Your new favorite quick vegan noodle dinner is here - Spicy Garlic Soba Noodles with Bok Choy. So simple, so tasty, so savory.

3 tbsp low sodium soy sauce (or tamari)
2 tbsp tahini
1 tbsp sriracha
1 tbsp chili garlic sauce
1 tbsp rice wine vinegar
sesame oil
6 oz soba noodles (approx. 2 bundles)
6 oz baby bok choy (approx. 4 bundles)
3 cloves garlic (diced)
3 green onions (diced, whites and greens separated)
1 cup bean sprouts
1/4 cup roasted peanuts (chopped)
cilantro (chopped, optional )
red pepper flakes (optional)

Steps:

  • Prepare the sauce by combining soy sauce, tahini, sriracha, chili garlic sauce, rice wine vinegar, and 1 tbsp sesame oil in a bowl. Stir to combine and set aside.
  • Bring a pot of water to a boil over high heat. Add soba noodles and cook according to package instructions. When done cooking, drain and rinse with cold water.
  • While the noodles are being prepared, heat some sesame oil in a pan over medium-high heat. Add bok choy to the pan with a dash of soy sauce and a pinch of red pepper flakes. Cook for a few minutes, flipping often, until bok choy begins to wilt. Remove from the pan.*
  • Place the pan back on the stove over medium heat and add some sesame oil to the pan. Add garlic and the whites of the onions and cook for 30 seconds.
  • Pour half of the sauce into the pan followed by the bean sprouts and heat for 30 seconds.
  • Lower heat and add the noodles and remaining sauce to the pan and toss until combined. Add bok choy back to the pan and allow it to heat through. Serve noodles topped with green onion, cilantro, peanuts and red pepper flakes.

1 tablespoon fermented black beans, rinsed
1 tablespoon Shaohsing rice wine or dry sherry
1 tablespoon light soy sauce
2 cloves garlic, crushed
1 Fresno chile, seeded and finely chopped
2 baby bok choy, washed and sliced in half, leaves and stems separated
1 tablespoon vegetable oil
8 ounces assorted wild mushrooms (not shiitakes), sliced
4 ounces shiitake mushrooms, sliced
1 cup hot chicken or vegetable stock
1 tablespoon light soy sauce
1 tablespoon cornstarch blended with 2 tablespoons cold water
2 scallions, thinly sliced on the angle, for garnish

Steps:

  • For the black bean sauce: Put the black beans, rice wine, soy sauce, garlic and chile in a food processor and blitz briefly; be careful not to puree into a smooth sauce.
  • For the stir-fry: Slice the bok choy stems.
  • Heat a wok over high heat and add the vegetable oil. When the oil begins to smoke, add the bok choy stems and mushrooms. Stir-fry for 1 minute, then add the leaves of the bok choy. Stir-fry for 1 minute more.
  • Add the black bean sauce and gently stir to coat all of the ingredients.
  • Add the hot stock and bring to a boil. Season with the soy sauce and stir in the cornstarch and water mixture. Cook for 1 minute or less to thicken the sauce.
  • Serve immediately garnished with sliced scallions.

1 tbsp sunflower oil
1 garlic clove , finely sliced
thumb-tip piece fresh root ginger , cut into matchsticks
250g chestnut mushroom , quartered
½ Savoy cabbage , shredded
300g soba noodle
195g jar black bean stir-fry sauce
4 spring onions , sliced

Steps:

  • Heat oil in a wok or large frying pan and add the garlic and ginger. Gently cook for 2 mins until softened. Add mushrooms and cook over a medium heat for 4-5 mins until golden. Add the cabbage and stir-fry for 1 min more.
  • Cook noodles according to pack instructions. Stir the black bean sauce into the cabbage and stir-fry for 1 min. Stir in 100ml water, then cover and simmer for 5 mins until the cabbage is tender. Stir in spring onions. Drain noodles, toss with the cabbage serve.

