Well, cool weather has come to visit us again in Ohio and we are expecting snow tonight, so it's a good time to get the ham bone out of the freezer and make some bean soup. 1 leftover ham bone
water
1 bag of dry 15 beans
1 medium onion, diced
1 box fresh sliced mushrooms
6 garlic cloves, pressed
1 bottle beer (i use dos equis xx amber)
salt and pepper
butter
olive oil
1 bay leaves (optional)
1 - 2 tsp thyme, dried
chives for garnish

Steps:

  • 1. 15 bean soup includes:Great Northern Bean, Pinto Bean, Green Split Pea, Small Red Bean, Baby Lima Bean, Light Red Kidney Bean, Small White, Black Eye Pea, Pink Bean, Lentil, Yellow Split Pea, Large Lima, Black Bean, Dark Red Kidney and Garbanzo Bean Rinse well and then soak for 3 - 4 hours. Drain and rinse again.
  • 2. We always keep the leftover ham bone from any holiday and leave some ham on it too. I take it out of the freezer and put it in a nice large pot with a liter or two of water and cook it on medium for a couple of hours. Then take off the remaining ham and chop it up. Now I have the broth for my bean soup.
  • 3. Saute your onions in butter or oil and add to broth along with the beans and seasonings. Add your beer to the broth as well. Cook on low/medium heat for 3 to 4 hours. It would be great for the crockpot too. About 1/2 hour before serving saute your mushrooms in butter and add to your soup. Ready to serve.

1 tablespoon chopped chipotle chile in adobo, plus
1 tablespoon adobo sauce
1 teaspoon ground cumin
1 large onion, chopped
1 lb dried black beans, rinsed
1 1/2 lbs boneless pork butt (pork shoulder)
kosher salt
1/2 cup sour cream
1/2 cup fresh salsa
1/4 cup fresh cilantro

Steps:

  • In the bowl of a slow cooker, combine the beer, 3 cups water, the chilies, adobo sauce, cumin, onion, beans, pork, and 1 1/2 teaspoons salt.
  • Set the slow cooker to high and cook, covered, until the beans are tender and the pork pulls apart easily, 4 hours.
  • Using a fork, separate the pork into large pieces. Divide among individual bowls and top with the sour cream, salsa, and cilantro.

Cubed beef is simmered in beer with lots of onions. What else is better then that? Served with boiled carrots that you can add right in the pot. The gravy this makes tastes awesome on mashed potatoes!

1 ½ pounds cubed beef stew meat
salt and pepper to taste
½ cup all-purpose flour for coating
1 tablespoon vegetable oil
1 (12 fluid ounce) bottle beer
1 ½ cups water
1 tablespoon crushed dried rosemary
1 pinch dried dill weed
2 medium onions, chopped
1 teaspoon minced garlic
1 tablespoon chopped fresh parsley

Steps:

  • Season the beef with salt and pepper, then dredge in flour to coat. Heat the oil in a large pot over medium-high heat. When the oil is hot, add the meat, and cook until browned on all sides, turning as needed. Remove the meat from the pot, and set aside.
  • Add the onion and garlic to the pot; cook and stir until clear and starting to brown. Return the meat the pot, and pour in the beer and water making sure to loosen any bits of food from the bottom of the pan. Season with rosemary, dill and parsley.
  • Bring to a boil, then simmer over low heat for 1 1/2 hours.

Brazilian Feijoada is the inspiration for this satisfying slow-cooker meal. Inexpensive cuts of beef and pork are combined with earthy black beans and cooked until perfectly tender. Sautéed greens, white rice and orange segments make this dish a memorable meal.

1 lb dried black beans (2 cups), sorted, rinsed
4 slices bacon, diced
1 lb boneless pork shoulder or butt, cut into 1 1/2-inch cubes
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 lb boneless beef chuck, cut into 1 1/2-inch pieces
1 large onion, chopped
4 cloves garlic, finely chopped
1 1/4 cups Progresso™ chicken broth (from 32-oz box)
1 smoked ham hock (about 1 lb)
1 tablespoon apple cider vinegar
2 bunches collard greens (about 2 lb)
2 tablespoons extra-virgin olive oil
4 cloves garlic, finely chopped
1/2 teaspoon salt
1/2 teaspoon pepper
5 cups cooked white rice
3 oranges

