STEAK GYROS WITH TZATZIKI CUCUMBER SAUCE
Easy and tasty flank steak gyros with tzatziki cucumber sauce are bursting with hearty flavor. A simple marinade and quick-sear yields super juicy and flavorful beef for the best homemade gyros!

Steps:
- Place steak, olive oil, garlic, oregano, salt, pepper, and juice from 1/2 lemon in a large resealable bag. Press excess air out and seal bag. Refrigerate for 1-8 hours.
- Spread cucumber slices out on a paper towel. Sprinkle generously with salt on both sides and allow to rest for 5 minutes. Wrap cucumber slices in paper towels, squeeze excess liquid out, and transfer to a food processor or blender.
- Add remaining sauce ingredients to blender and pulse until smooth and creamy. Cover and chill until ready to use.
- Preheat grill, grill pan, or cast iron skillet, to medium-high heat. Use tongs to transfer steak to grill and discard excess marinade. Cook steak for 6-8 minutes on each side until desired doneness (I recommend leaving just a hint of pink in the center for super juicy, tender meat with lots of flavor!)
- Transfer steak to a cutting board and allow meat to rest for a few minutes before slicing very thinly across the grain.
- Assemble gyros with lettuce, sliced onions and cucumbers, and steak. Drizzle with tzatziki sauce, top with black pepper and fresh squeezed lemon and serve immediately.

HOMEMADE GREEK GYROS WITH TZATZIKI SAUCE (KEBABS*)
My version of Alton Brown's delicious gyro recipe.

Steps:
- Run the onion in a food processor for about 15 seconds. Place the onion in the center of a kitchen towel and squeeze out the juice and return to the food processor.
- Add the meat, garlic, spices, salt and pepper to the onion, and process. Do so until it looks like a fine paste, about a minute. Place the mixture in a loaf pan and press evenly.
- Bake in a water bath (place loaf pan inside another pan filled with water) at 325°F (165°C) for about an hour or more until temperature reaches 165-170°F (75°C.)
- Remove from the oven, drain fat, and place on a cooling rack.
- Cover meat with aluminum foil and a heavy weight (Alton suggests a brick) for about 15 minutes until internal temperature is 175°F (79°C) (I found the times are not quite accurate, and I didn't know if the brick actually had an effect, but I think the important part is getting the meat to the correct temperature.)
- Place meat on a cutting board and slice as thinly as possible with an electric knife (using anything else would be much more difficult.)
- I added the following step myself as I think it mimics the rotisserie a bit more. Add a few slices to a nonstick frying pan (very little or no oil) and heat gently until the meat browns a little.
- In another pan, heat the pita bread.
- Finally, place the meat on one half of the pita, topped with tzatziki sauce, lettuce, tomatoes, and onion. You could also put a little Greek dressing on the tomatoes too (extra virgin olive oil, vinegar, salt, oregano.)
- Serve Homemade Greek Gyros with rice pilaf or a Greek salad, and enjoy!

MINUTE STEAK GYROS (GREEK)
Next time you're in the mood for Greek food, but you don't want to slave away in the kitchen, try this quick and easy recipe. If you have greek seasoning on hand you can skip making your own; making this recipe all the quicker. Of course, you'll need Tzatziki sauce. For that see recipe#153803. Steps:
- Combine first 5 ingredients or use your favorate greek seasoning.
- Separate the steaks, pat dry, and season liberally with greek seasoning. Restack and let sit in refrigerator for 20-30 minutes.
- Combine the stuff for the veggies in a bowl and let sit until ready to serve.
- In a non-stick pan, with a tiny bit of oil, fry the steaks in small stacks of 4-6 steaks per stack until brown. Remove and set aside.
- When all meat is cooked, slice the stacks into 1" segments.
- Brush the pita with olive oil and warm on a griddle or fry pan.
- Fold pita and pile on some meat, then veggies, and top with tzaziki sauce.

Steps:
- Combine garlic, oregano, coriander, salt and allspice in small bowl.
- Pat minute steaks dry on paper towel.
- Add steaks to spice mixture.
- Cook steaks in oil skillet over medium heat until desired doneness; 2 to 3 minutes for rare.
- Spoon into pita.
- Garnish with onion& chopped tomato.
- Serve with Yogurt Sauce of 1/2 c.
