MIXED BERRY COBBLER

Nonstick cooking spray
Two 12-ounce bags frozen mixed berries, thawed (about 6 cups)
1/4 cup whole-wheat flour
1/4 cup sugar
1 orange, zest finely grated (about 2 teaspoons)
1/4 cup whole-wheat flour
1/4 cup all-purpose flour
2 tablespoons plus 1 teaspoon sugar, divided
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons chilled unsalted butter, cut into small pieces
1/3 cup low-fat buttermilk
2 tablespoons canola oil

Steps:

  • Preheat the oven to 400 degrees F. Coat an 8 by 8-inch baking dish with cooking spray.
  • For the filling: In a large bowl, toss the berries with whole wheat flour, sugar and zest. Transfer the berry mixture to the baking dish and set aside.
  • For the topping: In a medium bowl whisk together the whole-wheat flour, all-purpose flour, 2 tablespoons of sugar, baking powder, baking soda and salt. Cut in the butter using 2 knives or a pastry cutter until many small pebble-sized pieces are formed.
  • In a small bowl or pitcher, whisk together the buttermilk and oil. Add the buttermilk-oil mixture to the dry ingredients and mix until just moistened. Do not over mix. Drop the batter onto the fruit forming 6 mounds. Sprinkle with the remaining teaspoon of sugar. Bake for 30 minutes, until fruit is bubbly and top is golden. Let stand for at least 10 minutes before serving.

¾ cup white sugar
¾ cup milk
¼ cup butter
2 cups sliced fresh peaches

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Melt butter in a 9 x 9 inch baking dish.
  • Blend together flour, baking powder, sugar, and milk.
  • Pour batter in baking dish over the butter. Sprinkle fruit on top of the batter, do not stir. Bake for 1 hour or until golden brown.

A few leftover blueberries, strawberries and a peach from other dishes I've made this past week was just the perfect amount of fruit for a cobbler. I added a little orange zest to the batter and tossed some cubed cream cheese in with the fruit. It was an amazing dessert! Hope you enjoy!

4 c fresh fruit (i used blueberries, strawberries and peaches)
2 Tbsp sugar
1/2 c butter
1 1/2 c self-rising flour
1 c sugar
1/2 c brown sugar
pinch salt
1 tsp orange zest, (optional)
1 1/2 c milk
1 tsp vanilla extract
3 oz cream cheese, cubed (optional)
cinnamon sugar

Steps:

  • 1. Preheat oven to 350 degrees. Melt butter in a 9 x 13-inch pan as oven preheats being careful to not burn your butter. Once melted remove pan from oven.
  • 2. Clean and cut up fruit, sprinkle with 2 tbsp sugar and gently toss; set aside.
  • 3. In a medium mixing bowl, whisk together the flour, sugar, salt and orange zest. Add milk and vanilla; whisk until combined and no lumps.
  • 4. Pour batter into pan with melted butter; top with fruit and cream cheese. Sprinkle cinnamon sugar on top.
  • 5. Bake at 350 degrees for 40 to 45 minutes.

¾ cup all-purpose flour
¾ cup sugar
1 teaspoon baking powder
¼ teaspoon salt
¾ cup milk

Steps:

  • Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