Steps:

  • Soak beans in cold water 8 hours or overnight.
  • Spray 6-quart slow cooker with cooking spray.
  • Heat 12-inch skillet over medium heat. Add bacon; cook until crispy and brown. Using slotted spoon, transfer bacon to slow cooker. Season pork shoulder with 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper. Increase heat to medium-high. Cook pork in bacon drippings 3 minutes on each side or until well browned. Transfer pork to slow cooker.
  • Season chuck evenly with remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Add to skillet; cook about 3 minutes on each side or until well browned. Place in slow cooker. Reduce heat of skillet to medium; add onions to skillet. Cook about 4 minutes or until softened. Add 4 cloves garlic; cook 1 minute. Transfer to slow cooker. Stir to combine.
  • Drain beans; add beans, broth and ham hock to slow cooker. Cover; cook on Low heat setting 8 hours or until beans and meat are tender.
  • Remove ham hock; let cool enough to handle. Remove meat from hock; shred into small pieces, and return to slow cooker. Stir in vinegar.
  • Meanwhile, cut away tough stalks and stems from collard greens. Wash collards thoroughly. Stack up several leaves, and roll up lengthwise in a bundle; cut them into 1-inch strips. Repeat until all leaves are shredded.
  • In 12-inch skillet, heat oil over medium heat. Add 4 cloves garlic; cook about 2 minutes or until starting to brown. Add the greens; toss well with oil and garlic. Cook 2 to 4 minutes or until wilted. Season with 1/2 teaspoon salt and 1/2 teaspoon pepper.
  • Serve beef, pork and beans over white rice with collard greens and orange segments.

LEFT OVER PORK AND BLACK BEAN TACO SOUP

I made this today using some left over pork roast. You can adjust according to your own tastes. This soup will freeze well. Cooking time includes dry bean cooking. If using canned it should only take 20 minutes.

1 cup dried black beans (or 2 cans black beans)
6 cups water
2 cups cooked pork (left over CHOPPED pork,chicken, or beef)
1 cup frozen sweet corn
1 cup salsa
1 small onion
4 tablespoons tomato paste
1 tablespoon mild chili powder
1 tablespoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt (or to taste)
garnish with shredded cheese and sour cream

Steps:

  • For dry black beans, rinse and sort. Soak them in 6 cups of water. Simmer on medium for about 1 hour until tender. If using canned beans, place them in the pot with 4-5 cups of water.
  • Chop onion. Add all remaining ingredients EXCEPT SALT.
  • Simmer for about 20 minutes and salt to Taste.
  • Garnish bowl with shredded cheese and sour cream.

BLACK BEAN & PORK SOUP

This soup is one of my favorite creations. It has a true Southwestern flavor. I used to make it a lot spicier but now I have kids and cut the chilies back.

1 lb dried black beans (soaked over night, boil until soft in same liquid, drain)
2 cups onions, chopped
3 tablespoons garlic cloves, minced
1 cup corn (I used frozen)
1 cup carrot, diced
28 ounces diced tomatoes, with liquid
2 quarts chicken stock (I used base)
1/2 lime, quartered
1 1/2 lbs boneless pork loin
3 tablespoons cumin (or 2 taste)
1 tablespoon garlic powder
1 teaspoon ground thyme
2 bay leaves
1/2 teaspoon crushed red pepper flakes (or 2 taste)
1/2 cup milk or 1/2 cup cream

Steps:

  • Cut your pork loin in thirds.
  • Use plastic wrap and pound the pork until 1/4-inch thick.
  • Season with salt and pepper and cook the pork in a little oil until done ( I use my soup kettle). Cut into cubes after it rests awhile. Set a side.
  • Add the onion fresh garlic and pepper flakes & cook 5 minutes.
  • Add carrot and corn cook 5 minutes.
  • Add your soup base to the bean liquid and add water until you have 2 quarts of liquid.
  • Add liquid, dry spices, diced tomato, lime (squeeze and drop in).
  • Portion beans into 2 parts, crush 1/2 into paste, add all to soup.
  • Now add the cubed pork.
  • Cook 30 minutes and remove the lime rind.
  • After 2 hours add milk and simmer 2 more hours until the beans and meat are tender.
  • Serve with dollop of sour cream and chopped green onion.
