Serve this watermelon, feta and mint salad as a side dish at a barbecue or picnic. Bursting with fresh, summer flavours, it's also two of your five-a-day

Steps:
- Chop 180g watermelon and ½ cucumber into chunks and tip into a bowl with the leaves from ½ bunch mint (reserving a few for garnish) and drizzle with 1 tbsp olive oil. Season and pile on to a serving plate. Crumble over 100g feta, the remaining mint leaves, then drizzle with 1 tbsp balsamic glaze just before serving.

My four year old twin grandchildren love to cook and create in the kitchen with me. Last summer, the three of us were experimenting with watermelon and cheese and that's where this recipe began. MINTY WATERMELON & FETA CHEESE SALAD
I have so many favourite salads, but in the summer this is it for me. You could substitute any melon, any cheese. Prep time is chilling time. I put the diced melon in the freezer, checking after 20 minutes.

Steps:
- Chill till cold the diced watermelon (I also keep it cold when serving by placing a bowl filled with ice within the bowl containing the melon) Just before serving, in a small bowl, whisk the mint leaves, lime juice and olive oil Pour mixture over melon, tossing to coat.
- Add any options.
- Sprinkle crumbled cheese on top of servings (some people don't care for Feta, use your favourite).
