FESTIVE STRUDEL



Festive Strudel image

My mantra this year is not to waste any food at Christmas, and this pudding is a perfect example of how a simple packet of filo pastry can turn leftovers or unwanted gifts into a cracking new dessert. The pastry is a great vehicle to add crunch and, with the grated fruit and that surprise burst of chocolate at the heart of the strudel, no one will know that pudding is essentially made from leftovers.

Yield Serves 8 to 10

Number Of Ingredients 10

12 sheets filo pastry (if frozen, thaw), approximately 9 ounces/ 250 g
4 1/2 ounces/ 125 g butter, melted
1 teaspoon ground cinnamon
3 1/2 ounces/ 100 g Demerara sugar (natural brown sugar or turbinado)
4 ginger nuts
14 ounces/ 400 g leftover Christmas pudding
3 apples or pears, or 2 quince, or a mixture of the three
50 g good-quality chocolate (70-percent cocoa solids), roughly chopped
Icing sugar (confectioners' sugar), for dusting
Ready-made custard, to serve

Steps:

  • Preheat the oven to 180 degrees C/ 350 degrees F/ Gas 4. Lay out 6 sheets of filo pastry on a clean tea towel, overlapping each by an inch or so, so they cover the tea towel.
  • Cook's Note: The filo should cover the tea towel completely, with just a little overhang at one of the shorter ends.
  • Work quickly so your pastry doesn't dry out and brush some melted butter all over it. Sprinkle over the cinnamon and 2 ounces/ 50 g of the sugar, then crumble over your ginger nuts to add a nice bit of crunch. Carefully layer the rest of the pastry sheets on top and brush again with butter.
  • Use your hands to crumble the Christmas pudding into a bowl then grate in the fruit, cores and all. You want to have about the same amount of grated fruit as you've got pudding. Add about 2 tablespoons of sugar, and mix it all together to break up the pudding a bit more. Sprinkle this all over the pastry so it's roughly covered, leaving the overhang clear. Place the chocolate in a row on top of the Christmas pudding, down the short side nearest the overhang.
  • Fold the overhang over the chocolate and pinch it up, then lift up your tea towel, and use it to help you carefully roll up your strudel. Tuck the ends under to seal it and transfer to a large nonstick pan. Brush it all over with butter then sprinkle over a little more sugar. Bake in the hot oven for about 40 minutes until crisp, golden and gorgeous looking. It might split a bit and look slightly rustic, but I think that's quite nice. Cook's Note: You could wrap an extra layer of filo round it before cooking if you want it to look a bit neater.
  • Once the strudel is cooked, leave to cool, then use a serrated knife to cut the strudel into
  • 2-inch/ 5 cm slices. Dust these with icing sugar and serve with ready-made custard from the refrigerator.

MOCK FRUIT STRUDEL WITH ICE CREAM



Mock Fruit Strudel with Ice Cream image

4 tablespoons butter
2 fresh Granny Smith apples, peeled, cored, and finely diced
2 tablespoons raisins
2 tablespoons golden raisins
1 (16-ounce) can pears, well-drained and finely diced
1 (16-ounce) can peaches, well-drained and finely diced
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/3 cup brown sugar
20 sheets phyllo dough (based on 18 by 14-inch sheets which are often sold in packs of 18 to 20 for thickness number 4)
1 cup melted butter
1 small pound cake, defrosted, and cut into small cubes
1 cup panko bread crumbs
1 or 2 eggs, lightly beaten, for egg wash
1 tablespoon granulated sugar
1 pint vanilla ice cream
1 (6-ounce) jar caramel sauce (the kind used as an ice cream topping), warmed just before serving

Steps:

  • In a large skillet, melt the butter over medium heat and stir in apples, raisins, and golden raisins. Saute for about 5 to 7 minutes until they begin to caramelize. Add pears, peaches, vanilla, cinnamon, and brown sugar and cook for 5 more minutes. Remove from heat and allow to cool to room temperature.
  • Preheat oven to 350 degrees F.
  • If phyllo was defrosted, make sure it is completely defrosted before handling it. Once removed from package, you will need to cover phyllo with waxed paper and a damp towel to prevent it from drying out. Working with 1 sheet at a time, lay out a dough sheet on a baking sheet and brush on butter. Lay another sheet on top and butter again, repeating for all the phyllo sheets, until you have a stack of 10. Start another stack of 10 on a separate baking sheet and butter in between each sheet in the same way.
  • Fold cubed pound cake and bread crumbs into the fruit mixture. (This will absorb enough of the moisture to prevent the phyllo from breaking down.)
  • Spread the fruit mixture evenly over each stack of prepared phyllo and gently roll up the dough from the longest side, folding the ends shut as you go. Brush with egg wash and sprinkle with granulated sugar. Bake in oven until golden brown, about 30 to 40 minutes. Remove from oven and cool completely.
  • Serve at room temperature with a scoop of vanilla ice cream and warm caramel sauce.

