MOCK CHOPPED HERRING (SARDINE SPREAD)
This recipe is courtesy of a wonderful friend Norene Gilletz (Gourmania.com) who now resides in Toronto, Canada, she has written many very successful cookbooks over the years and still going strong!...this recipe is taken from one of her first cookbooks that goes back many years, it's called "The Pleasures of your Processor!" which is now out of print and featured in "Food Processor Bible" by Norene Gilletz. I think I have made all of the recipes in this book and from many of her other books also, the pages are yellow and I have string holding it together lol!...thanks for so many wonderful recipes Norene! ....You will LOVE this spread on crackers, I suggest to double this recipe you won't be able to keep your spoon out of it, I do suggest chilling it for a couple of hours before using as the flavors intensify. This does not freeze well.

Steps:
- Place the onion and apple in the processor; process until finely minced (about 6-8 seconds).
- Add in sardines and process another 5-6 seconds.
- Moisten the bread with cold water and squeeze out the excess moisture with hands.
- Add in chunks of the bread along with remaining ingredients; process about 8-10 seconds longer or until just blender.
- Season with salt to taste.
- Chill for 4 hours before serving.

SHERRIED SARDINE TOAST
Steps:
- Drain the oil from 1 tin of sardines into a small bowl and set aside. Drain the oil from the other tin into another small bowl and whisk in 1 tablespoon of parsley, vinegar, lemon zest, and black pepper, to taste. Add the sardines, stir to combine and set aside for up to 1 hour.
- After 45 minutes, put a rack 3-inches from the broiler and heat the oven to the broiler setting on high. Brush each slice of bread on 1 side with the reserved oil. Put the bread, oil side up, onto a cooling rack set inside a half sheet pan and broil 2 to 3 minutes or until golden brown and crisp.
- Halve the avocado and remove the pit. Smash the flesh in each half with a fork.
- Spread the avocado evenly onto the toasted bread. Top evenly with the sardines. Pour any remaining dressing on top and garnish with the remaining parsley.
- Season lightly with sea salt and serve with lemon wedges.
PâTé DE SARDINE
I swap out liver for briny sardines in this fast and easy, but still fancy, appetizer. I adore canned sardines. In fact, I'd say I am a connoisseur of the form, with favorite brands from the United States, France, Portugal, and Spain. I enjoy them right out of the can most of the time, but this pâté is my absolute favorite way to consume them. If you happen to drop by my place for hors d'ouvres, odds are, I'll serve this stuff with thin baguette toasts for dipping. If it's fancy, we'll spread instead. Steps:
- Dump the sardines and their oil in the bowl of a food processor, along with the butter, shallot, and lemon juice, and process until smooth. Add 2 tablespoons of the herbs and pulse 2 or 3 times.
- Pack the pâté into a small ramekin (or back into the sardine cans). Smooth with a spatula, then top with the remaining 1 tablespoon hers. Wrap tightly in plastic wrap and refrigerate for at least 1 hour to firm the texture.

UKRAINIAN SAVORY HERRING SPREAD

Steps:
- Wash and clean the herring, discard the head, and soak in cold water 1 to 2 hours. The herring should retain some saltiness.
- Remove the skin and bones. Rinse the fillets and pat dry.
- Grind the fillets or chop them very finely.
- Press the eggs through a sieve, reserving 1 egg yolk for a garnish.
- Combine the chopped herring with the sieved eggs and the remaining ingredients.
- Mash to a smooth paste. If the mixture is very soft, chill it before spreading. Garnish with the sieved egg yolk and finely chopped parsley or scallions.
