GOCHUJANG-GLAZED SALMON



Gochujang-Glazed Salmon image

This quick and easy Korean-inspired salmon dish is cooked in the broiler, perfect for weeknight cooking because it takes less than 10 minutes to cook.

cooking spray
1 lb 4- 4oz wild salmon filets
1 tbsp gochujang
2 tsp mirin
2 tsp soy sauce
2 tsp sugar
1/2 tsp toasted sesame oil
1 small cloves garlic (minced)
1/2 tsp fresh ginger
scallions (sliced thin on an angle)
black sesame seeds

Steps:

  • Combine glaze ingredients together in a small bowl.
  • Preheat the broiler on high and position the rack 4 to 5 inches from the heat. Line the broiler pan with foil and spray lightly with oil.
  • Put the salmon on the prepared sheet and season with salt. Broil 2 minutes.
  • Brush the salmon with glaze and broil until desired doneness, 3 to 5 minutes depending on the thickness. Transfer to a platter and top with sesame seeds and scallions. Serve with rice if desired.

1 whole red snapper, cleaned, head and tail left on, 1 1/2-2 lbs
flour
salt and pepper
vegetable oil
2 cloves garlic, crushed
1/2 fresh ginger, minced
6-8 green onions, cut on the diagonal into 2" lengths
3 T oyster sauce
1-2 t cornstarch

Steps:

  • Season flour with salt and pepper. Dredge fish in seasoned flour. Heat 1/8-1/4" oil in pan large enough to hold fish over medium heat. Toss in ginger & garlic; 20-30 seconds later, put in the fish. Cook fish 6-8 min. per side, til browned. Drain off any unwanted fat; then add green onions, oyster sauce, and 1/2-3/4 c water to make sauce. Cover tightly and steam/braise 5 minutes, or until fish flakes with a fork. Make a slurry with cornstarch and a little water, and mix into the sauce. Heat until sauce thickens. Add more water if necessary (you should have about 1 c sauce). Serve fish on platter; use a serving spoon to scoop fish off bones and to serve sauce, then flip fish over and serve the other side.

  • Line a rimmed baking sheet with parchment paper and coat evenly with 1 Tbsp. oil. Place rack in middle and top third of oven and set baking sheet on middle rack. Preheat oven to 375°.
  • Whisk egg white, a pinch of salt, and 1 tsp. water in a small bowl until frothy. Pat fish dry inside and out with paper towels. Season fish all over, including cavity, with salt. Stuff cavity with one fourth of scallions, half of sliced garlic, and half of chiles.
  • Place fish on a large plate or another rimmed baking sheet, brush with egg white mixture, and sprinkle with 2 Tbsp. sesame seeds, patting gently to adhere. Turn over and repeat on opposite side, with egg white and another 2 Tbsp. sesame seeds. Transfer fish to preheated baking sheet, drizzle with 1 Tbsp. oil, and season with more salt. Bake until mostly cooked through and the tip of a paring knife easily slides through flesh, 20–25 minutes.
  • Meanwhile, toast remaining 2 tsp. sesame seeds in a small skillet over medium-high heat until golden and fragrant, about 4 minutes. Transfer to a medium bowl and add doenjang, gochujang, honey, and remaining 1 Tbsp. oil. Finely grate in 1 garlic clove and whisk to combine. (This is your ssamjang.)
