1 (4 lb) whole chickens
1 cup onion
5 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Saute onion in butter until soft.
  • Pour over chicken in baking dish that has water in bottom.
  • Salt and pepper.
  • Wrap tinfoil over baking dish and bake at 375 degrees for 30 minutes.
  • Uncover chicken and continue baking for 30 minutes. Check chicken by poking with fork--if no blood comes out, it is done.
  • The chicken skin should be golden brown With bigger chickens it's going to take longer to cook. Marie said it took about 90 minutes to do 5 lbs and there's nothing worse than underdone chicken.

Mom Florence made this pie up because my Dad is diabetic and loves pie. The Splenda is to taste because she is one of those dashers; you know, dash of this, just until it tastes good, people lol. Her recipes are always good though.

6 apples
2 pears
1 tablespoon flour
1/2 cup apricot, dried finely chopped
1/2 cup orange juice
2 pie crusts, divided
1/2 teaspoon nutmeg, fresh grated
1/8 cup Splenda sugar substitute
1/8 teaspoon allspice
1 teaspoon apple pie spice
1 tablespoon butter

Steps:

  • Peel core and slice apples and pears; toss with flour.
  • Cook apples, pears, and apricots in orange juice until thick and almost cooked.
  • Bake bottom pie crust for 10 minutes.
  • Add nutmeg, sugar substitute, allspice, and apple pie spice to fruit while cooling; add butter.
  • Pour mixture in bottom pie crust; top with second pie crust.
  • Bake at 350 degrees Fahrenheit for 30 minutes or until browned.

This is one of the dishes our Grandma Florence made all the time; it is fluffy and filling; she learned the recipe from Grandma McGuire.

2 tablespoons butter, divided
1/4 cup onion, minced
1/4 cup bell pepper, minced
4 egg yolks
1/4 cup ham, minced
1/4 cup cheddar cheese, shredded
4 egg whites, beaten until stiff
1/4 cup cheese, shredded

Steps:

  • Saute the onion and bell pepper in 1 tablespoon butter until translucent.
  • Add to egg yolks with the ham and 1/4 cup cheese.
  • Keep pan on burner; add more butter.
  • Fold in the egg whites gently.
  • Pour into hot pan.
  • Top with 1/4 cup cheese.
  • Cover; turn down heat really low and cook until set.
  • May need to flip over or cook a minute in microwave.

2 teaspoons onion seasoning, Mrs. Dash
2 teaspoons garlic seasoning, Mrs. Dash
2 teaspoons rosemary, crushed
1 teaspoon thyme
1 teaspoon salt
1 teaspoon pepper
1 teaspoon sage

Steps:

  • Cover roast with brown mustard.
  • Sprinkle with onion seasoning, garlic seasoning, rosemary, thyme, salt, pepper and sage.
  • Bake in a 350 degree Fahrenheit oven for 90 minutes.
  • Cover with foil.
  • Bake 30 minutes.
