the pork and beans and drain well.
- In a 2 quart casserole baking dish, combine the pork and beans, molasses, chopped onion, and brown sugar.
- Top with bacon strips.
- Bake covered for 1 hour, remove cover halfway through cooking time.
- The sauce will start to thicken. It will thicken more as it begins to cool.
