I'd lost my family recipe for lemon squares and spent a lot of time trying new ones that would measure up. None did, but thankfully I recently found the recipe again. Best lemon squares out there.

cooking spray
2 cups all-purpose flour
1 cup cold butter
½ cup confectioners' sugar
2 cups white sugar
4 eggs
¼ cup all-purpose flour
¼ cup lemon juice, or more to taste
1 teaspoon baking powder
1 teaspoon lemon zest, or to taste
confectioners' sugar for dusting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Process 2 cups flour, butter, and 1/2 cup confectioners' sugar in a food processor until mixture resembles coarse crumbs; press into the prepared baking dish.
  • Bake in the preheated oven until the edges of the crust are golden brown, 18 to 22 minutes. Cool crust to room temperature.
  • Beat white sugar, eggs, 1/4 cup flour, lemon juice, baking powder, and lemon zest together in a bowl using an electric mixer until light and fluffy; pour onto the cooled crust.
  • Bake in the oven until custard is set, 25 to 28 minutes. Cool lemon squares completely; dust the top with more confectioners' sugar.

Another of Mom's great recipes. This is one that I haven't tried yet, but I certainly am going to try it soon!! I have to try all the recipes to remember the desserts, it's been so many years since I've had some of them.

1 cup sugar
1/2 cup flour
2 teaspoons baking powder
salt
1/2 cup butter, room temperature
1 egg, fill up cup with milk to make 1 cup
1/2 teaspoon lemon flavoring
1 cup sugar
3 tablespoons cornstarch
1 egg
1 cup milk
salt
1 1/2 teaspoons lemon flavoring

Steps:

  • BASE: Sift together sugar, flour, baking powder and salt. Add butter and work with fingers until crumbly mixture forms.
  • Mix together egg, milk and lemon flavoring.
  • Add to flour mixture.
  • press in 8-inch well greased pan.
  • FILLING:.
  • Mix together all ingredients. pour over base.
  • Bake in 350F oven for 20-25 minutes or until top is beginning to turn slightly brown.

3 cups all-purpose flour
3/4 cup confectioners' sugar
1/2 teaspoon salt
1-1/2 cups cold butter
TOPPING:
6 eggs, lightly beaten
3 cups sugar
1/2 cup lemon juice
1-1/2 teaspoons baking powder
1/2 teaspoon salt
Confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, combine the flour, confectioners' sugar and salt. Cut in butter until crumbly. Pat into a greased 15x10x1-in. baking pan. Bake 16-20 minutes or until set and top is golden brown., For topping, combine the eggs, sugar, lemon juice, baking powder and salt in a bowl. Pour over crust (pan will be full). Bake 16-20 minutes or until set and top is golden brown. Cool. Dust with confectioners' sugar. Cut into squares.

2 cups flour
1 cup melted butter
1/2 cup powdered sugar
4 well-beaten eggs
1 teaspoon baking powder
1 3/4 cups sugar
6 tablespoons lemon juice
4 tablespoons flour

Steps:

  • Mix crust ingredients together.
  • Pat mixture into a 9x13-inch pan.
  • Bake 20 minutes at 350°F.
  • While crust is baking, combine these filling ingredients first: beaten eggs, sugar, and lemon juice.
  • Gradually add flour and baking powder to the mixture.
  • Mix well until "frothy".
  • Immediately after taking crust out of oven, pour in filling.
  • Bake 20-25 minutes at 350°F
  • Tip: Watch filling at 20 minutes - it should turn a little brown spotted on top, but not a lot.
  • Sprinkle with powdered sugar when cool.

These are the best lemon bars I've ever had. The key to these is the butter/shortening combo in the crust, you must use both, do not substitute one for the other.

1 3/4 cups flour
1/2 cup butter
1/2 cup shortening
1/2 cup powdered sugar
2 cups sugar
4 eggs
4 tablespoons flour
5 -6 tablespoons lemon juice
powdered sugar, to top

Steps:

  • Mix the first 4 ingredients and press into the bottom of a 9x13 pan.
  • Bake at 350F for 20 minutes.
  • Mix the next 4 ingredients, my mom always uses a little more lemon juice than is called for. Remove pan from oven and pour filling over the top.
  • Bake for 25 more minutes or until they start to brown at the edges.
  • Sprinkle with powdered sugar when they come out of the oven, cool.
  • Cut into squares and serve.
