- Mix the paprika, black pepper, chili powder, and cumin in a small bowl. In a one quart saucepan, melt the butter or bacon fat and gently cook the onion over medium heat until translucent. Add the garlic, bell pepper, and the spice mix you made in step (1). Stir, and cook for two minutes to extract the flavors. Add the stock and the rest of the ingredients. Stir until well blended. Simmer on medium for 15 minutes. Leftovers will keep in the fridge for a month or so.

- In a medium saucepan, heat the oil over medium-low heat. Add the onion and cook, stirring frequently until soft, about 4 minutes. Add the garlic and cook 1 minute more. Add the ketchup, water, brown sugar, molasses, cider vinegar, Worcestershire sauce, chili powder, smoked paprika, and cumin; stir to combine and bring to a simmer. Cook, stirring occasionally, until slightly thickened, about 15 minutes. At this point, the sauce is ready to serve, but if you'd like to make it completely smooth, transfer it to a blender and blend until smooth.

- In a medium saucepan, stir together all of the ingredients: tomato sauce, tomato paste, apple cider vinegar, maple syrup, molasses, Worcestershire, smoked paprika, dry mustard, garlic, salt, black pepper, and cayenne pepper. Bring to a simmer over medium heat.
- Cover with a lid slightly ajar so that the pot is mostly covered to deter splattering, but steam can still escape and the sauce can reduce. Let cook, stirring occasionally, until the sauce thickens, about 10 to 15 minutes.
- Taste and adjust seasonings as desired. Enjoy immediately or let cool and store for later use.

This barbecue sauce recipe has been passed down from generation to generation in my family for more than a hundred years. I remember as a small boy, in the days of the stationary, steam-engine driven, wheat thrasher. We would have a huge dinner for all the farmers who helped with the threashing. My family always served goat barbecue. A great treat to all who attended. This barbecue sauce goes great on baked beans, pasta and potato salads, and any kind of meat, and it will definitely add some zip to your Mexican dishes.

- Mix all ingredients together in a large pot. Boil 5 minutes. Simmer 30 minutes longer. Place in glass containers with plastic lids or treated canning lids. Do not use metal lids. Flavor is best if the sauce is aged for at least a year.

- In a small saucepan, combine the first 10 ingredients. Bring to a boil. Remove from the heat. Set aside 1 cup barbecue sauce to serve with burgers., In a large bowl, combine the egg, oats, 1/4 cup of the remaining barbecue sauce, onion salt, garlic salt, pepper and salt.