RUSSIAN STYLE MIXED/DRIED FRUIT STRUDEL



Russian Style Mixed/Dried Fruit Strudel image

1 1/2 cups all-purpose flour
12 tablespoons (1 1/2 sticks) cold unsalted butter cut into pea sized bits
1/2 cup sour cream
1 cup pitted prunes (half of a 12-ounce box)
1/2 cup prune juice
3 tablespoons sugar
1 teaspoon vanilla
1 cup golden raisins
1/2 cup dried cherries
1 cup coarsely chopped walnuts or pecans
1 egg
2 tablespoons water

Steps:

  • Put the flour in the bowl of an electric mixer. On slow, mix in the butter until it looks like very coarse meal. Mix in the sour cream until it masses together to form a dough. Pat into a rectangle, wrap in plastic and refrigerate for 1 hour or overnight.
  • Filling:
  • Coarsely chop the prunes. In a small saucepan, cover the prunes with the prune juice and sugar. Bring to a simmer for 3 minutes. Place in a food processor with the vanilla and puree to a paste. Mix in the raisins, cherries and walnuts. Refrigerate for 1 hour. Preheat the oven to 400 degrees. On a lightly floured surface, roll the dough out into a square 16 by16 inches. Place the filling in a log running along the bottom and roll up. Pinch the ends closed. Place on a parchment lined cookie sheet, seam side down. Mix the egg and water together to form a wash and paint the strudel. Bake for 30 minutes until crisp and golden. Let cool on a rack, then slice into 1 inch pieces.
  • This was my Grandma Bessie's baking specialty. I haven't had this since she died but my brothers and I talk of it often, trying to re-construct what was in it. I re-discovered it at the Golden Key in Brighton Beach. Can be made on a rainy day with items in the pantry

1/2 cup chopped mixed dried fruit
1/4 cup brandy or apple juice
2 Granny Smith apples, peeled, cored and chopped
1 Bartlett pear, peeled, cored and chopped
1/4 cup all-purpose flour
2 teaspoons lemon zest
1/4 teaspoon cinnamon
10 sheets phyllo dough
6 tablespoons unsalted butter, melted
1 tablespoon confectioners' sugar

Steps:

  • 1. Heat oven to 375 degrees F. In a small bowl, combine mixed fruit and brandy or juice; microwave 30 seconds. Let stand 10 minutes. 2. In a large bowl, combine apples, pear, flour, lemon zest, cinnamon and dried fruit with any remaining liquid. 3. Unroll phyllo; cover with damp towel. Lay out one sheet and brush lightly with some of the butter. Place another sheet on top; brush with butter. Repeat layering eight more times. 4. Spoon fruit mixture on long side of phyllo, 3 inches from edge, leaving 1 inch at either end. Fold both short ends over filling. Fold 3-inch-wide long strip over filling; roll up to enclose filling. Place, seam-side down, on rimmed baking sheet. Make eight slits in top. Brush strudel with butter. 5. Bake at 375 degrees F for 40 minutes, until nicely browned. Let cool on wire rack. Dust with confectioners' sugar. Tip Keep strudel from splitting by rolling as you would a burrito and baking seam-side down. Variation: put some powdered sugar between each 2 layers of phyllo dough. After finishing assembling the dough put crushed almonds (or any other nuts) with cardamon and cloves, then fruits and layer of nuts again.

FRUIT PLAIT

Kids will love helping make this easy spiced dessert - similar to an apple and pear strudel, but with ready-rolled puff pastry instead of filo

1 ready-made 320g puff pastry sheet
1 tbsp plain flour
1 tsp vegetable oil , for greasing
2 tbsp sultanas
2 eating apples
2 pears
2 tbsp clear honey
3 tbsp apricot jam
pinch of mixed spice
pinch of cinnamon
1 egg
crème fraîche or vanilla ice cream, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Roll out the pastry on a lightly floured work surface into a large rectangle. Transfer to a lightly greased baking tray.
  • Put the sultanas in a small mixing bowl with just enough warm water to cover them, and soak for 10 mins.
  • Core the apples and pears and slice them into even-sized pieces - you don't need to peel them. Put the pieces in a bowl and add the honey and 2 tbsp apricot jam. Drain the soaked sultanas and add them to the mixture. Stir well and add the mixed spice and cinnamon to taste.
  • Spoon the mixture in a thick strip down the centre of the puff pastry. Use a sharp knife to make roughly 8 diagonal cuts down each side of the pastry like a lattice. Fold the pastry strips alternately across the filling like a plait.
  • Crack the egg into a bowl, whisk with a fork and, using a pastry brush, glaze the top of the puff pastry.
  • Place the plait in the oven and bake for 25-30 mins or until the apples are soft and the pastry is golden brown. Serve with crème fraîche or vanilla ice cream.

