Number Of Ingredients 10

1/2 cup butter, cubed
4 ounces unsweetened chocolate, chopped
4 large eggs, room temperature
2 cups sugar
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 teaspoon salt
2 cups chopped pecans, optional
2 cans (16 ounces each) vanilla frosting
Candy eyes

Steps:

  • Preheat oven to 350°. Line two 8-in. square baking pans with foil, letting ends extend up sides; grease foil. In a microwave, melt butter and chocolate; stir until smooth. Cool slightly. In a large bowl, beat eggs and sugar. Stir in vanilla and chocolate mixture. In another bowl, mix flour and salt; gradually add to chocolate mixture, mixing well. If desired, stir in pecans., Spread into prepared pans. Bake 35-40 minutes or until a toothpick inserted in center comes out clean. Cool completely in pan on a wire rack., Lifting with foil, remove brownies from pans. Cut into bars. Using a No. 46 pastry tip, pipe frosting over brownies. Decorate with candy eyes.

1/2 cup butter (1 stick)
2 1 oz chocolate squares
1 cup sugar
1/2 cup flour
2 eggs
1/2 cup nuts (optional)
1 cup chocolate chips

Steps:

  • Melt the butter and chocolate squares together. Add in the sugar and flour and stir.
  • Mix in the eggs and nuts. Stir.
  • In a prepared 8x8 pan (either with parchment paper or cooking spray), add the brownie mixture.
  • Sprinkle over the top 1 cup of chocolate chips.
  • Bake at 350 degrees for 20-25 minutes until done.

BROWNIE MIXTURE
2 stick butter
4 Tbsp cocoa, unsweetened
1 c boiling water
2 c sugar
2 c all-purpose flour, sifted
1 pinch salt
1/2 c buttermilk
1 tsp baking soda
2 large eggs
1 c chopped walnuts or pecans
BROWNIE ICING
1 stick butter
4 Tbsp milk
4 Tbsp cocoa, unsweetened
1 tsp vanilla extract
1 - 2 c powdered sugar
1/2 c chopped walnuts or pecans

Steps:

  • 1. PREHEAT: Oven to 350 degrees F. PREPARE: Baking pan by greasing and flouring 9x13x2-inch pan (or spraying with 'Baker's Joy' nonstick cooking spray).
  • 2. FOLLOW DIRECTIONS CAREFULLY.
  • 3. COMBINE: 2 sticks butter, 1 cup boiling water, and 4 Tbsp Cocoa in small sauce pan and bring to a boil.
  • 4. MIX: 2 Cups Sugar, 2 Cups flour, and salt together and add hot mixture.
  • 5. DISSOLVE: 1/2 Cup buttermilk and 1 tsp. baking soda together, add 2 eggs. MIX: Well. ADD: Nuts. MIX WELL: All above ingredients together. POUR: Into prepared pan and bake at 350 degrees F for 20-25 minutes. COOL: Slightly.
  • 6. ICING: MEANWHILE: Prepare icing by melting, butter, milk, cocoa together in small sauce pan. ADD: Powdered sugar to thicken. ADD: Vanilla extract. SPREAD: Icing on slightly cooled brownies. SPRINKLE: Nuts over iced brownies. COVER: Until ready to serve. CUT: In squares. SERVE & ENJOY! STORE: Covered leftovers.

1 cup Hersheys cocoa powder
1 1/2 teaspoons salt
1 1/2 cups canola oil or 1 1/2 cups vegetable oil

  • Mix all ingredients together (mixture will be thick) and then spread in a jelly roll pan that has been greased and floured.

MOM'S COCOA POWDER BROWNIES

Oooey, Gooey, Rich and Chewy. If you are a fan of cake-like brownies, these are NOT for you. This makes a small pan of brownies that are moist and dense and need no icing. They form a crust that cracks and is a wonderful contrast to the fudgy texture of the brownie. Like all other basic brownie recipes, these are a great base for adding in chunks of chocolate, nuts, or whatever. As an adult, I like them with a 1/2 tsp of espresso powder added. For the brownie purist, the nuts are strictly optional. When I'm having one of those "must have chocolate" days, these are the perfect fix. After 1 brownie, I'm cured.