1/2 cup fresh orange juice
1/4 cup creamy peanut butter
2 tablespoons unseasoned rice vinegar
2 tablespoons chopped peeled fresh ginger
2 tablespoons fresh lime juice
1 tablespoon finely grated orange peel
1 tablespoon soy sauce
2 garlic cloves, peeled
1 1/2 teaspoons finely grated lime peel
2 teaspoons dried crushed red pepper, divided
1/3 cup canola oil
8 ounces soba noodles
1 teaspoon Asian sesame oil
3 cups (loosely packed) mixed baby greens
2 heads of baby bok choy, cored, thinly sliced crosswise
1 English hothouse cucumber, cut into matchstick-size strips
3 green onions, cut into matchstick-size strips
1/3 cup chopped fresh cilantro plus sprigs for garnish
2 tablespoons chopped fresh mint
Salted roasted peanuts

Steps:

  • Puree first 9 ingredients and 1 teaspoon red pepper in blender until smooth. With machine running, gradually add canola oil through opening in lid. Season dressing to taste with salt and pepper. DO AHEAD: Can be made 1 day ahead. Cover and chill. Bring to room temperature before continuing.
  • Cook soba noodles in large pot of boiling salted water until tender but still firm to bite. Drain. Rinse with cold water; drain well. Using kitchen shears, cut noodles crosswise in 2 to 3 places. Drizzle noodles in strainer with sesame oil and toss to coat.
  • Place greens, bok choy, cucumber, green onions, chopped cilantro, and mint in large bowl. Add 1 teaspoon red pepper, dressing, and noodles; toss to coat. Season to taste with salt and pepper. Garnish with cilantro sprigs and peanuts and serve.

The perfect salve for cold winter days, this vegetarian noodle soup can be cobbled together in an instant from the contents of a well-stocked kitchen. It takes its flavor from a quick bouillon using just four ingredients: soy sauce, sesame oil, scallions and shiitakes, which deliver a hefty, flavorful dose of glutamate. Poached eggs add richness to the clean and comforting broth. Fresh eggs have stronger, firmer albumen (egg whites) and will thus hold their shape better than older eggs, which have a tendency to unfurl. The main key to achieving that teardrop shape during poaching is allowing the eggs to simmer without disturbance until cooked.

2 tablespoons vegetable oil
3 scallions, trimmed, whites and greens separated and thinly sliced
8 ounces fresh shiitake mushrooms, stems discarded and caps thinly sliced (about 3 cups)
Kosher salt
1 medium bok choy (about 4 ounces), cut into bite-size pieces
3 tablespoons soy sauce
2 teaspoons toasted sesame oil, plus more for serving
2 bundles (about 7 ounces total) somen noodles, or any thin wheat or rice noodles
2 large eggs

Steps:

  • Bring a large saucepan of water to a simmer.
  • Heat vegetable oil in a pot over medium. Add scallion whites and sliced mushrooms, season with salt and cook until browned, stirring occasionally, 5 to 6 minutes.
  • Add 3 cups water to the pot and bring to a simmer over medium-high. Add bok choy and cook until crisp-tender, about 1 minute. Stir in soy sauce and 2 teaspoons sesame oil and season to taste with salt. Turn off heat and cover to keep warm.
  • Meanwhile, cook somen according to package instructions in the simmering water in the saucepan. Using a slotted spoon or spider, divide the noodles among bowls, leaving the simmering water in the saucepan. Crack each egg into its own small bowl, discarding the shells. Swirl the simmering water in the saucepan, creating a vortex by stirring with a wooden spoon. Add the eggs, one right after another, and cook over medium-low until the whites are set, about 3 minutes. Transfer eggs to noodle bowls using a slotted spoon.
  • Ladle the reserved shiitake broth into the bowls. Top with sliced scallion greens, drizzle with sesame oil and serve.

6 ounces buckwheat soba noodles
2 tablespoons safflower oil, divided
3/4 cup chicken stock
2 tablespoons black bean garlic sauce
1 tablespoon soy sauce
1 tablespoon arrowroot
1/2 onion, halved and cut into 1/4 inch slices
12 ounces baby bok choy, sliced crosswise into 1/2 inch piece
1 portabella mushroom, halved and sliced into 1/4 inch pieces
8 shiitake mushrooms, stemmed and thinly sliced
8 large cremini mushrooms, thinly sliced
2 ounces enoki mushrooms
4 green onions, including half of greens, thinly sliced on the diagonal

Steps:

  • Cook noodles according to package directions., Drain and return to pot. Toss with 1 tbsp oil, cover and set aside.
  • In a small bowl, combine stock, black bean sauce, soy sauce and arrowroot. Set aside.
  • In a large wok or skillet, heat remaining oil over medium-high heat until it shimmers. Add onions and stir-fry for 1 minute. Add bok choy and stir-fry for 1 minute. Add portobello mushroom and stir-fry for 1 minute. Add shitake and cremini mushrooms and stir-fry for 2 minutes, or until all mushrooms in wok are tender. Add stock mixture and enoki mushrooms. Cook stirring occasionally, until sauce comes to a boi and thickens. about 1 minute.
  • Serve stir fry over noodles, sprinkled with green onions.
