BROILED TOMATOES
An easy recipe for wonderfully flavorful broiled tomatoes with Parmesan cheese. Great as an appetizer, as a side dish, or for breakfast.

Steps:
- Preheat your broiler on high. Position an oven rack 6 inches below the heating element (not directly below).
- Cut the tomatoes in half. Cut a tiny sliver from the bottom of each half, so that the tomatoes can stand upright without wobbling.
- Spray the tomatoes all over with olive oil. Place them on a broiler-safe rimmed baking dish, cut side up.
- Sprinkle the tomatoes with salt, pepper, garlic powder, and thyme. Top with Parmesan, 2 tablespoons for each tomato half.
- Broil until the cheese is golden brown, 3-5 minutes.

- Place tomatoes, cut side up, in an ungreased 15x10x1-in. baking pan; dot with 2 tablespoons butter. Broil 4 in. from heat until butter is melted, 4-6 minutes., Meanwhile, in a small microwave-safe bowl, combine remaining butter and onions. Microwave, uncovered, on high until onions are tender, 2-3 minutes. Stir in bread crumbs, Parmesan cheese, salt and garlic powder; spoon over tomatoes. Sprinkle with Swiss cheese. Broil until cheese is melted, 1-2 minutes.

- Place tomatoes in a bowl and toss gently with olive oil and season with salt and pepper. Arrange on a baking sheet and top each tomato half with Parmesan cheese.

- Slice tomatoes in half. Using a small spoon, remove seeds. Place tomato halves on a broiler pan coated with cooking spray. Combine the oil, garlic and pepper. Brush over tomatoes. GRILLED PARMESAN TOMATOES
We grill almost everything in the warmer season even vegetables! I always make this recipe using big juicy tomatoes from the garden, these are so good! Since these tomatoes are best served at room temperature or chilled they are great to make ahead and serve to company. Make certain to use the biggest juiciest tomatoes you can find for this, plum tomatoes just won't do! Since I really don't measure when I make these, the amounts listed are only estimated, you can really just use as much as desired to taste, but only use a small amount of honey. For 7 large tomatoes (14 halves) I find that one extra large garlic bulb will give you enough thin slices of garlic to cover 14 tomato halves. Of course you can use more garlic and use as many tomatoes as you like!

- Set your barbecue to about 300°F or to medium-low heat.
- Place the tomato halves on a greased baking sheet cut-side up.
- Divide the garlic slices on top of each tomato (if you have any garlic slices left over just sprinkle around the tomato halves).
- Drizzle with just a very SMALL amount of honey (if using).
- Then drizzle with balsamic vinegar and then olive oil.
- Season with salt and pepper (I use seasoned salt for this).
- Sprinkle with grated Parmesan cheese.
- Place the tray of tomatoes on the grill.
- Roast until tomatoes are very soft and lightly charred (about 25-30 minutes; the cooking time will vary depending on the size of your tomatoes and the barbecue heat.
- Remove the tomatoes from the tray and place on a serving platter.
- Drizzle with more olive oil.
- These are best if served chilled or at room temperature.

- Preheat a broiler according to manufacturer's recommendations. Line a baking sheet or small sheet pan with aluminum foil.
- Slice tomatoes in half crossways. Slice thin slices off of the round part of the tomato halves so they will sit straight on the pan.
- Place tomato halves on the prepared pan and sprinkle with salt, pepper, and Italian seasoning to taste.
- Place seasoned tomatoes under the broiler and broil about 4 minutes. Be sure to watch carefully, so they won't burn.
- Sprinkle 1 tablespoon grated Parmesan cheese on each tomato half, and return to the broiler.
- Broil until Parmesan cheese is melted and bubbly, 45 seconds to 1 minute.
- Transfer broiled tomatoes on a plate or serving platter and garnish with fresh parsley, if desired. Serve warm.

- Place an oven rack 6 inches from the top of the oven, preheat the broiler, and and arrange tomato slices on a foil-lined baking sheet.
- Combine olive oil, basil, oregano, garlic, salt, and pepper in a bowl and brush onto the tops of the tomatoes.

- Preheat broiler. In 1 quart saucepan, melt butter over low heat. Add garlic and cook until golden; remove from heat.
