MINT JULEP ICED TEA
Grandmom's recipe for a fabulous summer citrus-mint tea using fresh mint. Kids and adults alike love it! You can add Kentucky bourbon when the guest list is all adults. Serve over ice.

Steps:
- Bring sugar and 1 cup water to a boil in a small saucepan, stirring until sugar dissolves, about 5 minutes. Add tea bags and mint to sugar mixture; let steep for 10 minutes. Strain mixture and discard tea bags and mint.
- Combine tea mixture, cold water, orange juice, and lemon juice in a pitcher.

- In a heat-proof bowl or pitcher, pour boiling water over tea bags; cover and steep for 5 minutes. Remove tea bags. Cool for 15 minutes. Add mint; steep for 5 minutes. Strain. Add lemonade concentrate; stir well. Refrigerate. Serve over ice; garnish with lemon and mint if desired.

ICED SWEET MINT TEA
If you enjoy having a soothing, refreshing glass of iced tea in the summertime, I hope you will try my version of sweet mint tea. I grew up drinking mint tea and still enjoy it so very much today. If you don't care for sugar in your tea, just leave it out, it will still be just as satisfying.

Steps:
- In large tea pot (or two small tea pots) pour boiling water over tea bags and mint and allow to steep for 20 minutes.
- Place sugar in 2-quart pitcher (that will tolerate some heat).
- Pour freshly brewed tea (minus mint and tea bags) into sugar and stir until sugar is dissolved.
- Place in refrigerator until ready to serve.
- To serve, pour into tall glasses over ice.
- Serve with lemon slices.
- Serves 8.
MINT ICED TEA
Steps:
- Brew tea in boiling water, letting steep for 10 minutes. Pour brewed tea into a serving pitcher. Add sugar and lemon, and swirl in the mint, holding it by the stems and using it to stir and dissolve the sugar. When sugar is dissolved, drop mint into pitcher and add 2 cups cold water. Refrigerate until thoroughly chilled. Strain mint out before serving and serve cold.

MINTED ICED TEA
This "house wine of the South" is literally drunk by the gallon during the spring and summer months here in Memphis. We add mint and simple syrup to ours, to give it the right amount of flavor and sweetness. It's a refreshing "knock-back," and can also be used as a mix for a cocktail (add a little rum or vodka).

- Bring the water to a simmer in a large pot. Remove the pot from the heat and add the tea bags and mint. Allow the tea and mint to steep for at least 10 minutes. Strain the steeped tea into a large glass pitcher, and allow to cool completely. Stir in the simple syrup.
- Serve the tea over ice in a chilled Mason jar, with a sprig of mint and a lemon wheel for garnish.
- Simple syrup is just that: simple and sweet. To make 1 cup, stir together (or shake in a bottle) 1 cup of water and 1 cup of sugar until dissolved. This one-to-one ratio ensures that your iced drinks stay cool and sweet. For a richer, sweeter version of simple syrup, you can do two parts sugar to one part boiling water, stirring just until dissolved, then setting aside to cool to room temperature. If you make up a batch, you can store it in your fridge in a well-sealed jar for up to 6 months.
