CRISPY CHICKEN SANDWICH RECIPE
These Chicken Sandwiches are crispy on the outside with a juicy center. We're sharing all of our best tips for making flavorful fried chicken breast with a thick and shaggy crust that crunches when you bite into it.

Steps:
- Pound chicken cutlets between 2 sheets of plastic wrap and pound to an even 1/2" thickness so they cook more evenly.
- In a large mixing bowl, whisk together marinade ingredients. Add Chicken, turning to coat then cover and refrigerate for 2-4 hours or overnight.
- In a separate shallow bowl, whisk together breading ingredients: flour, salt, pepper, baking powder, paprika, onion powder and garlic powder. Remove a piece of chicken from the marinade, letting excess drip off and dip chicken into flour mixture, pressing it on with your hands to coat well. Transfer to a wire rack.
- Heat 1 " oil in a soup pot or dutch oven to 350˚F. Just before frying chicken, dip it into the seasoned flour again for a thick and shaggy exterior.Add chicken, 2 pieces at a time for a smaller pot so you don't crowd and reduce the temperature of the oil too quickly.
- Place chicken into the oil one by one. Adjust the flame to keep the oil temperature at 300-325˚F. Cook 3-4 minutes on the first side or until browned and crisp then flip and cook another 2-3 minutes on the second side or until cooked through and chicken is browned and crisp all over.
- Transfer to a wire rack set over a baking sheet. The internal temperature will continue to rise as it rests. The final resting temperature of the chicken should reach 165˚F.
- Lightly butter and toast the cut sides of your buns and build your crispy chicken sandwiches with desired toppings.

BAKED CRISPY CHICKEN SANDWICHES
A spin on a classic, these Baked Crispy Chicken Sandwiches are a perfect family friendly meal! you can skip the step of soaking it in buttermilk (and omit that mixture completely) if you are pressed for time.

- Place all of the chicken ingredients in a large re-sealable plastic bag, seal it, shake the bag to mix and place it in the refrigerator overnight or 12-24 hours.
- Remove the chicken from the fridge and bring it to room temperature before cooking.
- Preheat the oven to 400F and place a wire baking rack or piece of parchment paper on top of a large baking sheet.
- Make the Panko mixture. In a large frying pan heat the 2 tablespoons of olive oil from the panko mixture on medium heat. Mix all of the remaining panko mixture ingredients together in a shallow bowl or pie plate and pour them into the pan. Stir constantly until the panko is lightly toasted and fragrant, about 3 minutes. Pour the mixture back into the original shallow bowl or pie plate.
- In a separate medium shallow bowl or pie plate whisk the eggs together until well-beaten.
- In another shallow bowl or pie plate combine the flour mixture ingredients together well.
- Using your hands, take a piece of chicken from the buttermilk, coat it on both sides in the flour mixture shaking off the excess.
- Next coat each piece with the egg mixture and finish by pressing each side into the panko mixture, shaking off the excess. Place the piece of chicken on the prepared baking sheet and repeat with the remaining chicken pieces, being careful not to make them touch. Once the pieces are all coated and placed on the prepared sheet, place the pan in the oven and bake until they are golden brown, approximately 25-30 minutes or until the internal temperature reaches 165F.
CRISPY OVEN-BAKED CHICKEN
This is a delicious way to fix chicken that has all the flavor without all the calories. The cornflake coating is dressed up with a pleasant mixture of herbs and seasonings.

- Preheat oven to 425 degrees F (220 degrees C). Grease a baking dish.
- Mix cracker crumbs, seasoned salt, and garlic powder in a shallow bowl. Dip chicken breasts into melted margarine and press into cracker mixture until coated. Arrange chicken in prepared baking dish.
