BROCCOLI SLAW

2/3 cup dried currants or dried cranberries
1/4 cup apple cider vinegar
1 tablespoon honey
Kosher salt and freshly ground black pepper
1/2 cup olive oil
1 large head broccoli (14.7 ounces or 416 grams), cut into 6 large pieces, including stems (3 cups)
1/4 small head red cabbage (271 grams or 9.6 ounces), cut into thirds (about 1 3/4 cups)
1/2 cup toasted sliced almonds
1/2 small red onion (67 grams or 2.4 ounces), thinly sliced
1/2 cup fresh cilantro, chopped, plus leaves for garnish
1/2 cup fresh flat leaf parsley, chopped, plus leaves for garnish

Steps:

  • Place the currants in a medium bowl and cover with boiling water. Let sit until soft and plump, about 5 minutes. Drain and set aside.
  • Meanwhile, mix the vinegar, honey, 1/4 teaspoon salt and a few grinds of pepper in a large bowl. Drizzle in the olive oil, whisking constantly, until emulsified.
  • Shred the broccoli florets and stems and red cabbage using the shredding disc of a food processor (see Cook's Note). Add to the bowl with the dressing and fold in the currants, almonds, onions, cilantro, parsley, 3/4 teaspoon salt and a few grinds of black pepper. Transfer to a serving bowl and garnish with more cilantro and parsley leaves, if desired.

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

1 ½ pounds ground turkey
¾ cup crushed buttery round crackers
½ cup milk
1 small onion, chopped
1 egg
1 ½ teaspoons salt
2 cloves garlic, minced
¼ teaspoon ground black pepper
½ cup ketchup
¼ cup brown sugar
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a jelly roll pan.
  • Mix ground turkey, buttery round cracker crumbs, milk, onion, egg, salt, garlic, and black pepper in a bowl; shape into a loaf and place on the prepared jelly roll pan.
  • Mix ketchup, brown sugar, and Worcestershire sauce in a separate bowl; set aside.
  • Bake meatloaf in preheated oven for 30 minutes; remove from oven and drain liquids. Top meatloaf with ketchup topping. Return loaf to oven and continue baking until no longer pink in the center, about 30 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

◾1.25 Pounds Lean Ground Turkey
◾1 & 1/2 Cups Chopped Frozen Broccoli, thawed
◾1/2 Cup Red Onion, finely diced
◾1 Egg
◾1 Cup Saltine Cracker Crumbs
◾1 Tablespoon Honey Mustard
◾1/2 Cup Ketchup
◾6-7 Slices Honey Ham, Thin sliced
◾6-7 Slices Swiss Cheese-plus 2 additional slices-cut diagonally for the top
◾Freshly Ground Black Pepper

Steps:

  • 1. Pre-heat the oven to 350 degrees. 2. In medium skillet cook the onions until translucent, then allow to cool. 3. Using your hands, in a large mixing bowl, combine the Ground Turkey, Onion, Egg, Ketchup, Mustard, Cracker Crumbs and a few good turns from the Pepper mill. 4. Transfer the Turkey Meat Mixture onto a large piece of foil and begin to flatten it into a 12 x 9 rectangle 5. Next we are going to layer the filling. The filling ingredients should be about an inch from the edge so we can seal the Meatloaf. Start with the Ham slices then place the Swiss Cheese slices on top of the Ham then add the Broccoli 6. Now we are going to roll the Meatloaf and seal the edges. Using the foil to assist you, start at one of the short ends and lift the foil while rolling. Don't roll it too tight or your filling will fall out. When you have rolled to the end, pinch the ends to seal and press the meat mixture at the seam to seal. Place the Meatloaf seam side down in a large loaf pan that has been sprayed with cooking spray 6. Now we are going to roll the Meatloaf and seal the edges. Using the foil to assist you, start at one of the short ends and lift the foil while rolling. Don't roll it too tight or your filling will fall out. When you have rolled to the end, pinch the ends to seal and press the meat mixture at the seam to seal. Place the Meatloaf seam side down in a large loaf pan that has been sprayed with cooking spray 8. Let the Turkey Meatloaf cool for 4-5 minutes before slicing. You don't want your fillings to fall out! Use a sharp knife to slice the Meatloaf to ensure you are cutting through the filling evenly. 2 slices soft white sandwich bread, torn into small pieces (about 2 cups)
1/2 cup whole milk
1 1/2 pounds ground turkey
2 large eggs, lightly beaten
1/4 cup grated Parmigiano-Reggiano cheese
8 thin slices pancetta, finely chopped
1/2 onion, finely chopped
3 cloves garlic, chopped
1/4 cup ketchup, plus more for drizzling
1 cup loosely packed flat-leaf parsley leaves, chopped
1/2 teaspoon dried oregano
1/4 cup Italian-seasoned dry breadcrumbs
1/4 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the bread and milk in a large bowl and soak for 10 minutes. Add the turkey, eggs, cheese, pancetta, onion, garlic, ketchup, parsley, oregano, breadcrumbs, salt and pepper. Mix well with your hands. Shape into an 8-inch-by-5-inch loaf and transfer to a rimmed baking sheet. Bake for 15 minutes. Reduce the heat to 325 degrees F and drizzle more ketchup all over the top of the loaf. Bake until a meat thermometer inserted into the center of the loaf reads 165 degrees F, about 45 minutes. Let the meat loaf rest for 10 minutes, then transfer to a platter and serve.

1 1/4 pounds raw lean ground turkey
3 cups bagged dry broccoli cole slaw, roughly chopped
1/2 cup quick-cooking oats
2 teaspoons garlic powder
1 teaspoon salt
1/2 cup fat-free liquid egg substitute
1/4 cup, plus 3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F.
  • Using a box grater, grate the onion into a large bowl. Add turkey, broccoli cole slaw, oats, garlic powder, salt, egg substitute, and 1/4 cup ketchup. Stir until thoroughly mixed.
  • Line 9 cups of a 12-cup muffin pan with baking cups and/or spray with nonstick spray. Evenly distribute turkey-veggie mixture among the muffin cups, and top each with 1 teaspoon ketchup.
  • Bake in the oven until firm with lightly browned edges, 30 to 35 minutes. Let stand for 5 minutes before serving. Enjoy!

1/8 teaspoon pepper
1 egg
1 1/2 cups broccoli florets
4 tablespoons breadcrumbs
1/2 cup mild cheddar cheese, grated
4 green onions, minced
1 teaspoon salt
1 tablespoon melted butter
1 tablespoon ketchup
1/2 teaspoon dried basil

Steps:

  • Preheat oven to 350.
  • Mix meat, pepper, egg, basil, half the bread crumbs, and 3/4 of the green onion together.
  • Set aside Bring a pot of water to boil.
  • Drop broccoli florets in and cook 3 to 4 minutes until crisp-tender.
  • Drain thoroughly.
  • Mix broccoli, cheese, salt, remaining bread crumbs, and remaining onions.
  • Press half the meat mixture into 8x4 loaf pan forming an indentation in the center, leaving 1" thick sides up the side of the pan Fill hollow with broccoli mixture.
  • Top with the remaining meat mixture and seal well around the edges, completely enclosing the broccoli mixture Mix melted butter with ketchup and brush over the top of the meat loaf.
  • Bake approximately one hour or until the sides pull away from the pan a little Serve hot.