My mom has made a variation of these brownies as long as I can remember. She doesn't know where she got the recipe from. I substituted whole wheat flour and honestly no one can tell it isn't made with white flour! You can substitute plain applesauce for part of the oil, but I like to use 1 c oil (as my mom does) with no applesauce - faster to measure, and it is a dessert after all! I hope you enjoy!

1/2 cup cocoa
1 1/2 cups whole wheat flour
2 cups granulated sugar
1 teaspoon salt
1 teaspoon baking powder
1 cup unrefined coconut oil or 1 cup butter, melted
4 eggs
2 teaspoons vanilla extract
chopped nuts (optional)
peanut butter (optional)
chocolate chips (optional)
flavored chips (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Grease and 'flour' 9x13" pan, using cocoa powder instead of flour. (This will eliminate any white spots on bottom of brownies).
  • In a large bowl, stir together cocoa, flour, sugar, salt, and baking powder.
  • Add oil, eggs, vanilla, and any optional ingredients. Mix well, stopping as soon as all ingredients are incorporated - excessive mixing will cause a cake-like texture.
  • Pour into prepared 9x13" pan.
  • Bake at 350 for 27-30 minutes. Test with toothpick, the brownies are done when no batter clings to it. Remove slightly earlier if you like a gooey, eat with a fork brownie.

From Mother's Day party, 2008 - a dessert I made just for the mommies. I just used whatever I had in the pantry and my DD and DIL then wanted the recipe. To the best of my feeble recollection, this is what I did. ;-)

Number Of Ingredients 13

1 (19 1/2 ounce) package fudge brownie mix (family size for a 9 by 13 inch pan, I used Betty Crocker brand)
1/4 cup water
2 tablespoons instant espresso powder or 3 tablespoons instant coffee
1/2 cup vegetable oil
2 eggs
1 teaspoon cinnamon extract (find it in the baking aisle near vanilla extract, etc. or use 2 teaspoons of ground cinnamon)
1 cup cappuccino chips (could use chocolate chips)
1 (16 ounce) container milk chocolate frosting (Again, Betty Crocker to the rescue)
1 teaspoon cinnamon extract (or use 2 tsp ground cinnamon)
1 teaspoon ground ginger
2 ounces dark chocolate, coarsely chopped (can use packaged chocolate chunks)
confectioners' sugar (optional)
grated dark chocolate (optional)

Steps:

  • Preheat oven to 350°F Line 48 mini muffin cups with paper liners. If you don't have mini muffin pans, bake them in a standard 9-by-13 pan and then cut them into small pieces after baking.
  • Dump brownie mix into a large bowl. Mix water with espresso powder and stir in along with the oil and eggs. Add the cinnamon and chips stirring until just combined. Note - I used cappucino chips since that's what I had. Semi-sweet chocolate chips would work or cinnamon chips if you can find them.
  • Divide the batter equally among the muffin cups. Each will be about 2/3 full. Using a cookie scoop makes this a little easier. Or transfer all the prepared batter into a 4-cup measuring cup and pour from the spout.
  • Bake for 12-14 minutes. (adjust baking time if using a cake pan - see box for directions). The toothpick test will be unreliable to judge done-ness since these are gooey. At 12 minutes, press lightly on the top of one - it should have some spring to it if done. Mine did take the full 14 minutes and my oven runs hot.
  • Remove to a rack and cool completely.
  • Stir the cinnamon, ginger and chocolate chunks into the frosting. Dollop a generous amount on top of each cooled brownie bite. Don't be stingy!
  • Sprinkle with powdered sugar. Grate a little more dark chocolate on top.
  • Store in the fridge and hide them from the kids. ;-).