MIXED BERRY STRUDEL

This is a fantastic strudel, and is so very easy to make. You can substitute the Mixed Berry pie filling for Cherry or Apple pie filling. You can easily freeze these strudels when they are completely assembled, and when you want them, place strudel in 400F oven for 30-35 minutes or until golden.

8 sheets phyllo pastry
1/4 cup butter, melted
1/2 cup graham cracker crumbs
1 (19 ounce) can e.d. smith mixed berry pie filling

Steps:

  • Thaw phyllo in package if frozen. Unwrap phyllo and cover sheets with a damp tea towel. On a piece of waxed paper slightly larger than the phyllo sheet place the first phyllo sheet. Brush lightly with butter and sprinkle with 2 teaspoons graham cracker crumb. Repeat twice, topped with an unbuttered sheet.
  • Starting about 1-inch from the edge, spoon half of the filling in a strip along one long side of phyllo, leaving 2 inches free of filling at each end. Roll, starting at edge nearest filling and tucking in ends. Repeat with remaining ingredients. Place on ungreased baking sheet, seam side down. Brush with melted butter and cut 4 diagonal slits on top of each strudel.
  • Bake at 400F for 20-25 minutes or until golden brown. Sprinkle with icing sugar and serve warm or at room temperature.

Apple Pear Strudel With Dried Fruit and Almonds image

This strudel is made with phyllo dough. When I tested it the first time, I found that I had enough filling for two strudels. Rather than cut the amount of filling, I increased the number of strudels to 2, as this is a dessert you can assemble and keep, unbaked, in the freezer.

1/2 pound mixed dried fruit, like raisins, currants, chopped dried figs, chopped dried apricots, dried cranberries
1 1/2 pounds apples (3 large) (I recommend Braeburns), peeled, cored and cut in 1/2-inch dice
1 tablespoon fresh lemon juice
2 tablespoons unsalted butter for cooking the apples
1/4 cup (50 grams) brown sugar
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon freshly grated nutmeg
1/4 cup (30 grams) chopped or slivered almonds
3/4 pound (1 large or 2 small) ripe but firm pears, peeled, cored and cut in 1/2-inch dice
8 sheets phyllo dough
7/8 cup (100 grams) almond flour, divided
1 1/2 ounces butter, melted, for brushing the phyllo

Steps:

  • Preheat the oven to 375 degrees. Line 2 sheet pans with parchment.
  • Place the dried fruit in a bowl and pour on hot or boiling water to cover. Let sit 5 minutes, and drain. Toss the apples with the lemon juice.
  • Heat a large, heavy frying pan over high heat and add 2 tablespoons butter. Wait until it becomes light brown and carefully add the apples and the sugar. Do not add the apples until the pan and the butter are hot enough, or they won't sear properly and retain their juice. But be careful when you add them so that the hot butter doesn't splatter. When the apples are brown on one side, add the vanilla, cinnamon, nutmeg and almonds, flip the apples and continue to sauté until golden brown, about 5 to 7 minutes. Stir in the pears and dried fruit, then scrape out onto one of the lined sheet pans and allow to cool completely. Divide into two equal portions (easiest to do this if you weigh it).
  • Place 8 sheets of phyllo dough on your work surface. Cover with a dish towel and place another, damp dish towel on top of the first towel. Place a sheet of parchment on your work surface horizontally, with the long edge close to you. Lay a sheet of phyllo dough on the parchment. Brush lightly with butter and top with the next sheet. Continue to layer all eight sheets, brushing each one with butter before topping with the next one.
  • Brush the top sheet of phyllo dough with butter. Sprinkle on half of the almond powder (50 grams). With the other half, create a line 3 inches from the base of the dough, leaving a 2 1/2-inch margin on the sides. Top this line with one portion of the fruit mixture. Fold the bottom edge of the phyllo up over the filling, then fold the ends over and roll up like a burrito. Using the parchment paper to help you, lift the strudel and place it on the other parchment-lined baking sheet. Brush with butter and make 3 or 4 slits on the diagonal along the length of the strudel. Repeat with the other sheets of phyllo to make a second strudel. If you are freezing one of them, double-wrap tightly in plastic.
  • Place the strudel in the oven and bake 20 minutes. Remove from the oven, brush again with butter, rotate the pan and return to the oven. Continue to bake for another 20 to 25 minutes, or until golden brown. Remove from the heat and allow to cool for at least 15 minutes. Serve warm or room temperature.
