BEET CARPACCIO WITH MINT VINAIGRETTE

Beet Carpaccio with Mint Vinaigrette image

A vegetarian alternative to beef carpaccio. This recipe wins over so many people who thought they hated beets or just never wanted to even try them. I was that person - once I actually tasted this recipe, well, I was sold and have loved beets ever since. Once beets are steamed and peeled, it is simple and easy. Beets can be prepped a day ahead and stored in a bag or container, but I personally like bringing it all together in one shot.

Categories     Salad     Vegetable Salad Recipes

Time 55m

Yield 6

Number Of Ingredients 7

6 2-inch beets, trimmed, as evenly sized as possible
2 ounces soft fresh goat cheese, or more to taste
sea salt and freshly ground black pepper to taste
⅓ cup rice vinegar
¼ cup chopped fresh mint
¼ cup olive oil
1 teaspoon white sugar

Steps:

  • Fill a pot with 3 inches of water, insert a steamer basket, and bring to a boil. Reduce heat to medium or medium-low and place beets inside the steamer basket. Cover pot. Cook until beets are easily pierced with a knife, checking water level periodically, 35 to 50 minutes. Remove from heat and cool, about 30 minutes.
  • Peel the beets; if you are using red and golden beets, peel the golden ones first so you don't end up turning them pink. Remove any remaining root stems. Thinly slice beets and arrange on a serving platter. I use a round plate and start in the center, alternating red and golden beet slices. Dot the top with goat cheese - you want to be able to see the beets but have enough cheese because it pairs so well with the beet. Sprinkle with sea salt and black pepper.
  • Combine rice vinegar, olive oil, mint, and sugar in a small bowl. Drizzle over beets.

MANGO RED ONION SALAD WITH MINT VINAIGRETTE

Mango Red Onion Salad with Mint Vinaigrette image

Provided by Food Network

Yield 4 to 6 servings

Number Of Ingredients 6

2 Florida mangos
1 red Bermuda onion
3 tablespoons warm honey
3 tablespoons lime juice
2 tablespoons fresh chopped mint leaves
1 tablespoon soy sauce

Steps:

  • Cut the mangos in half, using the tip of your knife to cut around the large seed in the center. With the knife tip make slashes in the pulp of the fruit but not through the skin. Cut again in the other direction so that you've made hash marks in the fruit. Now turn the skin of the fruit inside out so that the fruit projects outward. With a spoon scoop out the already cut fruit into a mixing bowl.
  • Peel the onion, cut in two and slice from root end to stem end into a fine julienne. Mix the mango and onion together.
  • Combine the honey, lime juice, mint and soy in a small bowl. Pour this vinaigrette over the mango and onion and serve.

CHINOIS GRILLED LAMB CHOPS WITH CILANTRO MINT VINAIGRETTE

Chinois Grilled Lamb Chops with Cilantro Mint Vinaigrette image

Provided by Food Network

Categories     main-dish

Time 1h35m

Yield Yield: 4 servings

Number Of Ingredients 16

1 cup soy sauce
1 cup mirin (sweet sake)
1 tablespoon chopped ginger
2 tablespoon sesame oil
2 cups chopped scallions
1 tablespoon dried red chile flakes
2 to 3 garlic cloves, finely chopped
2 racks lamb (about 2 pounds each), trimmed
Salt and freshly ground pepper
1 tablespoon honey
1/2 tablespoon chopped ginger
1/4 cup each coarsely chopped mint, cilantro and parsley
1 cup peanut oil
1/2 cup rice wine vinegar
1 egg yolk*
Dash chili oil

Steps:

  • Prepare the marinade: In a bowl, mix together all the marinade ingredients. Pour them over the lamb and let it marinate for 1 hour. Remove from the marinade and let stand until ready to cook.
  • While the lamb is marinating, prepare the vinaigrette.
  • Season the lamb with salt and pepper and place it on a hot grill. Grill medium rare, about 15 to 20 minutes; or cut the rack into chops and saute them in a pan over high heat for about 2 minutes on each side. (Cook the chops in several batches, if necessary, but don't crowd the pan.)
  • Make an island of the sauce on each plate. Place lamb chops on center. Decorate with cilantro or mint sprigs on top and serve with stir-fried vegetable or stir-fried rice.
  • To make the vinaigrette, combine all the ingredients, except the oil, and blend. Slowly add peanut oil. Season with salt and pepper and strain, if necessary, into a bowl.

GRILLED EGGPLANT WITH MINT VINAIGRETTE

Grilled Eggplant with Mint Vinaigrette image

Provided by Curtis Stone

Time 1h10m

Yield 4 servings

Number Of Ingredients 9

2 eggplants (1 pound each), cut crosswise into 1/2-inch-thick slices
Kosher salt
1/2 cup extra-virgin olive oil
Freshly ground black pepper
1 lemon
2 tablespoons white wine vinegar
1/4 cup finely chopped shallots
1 tablespoon finely chopped fresh mint, plus small leaves for garnish
Small square feta cheese, for shaving

Steps:

  • Lay the eggplant slices in a single layer on 2 baking sheets and sprinkle both sides with salt. Set aside about 30 minutes, or until moisture beads on top of the eggplant.
  • Prepare a grill for medium-high heat. Rinse the eggplant to remove the excess salt and pat dry. Brush the eggplant slices with 3 tablespoons of the olive oil, coating both sides. Season with salt and pepper. Working in batches, grill the eggplant about 5 minutes per side, or until char marks form and the eggplant is very tender. Transfer to a platter as you finish each batch.
  • Meanwhile, grate the zest of the lemon into a small bowl. Halve the lemon and squeeze 2 tablespoons of juice into the bowl. Whisk in the vinegar, shallots, chopped mint and the remaining 5 tablespoons oil. Season the vinaigrette to taste with salt and pepper.
  • Spoon the vinaigrette over the grilled eggplant and sprinkle with the mint leaves. Using a vegetable peeler, shave thin slices of feta cheese over the eggplant. Sprinkle with pepper and serve.
