Suggested by field editor Marian Platt of Sequim, Washington, this light, savory herb dressing is a refreshing topper for mixed salad greens.

6 tablespoons olive oil
2 tablespoons red wine vinegar
2 teaspoons Dijon mustard
1 teaspoon minced fresh tarragon or 1/4 teaspoon dried tarragon
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
2 teaspoons lemon or lime juice
2 garlic cloves, minced
1/4 teaspoon salt
Dash pepper
8 cups torn mixed salad greens

Steps:

  • In a jar with tight-fitting lid, combine the first eight ingredients; shake well. Place the greens in salad bowl. Drizzle with dressing; toss to coat. Serve immediately.

Steps:

  • In a jar with a tight-fitting lid, combine orange juice, vinegar, honey, water, lemon juice, orange zest and raisins if desired; shake well. Serve over salad greens.

2 tablespoons white wine vinegar
2 tablespoons whole grain dijon mustard

1 garlic clove, minced

6 cups frisée, torn into bite-size pieces
2 cups torn radicchio leaves
2 large heads of Belgian endive, cut crosswise into 1/2-inch strips
2 tablespoons chopped fresh chives
2 tablespoons coarsely chopped fresh cilantro
2 tablespoons fresh tarragon leaves

Steps:

  • Whisk vinegar, mustard, shallot, and garlic in small bowl. Gradually whisk in oil. Season dressing with salt and pepper.
  • Toss frisée and all remaining ingredients in large bowl. Add dressing; toss to coat. Season with salt and pepper.

1/2 cup chopped sun-dried tomatoes, packed without oil
1 tablespoon minced fresh ginger
1 garlic clove, peeled
2 tablespoons balsamic vinegar
1/2 cup water
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 cups mixed greens, any combination romaine, red leaf, Bibb and Boston lettuces

Steps:

  • In a blender, combine tomato, sun-dried tomatoes, ginger, garlic, and vinegar. Process until smooth. Add water, oil, salt, and pepper and puree until smooth.
  • Divide greens evenly among 4 salad plates and spoon dressing over top.

9 fresh figs, stemmed and halved (recipe asks for Calimyrna, but I used Mission Figs)
1 3/4 cups dry red wine, yummmm (I used and Argentina Mendoza (Los Liebres)
2/3 cup extra virgin olive oil
1/4 cup brown sugar
2 tablespoons red wine vinegar
salt and pepper
1 (5 ounce) bag mesclun (any spring greens salad mix works well) or 1 (5 ounce) bag herb mixed salad greens (any spring greens salad mix works well)
4 ounces manchego cheese, shaved
1 cup hazelnuts, toasted and chopped
4 fresh figs, thinly sliced lengthwise

Steps:

  • Add 9 figs and wine to sauce pan.
  • Bring to a boil. Lower the heat and simmer for 15 minutes, stirring occasionally. Let cool for 10 minutes.
  • Using a blender, puree the fig mixture. Add the olive oil, brown sugar, vinegar and 1 teaspoon salt and blend until smooth. Season with freshly ground pepper.
  • Place the greens, toasted hazelnuts and Manchego cheese shavings in a large bowl.
  • Mix the dressing in with the salad to taste and toss well -- Top with fresh figs slices and more Manchego cheese/hazelnuts.
