Four years after my mother's death, I finally dealt with going through her many boxes of pictures and books. I loved reading the spiral notebook of recipes she had assembled over many years. Growing up, I would always ask her to make this moist pumpkin bread. Enjoy.

2 ⅔ cups all-purpose flour
3 cups white sugar
2 teaspoons baking soda
1 ½ teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
⅔ cup water, room temperature
½ cup pecans, roughly chopped

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour two 8x4-inch loaf pans.
  • Mix all-purpose flour, sugar, baking soda, salt, cinnamon, and pumpkin pie spice together in a bowl. Add pumpkin, eggs, vegetable oil, and water and mix well. Fold in pecans.
  • Divide the mixture between the two prepared loaf pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Let cool in the pan for 10 minutes before transferring to a wire rack.

2 tsp (5g) pumpkin pie spice (or 1 tsp cinnamon, 1/2 tsp ginger, 1/2 tsp nutmeg)
1 tsp (5g) baking soda
1/2 tsp (2.5g) salt
1&1/2 cup (375g) canned pumpkin puree
1/2 cup (125ml) vegetable oil
1&1/2 cup (300g) granulated sugar
2 large eggs

Steps:

  • Preheat oven to 350F and grease a 9×5″ loaf pan.
  • In a large bowl, toss together the flour, pumpkin pie spice, baking soda and salt. Set aside.
  • In a medium bowl, whisk together the remaining ingredients.
  • Pour the wet ingredients into the dry and stir until just combined.
  • Spoon into prepared baking pan and bake for 45-60 minutes or until a toothpick inserted into the center comes out with just a few moist crumbs and the top springs back when lightly touched.

1/2 cup vegetable oil
2 eggs
1 2/3 cup flour
1/4 teaspoon baking powder

1/2 teaspoon ground nutmeg
1/2 teaspoon allspice (optional)
1 cup chocolate chips
1/2 cup chopped nuts
1/2 cup raisins, soaked in 1/3 cup water (water drained and discarded)

Steps:

  • Preheat oven to 325 degrees F. Spray a 9 x 5 inch bread pan with nonstick cooking spray.
  • Combine pumpkin, sugar, oil and eggs and mix well.
  • Sift together flour, baking soda, baking powder, salt, cinnamon, nutmeg and allspice.
  • Add sifted, dry ingredients to wet ingredients. Mix until smooth.
  • Optional step: add in one or more of the optional additions. If adding raisins, be sure to drain off soaking water first.
  • Pour into prepared loaf pan.
  • Bake for approximately 1 hour or until a toothpick comes out clean.

For the pumpkin bread:
1 1/2 cups (200 g) flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground ginger
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1 cup (240 ml) pumpkin purée, store-bought or homemade
1 cup (200 g) sugar
1/2 cup (112 g) unsalted butter, melted
2 large eggs, beaten
1/4 cup water
2 teaspoons molasses
1 teaspoon orange zest (optional)
1/2 cup (65 g) chopped pecans or walnuts (optional)
For the orange glaze (optional):
1 cup powdered sugar
2 tablespoons orange juice

Steps:

  • Make the homemade pumpkin puree (optional): To make your own pumpkin purée, cut a small sugar pumpkin in half horizontally. Use a large metal spoon to scrape out the seeds and stringy stuff. Place the pumpkin halves cut side down on a foil-lined baking sheet. Bake at 350°F until soft, about 45 minutes to an hour. Cool, scoop out the flesh. Measure out 1 cup of puree for this recipes and freeze whatever you don't use for future use. Or, if you are working with pumpkin pieces, roast, boil, or steam them until tender, then remove and discard the skin.
  • Preheat oven and prepare loaf pan: Preheat your oven to 350°F (180°C). Put in the middle rack of the oven. Butter the insides of a 4x8-inch loaf pan.
  • Glaze: If using the glaze, whisk together in a medium bowl the powdered sugar, orange juice, zest, and vanilla until smooth. If too thick, add a little more juice. If too thin, add a little more powdered sugar. Wait until the pumpkin bread has cooled completely before drizzling with glaze or slicing. Tip: use a serrated knife to slice. Fewer crumbs that way!

3 1/4 cups all-purpose flour
3 teaspoons baking powder

1/2 teaspoon freshly grated nutmeg

3/4 teaspoon coarse salt
1 15-ounce can pure pumpkin
1 cup granulated sugar
1 cup packed dark-brown sugar
4 large eggs
12 tablespoons (1 1/2 sticks) unsalted butter, melted
1/2 cup low-fat buttermilk

Steps:

  • Preheat oven to 350 degrees. Butter two 8 1/2-by-4 1/2-inch loaf pans. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt.
  • Combine pumpkin puree and sugars in a mixing bowl and beat with an electric mixer until combined, 2 to 3 minutes. Add eggs and melted butter and beat to combine, scraping down sides of bowl as needed. With mixer on low, add flour mixture in two batches, alternating with the buttermilk and beginning and ending with the flour; beat to combine.

1/2 cup vegetable oil
1/3 cup water

  • Pour into a greased and floured loaf pan. This bread fits perfectly in an 8.5 x 4.5 loaf pan. Bake in a 325 degree oven for 50 to 60 minutes.
  • For topping: In a small saucepan mix butter, brown sugar and milk. Boil only 2 1/2 minutes while stirring constantly. Immediately drizzle on top of loaf. Sprinkle with chopped pecans and press pecans lightly into topping.
  • Wrap and store until next day for serving. This will keep moisture inside. It is ok if bread "sweats" while wrapped.
