MOMMY'S CRAVIN' STEAK! SALAD
My DH made this salad rather frequently during my pregnancy as I was craving it! Many of our friends got really used to having this served for dinners during that time! ;) Toss with your favorite vinaigrette dressing and serve with a nice crusty baguette and a lovely red wine!!! (Post baby, of course) :)

Steps:
- Coat the steaks in a blend of oil and seasonings such as Montreal steak seasoning and garlic powder.
- Grill to desired doneness.
- Apply a brushing of bbq sauce, if desired before allowing meat to "rest" for 5 minutes prior to slicing. ( Rudy's BBQ sauce is a nice one if you aren't sprucing one up or making your own).
- Depending on the number of servings desired, mix all prepared veggies in a LARGE bowl.
- Mix in sliced steak and blue cheese crumbles.
- At this point you can either dress the entire salad with a nice vinaigrette and toss lightly before serving, or allow each guest to select their own dressing. (a vinaigrette compliments the flavors best).
- Serve with a nice baguette, crescent roll, and your favorite red wine.
- ENJOY (hopefully outside somewhere nice!) :).

CRAVING-VIETNAMESE SALAD
I live in rural West Virginia, and when I crave Vietnamese food there is no restaurant to satiate that craving, so I came up with this close simulation of a noodle bowl entree to cure the craving! The spiciness can be varied to suit your diners, but nearly everyone loves this salad. It makes a lot, so is suitable for cookouts or group suppers. Lots of ingredients, but well worth the bother! Folks will rave, so it is worth it.

Steps:
- Combine 1/4 cup mirin, soy sauce, 3 tablespoons fish sauce, 1 tablespoon sriracha sauce, brown sugar, and garlic in a bowl. Stir in pork. Let marinate in the refrigerator, 1 to 4 hours.
- Heat vegetable oil in a large skillet over medium heat. Add pork, discarding marinade; cook and stir until lightly browned, 5 to 10 minutes. Drain excess juices and allow to cool to room temperature, about 15 minutes.
- Place noodles in a large bowl and cover with boiling water. Let soak until softened, about 5 minutes. Drain and cut into short lengths.
- Combine drained noodles, shrimp, scallions, lettuce, carrots, cucumber, red bell pepper, and cilantro in a large bowl to make salad. Stir in pork.
- Mix sesame dressing, 1/3 cup mirin, 1/4 cup fish sauce, and 1 tablespoon sriracha sauce in a bowl to make dressing. Pour over salad and toss until well-mixed.
- Grind peanuts coarsely in a food processor. Sprinkle on top of the salad.

MY MOMMY'S PHYLLO CHICKEN

Steps:
- Pan sear the chicken in EVOO that has been seasoned with salt and pepper.
- Coat one sheet of phyllo with butter and place second sheet of phyllo on top and coat with butter. Repeat this step until you have used all the phyllo. You should have 4 piles each with 2 sheets of phyllo.
- Cut chicken in half, and stuff with cheese, spinach and peppers.
- Place each chicken breast in middle of phyllo and fold up to make a packet.
- Brush outside with butter.
- Bake at 350 for 20-25 minutes, phyllo should be brown and crispy.
- Serve with garlic mashed potatoes and enjoy!

FETA STEAK SALAD
A healthy salad with some substance. I used leftover steak from a BBQ dinner the night before and sliced it into thin strips to put on top of the salad. I love this with ranch or balsamic vinaigrette salad dressing.
