Whenever our staff celebrates a birthday or a special occasion, "Mary's Apple Salad" is always at the top of the wish list! The ingredients can also be prepared the day before and put together in a flash for our teachers' 20 minute lunch time.-Mary Robertson, Louisville, Kentucky

2 packages (5 ounces each) spring mix salad greens
2 large apples, chopped
2 cups bagel chips, coarsely crushed
1-1/2 cups honey-roasted peanuts
1 cup (4 ounces) crumbled blue cheese
DRESSING:
1/3 cup sugar
1/3 cup canola oil
1/4 cup cider vinegar
1 tablespoon poppy seeds
1-1/4 teaspoons dried minced onion
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon pepper

Steps:

  • In a large salad bowl, combine the first five ingredients. In a small bowl, whisk the dressing ingredients. Drizzle over salad; toss to coat.

Rebecca made if for me and I was astonished with the results. I would have never dared to do it this way due to my French background. According to Rebecca when you roast them it does kill the bitterness of the asparagus. Rebecca knows a lot of things....just ask her about what's going on in the world and she will tell you... She also is my hair stylish. "Only your hair stylish knows"... OH! she also is a Realtor/Broker I just said, ask her anything!! Her coleslaw is just so refreshing and pretty GOURMET if I may say...the apples make a crunchy taste of "je ne sais quoi"?

1 bunch(es) tiny fresh asparagus
3 tablespoon(s) olove oil or regualar oil
1 teaspoon(s) fresh seasalt grounded
1/2 teaspoon(s) ground fresh black pepper
APPLE COLESLAW
1 small head of a gren cabbage
2 medium apple
1/4 - cider vinagar
1/2 cup(s) mayonnaise
1/2 cup(s) sour cream
1 teaspoon(s) dijon mustard
1/2 teaspoon(s) celery seeds
1/4 teaspoon(s) ppeeper
1 teaspoon(s) salt
2 tablespoon(s) sugar
2 small carrots
1 small onion (optional)

Steps:

  • Preheat your oven at 425 degrees. Cut about 2 inches of the asparagus. Place the asparagus in a baking sheet and drizzle with olive oil.
  • Bake in the preheated oven for about 12-15 minutes depending on thickness.
  • For the coleslaw slice the cabbage in half through the core. Cut in V- shape Salt the cabbage and let it rest for about an hour so it will release its moisture. Shred the cabbage the carrot and apple.
  • Place mayonnaise, vinegar, sour cream , sugar, celery seeds, pepper, salt ,mustard in a large bowl and stir to combine. Mix onto the cabbage mixture.
  • Refrigerate at least for 4-6 hours before serving. Enjoy it!

ASPARAGUS WITH WALNUTS

"I never get enough of asparagus in the spring and walnuts have a way of adding the richness this vegetable lacks without getting in the way of the wonderful springtime flavors. Frying the walnuts in the oil with paprika and cayenne for a minute really wakes up their flavor and enhances the whole dish. I have used this as both an appetizer and a side dish. 1¼ teaspoon kosher salt, divided
1 pound fairly thin "pencil" asparagus, ends trimmed and discarded, cut into 2 inch pieces
2 tablespoons extra-virgin olive oil
1/2 cup Fisher® Walnut Halves, lightly chopped
1/2 teaspoon paprika
1/8 teaspoon cayenne
2 tablespoons lemon juice

Steps:

  • 1. Fill a large bowl halfway with ice cubes and add some cold water. Place a colander squarely inside the ice bath. The colander will keep you from having to pick the asparagus out from amongst the ice cubes in the ice bath.
  • 2. Bring a large pot of water to a rolling boil. Add 1 teaspoon salt. Add the asparagus and cook for 1 to 1½ minutes. You want them to be crunchy. If the asparagus are thicker, cook for 1½ to 2 minutes.
  • 3. Remove the asparagus from the water using a slotted spoon and transfer them to the colander inside the ice bath. Move them around gently so the ice water penetrates the asparagus and accelerates the cooling process. Vegetables take longer than you think to cool so allow them to sit a few minutes in the ice water. Hold a piece of the asparagus in your hand for a few seconds to assure that it's really cool (even in the center). If the piece still feels warm, allow them to cool longer in the ice bath. Place them on a kitchen towel to drain any excess moisture.
  • 4. Heat oil a medium skillet until hot (but not smoking), add the walnuts and season with 1/4 teaspoon salt. They should bubble and fry slightly in the oil. When you can smell the walnuts, add the paprika and cayenne and lower the heat to medium. Cook for about 30 seconds, stirring constantly, and transfer the mixture to a bowl. Set aside.
  • 5. Toss the asparagus in the bowl with the walnuts and the oil. Let this mixture sit in the refrigerator for a few hours or a few minutes. When ready to serve, stir in the lemon juice. Serve immediately.

1 pound thin asparagus, trimmed
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 cup freshly grated Parmesan cheese (about 1 1/2 ounces)
1 teaspoon finely grated lemon zest
Juice of 1/4 lemon

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with a wire rack.
  • Put the asparagus, olive oil, 1/2 teaspoon kosher salt and 1/4 teaspoon pepper in a medium bowl. Toss to coat evenly. Spread the asparagus in a single layer on the prepared baking sheet. Roast for 10 to 12 minutes, until lightly browned and tender, but still bright green.
  • Meanwhile, spread the Parmesan evenly in the bottom of a medium nonstick skillet over medium heat. Cook undisturbed until the cheese melts, sticks together and turns golden brown, about 2 minutes, then flip with a rubber spatula and cook until golden on the second side, about 2 minutes more. Transfer the frico to a wire rack-lined baking sheet to cool completely, about 2 minutes. Break the frico into small crumbles and put in a small bowl. Add the lemon zest and 1/2 teaspoon black pepper and toss to combine.
  • Transfer the roasted asparagus to a serving platter and squeeze the fresh lemon juice over the top. Top with the crumbled frico mixture.

24 thin asparagus stalks, ends trimmed
1 tablespoon plus 1/3 cup olive oil
1/4 cup rice vinegar
2 tablespoons honey
1 garlic clove, minced

1 Golden Delicious apple, quartered, cored, diced
4 ounces Gruyère cheese, cut into thin ribbons with vegetable peeler

Steps:

  • Preheat oven to 400°F. Arrange asparagus in single layer on large baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with salt and pepper. Toss to coat. Roast 30 minutes, turning once. Let cool 5 minutes.

12 cups mixed greens, such as kale, chard, beet, or escarole
Salt to taste
3 large garlic cloves
1 cup finely chopped Italian parsley
1 cup finely chopped cilantro
2 teaspoons hot or sweet paprika
2 teaspoons ground cumin
3 tablespoons fruity olive oil
Garnish: green or oilcured Moroccan olives, lemon wedges, and tomato (optional

Steps:

  • Discard any inedible parts of the greens, such as kale stems and tough ribs. Plunge the leaves into boiling salted water and cook until tender, 5 to 7 minutes. Drain, then chop into small pieces.
  • Pound the garlic with 1/2 teaspoon salt in a mortar until you have a rough paste, then work in the parsley and cilantro and pound them briefly to release their flavors. Add the paprika and cumin. (If you do not have a mortar and pestle, chop the garlic with the parsley and cilantro, then add the spices.)
  • Warm the oil in a wide skillet over medium heat with the garlicherb mixture. As soon as it releases its flavor, when the oil has heated, add the greens. Cook, stirring frequently, until any extra moisture has evaporated. Taste for salt. Pile into a dish and garnish with the olives, lemon, and tomato wedges.
